MEATBALLS WITH SQUID
• Ingredients for 4 servings: for the meatballs = 350 grs. of pork meat, 1 egg, 1 slice of bread, some milk, 1 garlic clove, some parsley, a pinch of salt and black pepper and some flour.
• 1 cuttlefish or squid (fresh), 1 big onion, 3 ripe tomatoes, 1 garlic clove, small glass of white dry wine, same of water, olive oil, salt.
• Have olive oil in a big pot or pan, add the sliced squid, when pink, add the onion in small dices, when transparent, add the sauce made out of the ripe tomatoes.

• Keep on stirring for a while, add the garlic clove minced. Stir until you get a good sofrito. Add some salt.
• Take a look at the power point to see the picture of a sofrito.
• Pour the glass of wine and water into the pot and let it boil until alcohol evaporates (5 to 10 minutes).

• Meanwhile prepare your meatballs with your hands wet (they wont get sticky). See my recipe on meatballs.
• Coat them in flour and place in a pan with hot olive oil. Fry until golden.

• Reserve on kitchen paper to get all oil absorved.
• Throw the meatballs inside the squid pot, have medium/low heat and stir for 1 minute. Have low heat now and cover. Let it simmer for 20 to 25 minutes. Five minutes before turning heat off add some minced fresh parsley.
MEATBALLS WITH SQUID
• Let it rest for 5 more minutes and enjoy!!!
• I usually use pork for meatballs because I prefer the texture they get, beef is much more dry, but then again, up to you and your particular taste!
