The Ecostar is a baker’s dreamcome true. Whether controlled man-ually or fully automatically – the pas-try is sheeted fast, expertly and easily. Intelligent technology hasmade this possible.

For operations performedrepeatedly, automatic sheeting isrecommended. Ecostar has a memory for 20 programs.

Ecostar handles all types of doughs: from puff, croissant andDanish, to yeast, short crust andpizza doughs, and the more and more popular thin doughs. It istruly a universal machine.

Ecostar also excels as amechanical sheeter with manualcontrol. The new ingenious turningknob allows easy, quick and preciseroller setting. In manual sheetingtoo, the photo cells are working andthe dough band is automaticallystopped after passing through therollers.

Ecostar.Pastry sheeting has never been easier.

On the other hand, single billets and very special doughs arebest processed with manual con-trol, using individual reductionsteps.

For products requiring specificreduction steps but beingprocessed regularly, e.g. pizza or tart bases, the Ecostar featuresthe unique «Man/Auto»-mode.

Use manual control to select theideal reduction steps. When satis-fied with the result, the machinethen memorises these steps andconverts them into an automaticprogram.

Programming is very easy andneeds neither special knowledgenor intensive training.Blinking luminous dots guide theoperator through the programmingprocess.

With the new automatic doughreeler, the dough band is reeledgently and without tension. The last stage of the reeling processis performed on the conveyor belt.Here, the dough is stopped and caneasily be carried away.

The Ecostar is easy to clean.All parts that need cleaning are ofeasy access. The photo cells are equipped with a self-cleaning mechanism. At theend of each program, a wiper freesthem from dough and flour, pro-viding a perfect functioning of themachine.

Flour is dusted evenly andaccurately over the dough sheetunder program control. That meansless flour is used and none of it isescaping into the atmosphere. A subsequent benefit is a higherquality final product.

The tried and tested Rondoscrapers prevent the dough fromsticking to the rollers.Even delicate and extremely thindough sheets do not tear. The useof dusting flour is minimised. Theremoval of the scrapers for cleaningis both easy and quick.

Econom and Ecomat are dough sheeters especially designedfor hotels, restaurants and foodservice kitchens, but also for small tomedium craft bakeries. On bothmodels, a new drive feature harmo-nizes the drive relationship betweeninfeed and discharge conveyors toprovide perfect dough sheets.

The machines are very easyand safe to handle. For starting oneof the two green buttons in pressed.For stopping, either the safetyguards are lifted or the red button ispressed.

For the daily cleaning, thescrapers can be removed in a fewseconds.
