chintan, more akin to traditional dashi. Within the latter group, an increasing number of
ramen vendors are making dashi from shellfi sh such as clams. NIBOSHI SOBA AI (see below) uses niboshi, small sardines that are boiled and then sun-dried, while elsewhere, dried scallop adductors and dried squid are becoming increasingly common. Stores will often attempt to differentiate themselves by replacing dried bonito fl akes with other types of dried fi sh, such as mackerel or saury. This is particularly common among the long-established Kyoto ramen vendors like HONKE DAI-ICHI ASAHI.Within the rich broth camp the main types are tori-paitan, a thick, cloudy soup made by boiling down a huge amount of chicken carcasses, and tonkotsu,
the legendary ramen broth made from pig bones that originates from Fukuoka on the island of Kyushu.
Every vendor has their own unique style, combining different types of broth with other variants such as
noodles, toppings and spices and fl avorings. It’s fun to compare the established restaurants with some of the newer
eateries to enjoy the myriad different taste sensations on offer — like a Nishijin brocade!

yoto ramen has its origins in the street stalls that fl ourished
after the war. It is distinguished by the soup, made from
either pork bones or chicken carcass and fl avored with soy sauce.
Whereas Kyoto cuisine is generally quite mild in terms of fl avor,
Kyoto ramen is considered quite intense. Yet it is very popular
with the locals. If you try various different types of ramen, you
will see why Kyoto ramen is such a hit all over the world.
T here are countless places to enjoy Kyoto ramen, but MENYA INOICHI HANARE is acknowledged as a place where you can
enjoy the latest trend in fl avor. Instead of traditional pork bones or chicken carcass, the soup is made with katsuo-bushi (dried bonito fl akes) and other types of seafood. This meat-free variant is in fact equivalent to dashi, the all-purpose fi sh broth used to fl avor udon and soba noodles and many other Japanese dishes. In order to produce the required intensity of fl avor for the soup of ramen with a minimum of fat, it is important to use a lot of the best quality ingredients in the broth based on dashi rather than the standard udon/soba formulation. Ramen vendors are increasingly experimenting with combinations of meat-based and dashi broths, known as W soup, to create interesting new fl avors. Broadly speaking, ramen in Kyoto falls into two camps: a very rich, dense stock that has been boiled down over time and is stronger than the standard meat broth, and a light, clean broth, which is known as

DOWNTOWN KYOTOSe-abura Niboshi Soba (¥750; photo shows ¥850 version with egg) features a broth of pork and chicken bones boiled for ten hours then fl avored with two types of sardines. SE-ABURAType
Se-abura type ramen is typical of the Kyoto
ramen varieties. The name is derived from se-
abura, the back fat produced by boiling pork and
chicken bones in chintan (clear broth.) Interestingly,
the base broth is simple and clear and is not heavy
on taste as it looks. Some claim that the use of
se-abura in ramen is often claimed to have been
invented at Masutani in Kyoto shortly after the
war, while others claim it was popular in the city of
Tsubame in Niigata prefecture well before then.

Y ASUI KONPIRAGU Shrine is famous for benefi ting those who are breaking off bad relationships and those who are initiating good ones. Worshipers face the enkiri enmusubi ishi (literally, breaking off
relationships/initiating relationships stone) next to the main hall, which is 3 meters wide and 1.5 meters tall. The stone is an enormous megalith covered in white slips of paper, creating a unique atmosphere. A hole in the stone's center allows worshippers to crawl through the megalith while holding a piece of paper called a katashiro. These have wishes written on them to end bad relationships or to initiate good relationships. In the end, they paste the katashiro to the stone. There is a constant line of people in front of the stone.
After concluding their visit to the shrine, people make a stop at JEREMY & JEMIMAH, a store located on the side of the path leading to the shrine that specializes in cotton candy. The cotton candy sold here is large and photogenic. You can enjoy nine types of original cotton candy (¥600) made from granulated sugar developed and produced only by this establishment, including matcha green tea, “black honey” sugared syrup, and cherry rice cake.
For lunch, why not try the specialty set meal of premium soybean curd at WASHOKU YUBARYORI HIGASHIYAMA YUUZU? This restaurant’s standout dish is soybean curd, called yuba, prepared without any additives. Experience the popular Yuuzu set meal (¥2,160) made with soybean curd skimmed from the top of hot soybean milk with generous amounts of seasonal ingredients. For meat lovers, GION CALF steakhouse is perfect. The meaty and fi lling
Japanese black beef chopped sirloin lunch (¥3,000) made with top-ranked Omi beef is very highly rated. Enjoy the incomparable blend of sweet and savory that is distinctive of the marbled Omi beef in the refi ned elegance of a machiya townhouse. Finally, spend time creating memories and marveling at Hanamikoji-dori Street, which features famous stores that are picturesque and represent the essence of Kyoto.

