STREAMLINED MINESTRONE SOUP Makes 4 servings Serving size: 1/2 cup Quick and easy thanks to microwave cooking. For canned items, choose fruit canned in 100% fruit juice and vegetables with “low sodium” or “no salt added” on the label.1 can (14 oz.) Italian-style stewed tomatoes, chopped 1 can (14 oz.) beef broth 1 cup frozen vegetable mixture 1/2 cup small shell-shaped pasta or elbow macaroni

1 lb. lean ground beef 3 T grated Parmesan cheese, divided 1/8 teaspoon garlic powder 1/8 teaspoon ground pepper

Combine tomatoes, beef broth, vegetables, and pasta in a 2-quart saucepan. Bring to a boil. Reduce heat to medium and cook until pasta is tender, stirring occasionally. Mix ground beef, 2 tablespoons of cheese, garlic powder, and ground pepper thoroughly. Make 24 1-inch meat balls. Arrange in a single layer in a microwave-safe baking dish. Cover tightly with plastic wrap. Vent one corner. Microwave on high setting for 3 to 4 minutes. Turn after 2 minutes. When done, the inside of the meat balls will be 160 degrees Fahrenheit and will no longer be pink. Combine meat balls and hot tomato mixture. Stir. Cover and let stand for 5 minutes. Garnish with remaining cheese. Nutrition facts per serving: 310 calories; 9g total fat; 4g saturated fat; 0g trans fat; 90 mg cholesterol; 680mg sodium; 20g carbohydrate; 2g fiber; 36g protein Source: “Healthy Choices for Every Body”, an NEP Education Program Resource.

Make It, Take It, Try It March class: March 1, 6pm

An afternoon session has been added for those that cannot attend in the evening. It begins at 1pm. Sign up now to take the Festive Egg Tree class by calling the office. $8 class fee.

April class: April 5, 6pm The topic will be “Spring.” The project will be a

Painted Sign that can be displayed outside on your porch. It will also be reversible to use for other occasions and holidays. Details to come. Please note: an afternoon session of the event will be held starting at 1pm for those that cannot attend in the evening.

Colon Cancer Awareness

Wear Blue on March 2nd to show your support for Colon cancer awareness.

March is colorectal cancer awareness month and, if you’re over 50, March is a good time to get screened for colorectal cancer. Colorectal cancer is one of the most common cancers in both men and women and is also one of the most preventable. Regular screening starting at age 50 is important since most early colorectal cancers do not produce symptoms. The good news is that colorectal cancer is one of the most treatable cancers, especially when detected early. Most colorectal cancers develop from noncancerous polyps and removing these polyps can markedly reduce your risk of getting colorectal cancer. So make an appointment with your healthcare provider today.

your loved ones from a stroke is to understand your risk and

how to manage it.

This is an “Area” lesson training – Thursday, April 12, 5:30 pm at the Mason County Extension Office.

This lesson is all about Pinterest! Participants will gain

understanding of Pinterest, learn how to access/use it, how it can benefit your club, connect with

others who use it, and exercise internet safety while

using Pinterest. Leaders will also make a simple

craft from Pinterest. Please contact the Extension office if you

plan to attend. Several may want to carpool from the

Extension office.

National Nutrition Month… Enjoy this program exhibit -

Celebrate Nutrition Month with Barb Campbell, SNAP-Ed assistant. Barb will be hosting an exhibit at Save-A-Lot on Wed., March 21st between 11am – 1pm. Barb will be sharing some educational materials and taste testing.

