Recipe: Mini Roast Beef Sandwiches with Green Chile Mayo

*Ingredients*2 cans (8 count each) refrigerated biscuits2 tablespoons butter, melted1/3 cup mayonnaise1 can (4 ounces) chopped green chilies, drained1/2 cup seasoned bread crumbs1 tablespoon dried parsley flakes1/2 pound deli style roast beef, thinly sliced2 cups shredded Monterey jack cheese

*Instructions*Preheat oven to 375 degrees (or whatever your can of biscuits says). Combine the seasoned bread crumbs and dried parsley in a shallow bowl.

Remove biscuits from the cans, and arrange on a large baking sheet. Use a pastry brush and coat the top of each biscuit with the melted butter, and then dip into the breadcrumbs.Place the baking sheet (breadcrumb side up)and repeat with the remaining biscuits.

Bake for 12 minutes or until the tops are a nice golden brown. Remove from oven and let cool enough to handle. Split cooled biscuits in half. In a small bowl, combine the chopped green chilies and mayonnaise.

Now it's time to assemble the sandwiches:

Place the bottom half of a biscuit on your work surface. Top with one or two slices of roast beef.

Spoon on two teaspoons of the mayo, and then some Monterey jack cheese.

Repeat with the remaining biscuits, roast beef, green chile mayo, and cheese. Put the assembled biscuit bottoms on a cookie sheet and back in the oven (still at 375 degrees) for about 3-5 minutes or until the cheese is all melted and gooey.

Cap the sandwiches with the biscuit tops, add a toothpick to secure, and serve.

*Comments*These little sandwiches are great to bring or serve at holiday party's such as New Year's Eve or any party you need to bring finger foods too.

Recipe: Strawberry Pie by Savon Marie.

*Ingredients*1 Nilla pie crust1 box of strawberry jello1 box of cook and serve vanilla pudding4 cups of fresh strawberries sliced or quartered lengthwise, depending on size. You can save a few whole berries for ganish.1 1/3 cups of waterwhipped cream (optional)

*Instructions*Mix jello powder and pudding powder in a medium to large saucepan. You will need a saucepan large enough to add the strawberries. Add water to combined powders and heat over medium heat. The mixture starts out looking cloudy, but as it cooks, it turns clear red. Stir until the mixture bubbles and remove from heat. Stir in sliced strawberries making sure that they are all coated with the mixture.

Pour into pie crust and chill till set.

YOU CAN ALSO MAKE THIS HEALTHY! Use sugar free jello and sugar free, fat free cook and serve vanilla pudding. This is the only way I make it and it is luscious.

*Comments*I have had this recipe for years. Everyone loves it. I don't know where it came from originally, but when it was given to me I was told that when using the fat-free sugar-free options, the entire pie has only 6 Weight Watcher points. Iʼm sure that you wouldnʼt want the entire pie, but it is

delicious and does not do too much damage to a healthy eating plan. I hope you enjoy it.

*Instructions*Preheat oven to 375 degrees F In a large bowl, cream together the butter, white sugar, and brown sugar until smooth. Beat in eggs one at a time, add vanilla. Combine the flour, baking soda, and salt; spoon into the creamed mixture. When mixture is all combined, add chocolate chips. Use a small ice cream scoop for consistent size and shape.

Place onto ungreased baking sheets. I generally use parchment paper.

Bake 12 to 14 minutes 375* oven, or until lightly browned. Remember, cookies will continue to cook outside of the oven so donʼt overcook.

*Comments*If you prefer a crisper cookie. Substitute shortening for butter. My grandmother always made them this way, but I prefer them chewy.
