Well, I think spring is here. Hopefully our weather will make up its mind and we can enjoy it. I also just realized we only have 2 more months of the Homemakers calendar left. Where has the time gone?? I hope every one is working on documenting your volunteer hours and looking over the Programs of Work that are due on July 1st.
Just a few things to note:
• I would like to thank those that brought in quilts to be displayed at the Public Library for the month of April in honor of Quilt Week. We have 13 on display.
• The mini-lesson on Applique was great. We had 6 people attend and have some great blocks to take to the State Meeting for the Quilt Block Challenge. If anyone else would like to donate a completed 12” x 12” block please turn in to the office by noon on Friday, May 4th, and I will pick them up.
• If anyone has cultural arts that is state eligible, and you are not going, I can take them for you. Please leave them at the office by noon on Friday, May 4th.

How to Store Fresh Herbs
Fresh herbs are not always conveniently sold at the grocery store. A recipe may call for a tablespoon yet it is only sold as an entire bunch. Fresh herbs typically last 7-10 days in the refrigerator. Here are some tips to keep herbs last longer:
•Rinse herbs as soon as you get home•Puncture some air holes in a plastic bag, wrap stems in a moist paper towel and place in the bag. Keep the bag of herbs in the refrigerator with the leaves away from the interior surface of the bag •You can also store herbs such as cilantro and parsley in a glass of water in the refrigerator•If you don’t anticipate using the herbs within 7-10 days, you can also chop them and place into an ice cube tray and pour olive oil over the herbs. Once frozen, you can pop out a frozen cube to start the base for a soup or place under the skin of a chicken you plan to roast

In a large bowl, combine turkey, onion, egg, salt, pepper, oregano, parsley, garlic and lemon juice. Mix until it forms a ball and sticks together. If it is too wet, add quick cook oats. Spray a large skillet with cooking spray and shape into 1-inch balls. Place in skillet over medium high heat and cook each side for several minutes until meatballs are browned evenly.
Remove from pan.In a small bowl, combine sour cream, cucumber, lemon juice, salt and pepper. Stir until combined.Warm tortillas in microwave for approximately 20 seconds. Place three meatballs on each tortilla. Add lettuce and tomato. Top with sauce and wrap.
Ingredients:1 pound turkey¼ cup onion, chopped1 eggΤ1 8 tsp. saltΤ1 8 tsp. pepper
1 ½ tsp. dried oregano½ tsp. dried parsley1 garlic clove, peeled & chopped1 tsp. lemon juiceCooking spray¼ cup quick cook oats(if meatball mixture is too wet, add oats to help bind)
Sauce ingredients:½ cup nonfat sour cream or plain Greek yogurt¼ cup cucumber, chopped1 ½ tsps. lemon juiceSalt & pepper, to taste
Wrap & topping ingredients6, 10 inch flour tortillas1 cup tomato, choppedLettuce leaves, tornSliced cucumber (optional)