Time for Cool Season Planting It’s that time of year, can you feel it? Spring has

started and it seems to have started all at once, the birds are chirping and the sting of cold has been replaced by mild fresh air. I don’t know why but spring just smells better, sounds better, and feels better this year! It must be because winter felt like it lasted ten years. We are still going to have some cold weather, frosts, and freezes but there are a lot of plants that can and should be planted now in the vegetable and flower garden. In the vegetable garden there are numerous crops that should be planted now to give you a great spring crop of fresh, delicious, and cool and it actually improves their taste and nutrition. In the flower garden there are a lot of plants that can be planted now or should be up and growing actively. Most people see the flowers such as crocus and daffodils blooming now with hyacinth and tulips coming on as well. Again, these are cold hardy as anyone that has daffodils and crocus in their garden can tell you, since they have been growing since early February! There may be the odd year where it can get freakishly cold in April like it did a few years ago when daffodils got their blooms burned off but according to meteorologist that was a once in 100 year freeze! So, spring bulbs are only guaranteed to bloom 99% of the time! You may have also noticed peonies coming up this past weekend, and again there is no need to worry. Peonies are hardy this time of year and will bloom again this spring just like they have in years past, except that one odd year when they got nipped along with the daffodils. Others spring garden plants that you can plant now are pansies, ornamental cabbage and kale, stock, and snapdragon. I bet many of you hadn’t thought to plant snapdragon now since we use it in May and June as an annual bedding plant. Pansies will grow just fine planted now but in Kentucky you can plant them in the fall and they generally survive the winter and bloom again now. However if you missed the fall planting they are just as beautiful planted now. The ornamental cabbage and kale should be purchased as larger plants which will give you a better display because the cool weather causes them develop a deeper color. If you plant small plants they won’t develop the deep color because by the time the plants get large the weather will be heating up and the plants won’t color up. The one thing the cool season crops require is full sun, no matter if they are vegetables or flowers. It seems odd that plants that like cool weather would also require full sun but they do.

In order to sell at this year’s market, farm families must attend all 3 organizational meetings/trainings and pay $35 membership dues. All produce must be raised on your farm by the family. Your Keys: 1. Include a variety of healthful foods

from all of the food groups on a regular basis.

2. Consider the foods you have on hand before buying more at the store.

3. Buy only the amount that can be eaten or frozen within a few days and plan ways to use leftovers later in the week.

4. Be mindful of portion sizes. Eat and drink the amount that’s right for you, as MyPlate encourages us to do.

5. Continue to use good food safety practices.

6. Find activities that you enjoy and be physically active most days of the week.

7. Realize the benefits of healthy eating by consulting with a registered dietitian nutritionist. RDNs can provide sound, easy-to-follow personalized nutrition advice to meet your lifestyle, preferences and health-related needs.

Beginning sewing class Another work day for anyone interested

in learning new sewing skills has been scheduled. Bring a current sewing project, (or contact the Extension office for a suitable project.) on Tuesday, March 13, noon till 4pm at the Fleming County Extension office. Become a Master Clothing Volunteer Recruitment for the Master Clothing Volunteer Class of 2018 is ongoing through the end of June.

A master volunteer is an individual who goes above and beyond the traditional volunteer role. Master Clothing Volunteers have basic knowledge of sewing and garment construction skills. They are interested in receiving in-depth training in the subject and are dedicated to helping others learn their art. A new class of volunteers is selected every two years. The class of 2018 will be the 14th class to begin the certification process.

Participation in the Master Clothing Volunteer program is highly selective. Only two individuals are selected from each of the state’s 14 extension areas. Individuals must first apply to the program at their county’s extension office, where they are already an approved volunteer. From there, a county committee will screen the applicants. Individuals will be notified by mail about the status of their application. Those selected will advance to an area screening committee. The committee will make their selections based on an individual’s sewing knowledge and people skills drawn from the application and an interview.

Those selected to participate in the program will attend a statewide training Oct.18-21 at the Lake Cumberland 4-H Educational Center in Jabez and begin the certification process. During this process, they will receive training on subject matter, recordkeeping, teaching, and people skills. They will also make a written commitment to give back a specific amount of time to Cooperative Extension and the community by teaching basic sewing skills to groups of individuals. After completing the volunteer requirements, the individual will become a Certified Master Clothing Volunteer recognized by the Kentucky Cooperative Extension Service as a trained professional aide.
