Vegetable of the Month ONIONS, CELERY, CARROTS
& GARLIC
Onion, Celery, Carrots
Also known as Mirepoix. This vegetable combination is the base
for most soup, and stocks. The classic ratio is 2 times the amount of onions to 1 times the amount
for celery and carrots. The vegetables are cooked slowly in butter or oil in order to coax out the flavors without browning or
caramelizing them.

BCSD Food Service is continuing our efforts at a more sustainable program looking to reduce our footprint with waste in our cafeterias. In late January we started converting to reusable (washable) trays thus eliminating nearly 500 trays going to the trash daily. This conversion to washable trays will help to reduce the trash from BHS cafeteria by more than 60%. We can only keep this initiative going with your help. Please help keep our trays in circulation by returning them to the tray return area in the front of the cafeteria. BHS cafeteria has new recycling stations for collection of recyclable bottles and cans. Sorting recyclables will also help this initiative to succeed.