R ANDEN Arashiyama Station is a fi tting entrance to Kyoto’s most prominent sightseeing location and seeing how it has been rendered is sure to make you click your camera’s shutter. Leaving this
mysterious photo opportunity aside until evening, spend the whole day exploring Arashiyama.Among the many famous locations in Arashiyama, the bamboo forest path is a spot that should not be missed. After strolling between the bamboo swaying in the wind, why not enjoy something sweet served in a bamboo bowl? Jade rice cake available at ¥807 at CAFE HASSUI is the restaurant’s original menu item made from kudzumochi (kudzu starch) and matcha green tea and enjoyed with soybean fl our and a brown sugar syrup. Spend tranquil moments at a hotel cafe located on the banks of the peacefully fl owing Hozu River.
For lunch, try Japan’s soul food -- innovative udon imaginatively and freely arranged. The succulent shrimp and coriander curry udon for ¥1,280 is a fl avor-combination that you will not fi nd anywhere other than SHINTOGETSU. Even with the novelty, the attention to detail is non-negotiable, such as a sticky homemade texture of noodles and broth made with kelp and various pieces of dried fi sh.
When you fi nd yourself getting tired from walking around Arashiyama’s many sights, ARASHIYU is at your service. After soaking in a footbath while enjoying a drink, you can have a Japanese-style foot massage by hand or with bamboo. The Miyabi course with fl oating seasonal fl owers is available for ¥4,320 for 30 minutes.A magical world completely different from that of the day awaits the newly revitalized you at the station. Six hundred pillars adorned with kyo-yuzen dyed fabric lit from within, collectively called the KIMONO FOREST, will provide you with an unforgettable memory of your time in Kyoto.

2. KAMISHICHIKENKamishichiken, the oldest of Kyoto’s fi ve geisha districts, is home to no less than seven tea houses erected in conjunction with the reconstruction of KITANO-TENMANGU Shrine. The cobblestoned streets of Kamishichiken have a relaxed feel, with typical Kyoto homes sitting alongside tea houses and geisha houses where live-in maiko (apprentice geisha) learn their craft. If you’re lucky you might even get to see a maiko on her way to class. Your tour guide will tell you all about the rigorous daily training regime of the maiko.
3. SENBON SHAKADOThe SENBON SHAKADO Temple complex was founded in 1220. The main temple is the oldest surviving wooden structure in Kyoto, having miraculously escaped being burnt down during the Onin War in the 15th century. If you look carefully you can see the scars of sword and arrow attacks from that tumultuous time. In the temple grounds is a large statue erected in remembrance of the wife of the master carpenter who lost her life during the construction phase. The statue is worshipped to this day by builders and carpenters. The treasure house houses some excellent Buddhist statues and other works from Kei—one of the leading schools of Buddhist sculptors.

KITANO-TENMANGU Shrine is regarded as the main headquarters for around 12,000 Tenmangu and Tenjinja shrines dotted around Japan. It was built in 947 as a place to worship Sugawara no Michizane, a Heian-era noble who was a scholar and politician. Sugawara is well known as the god of learning, and students come from all over Japan to KITANO-TENMANGU Shrine to pray for success with academic studies and entrance examinations. The shrine grounds house statues of bulls said to be messengers from the gods with the ability to cure any ailment through the medium of touch. Take a walk around the shrine grounds and fi nd stone lanterns depicting Daikokuten, the god of wealth, and the Virgin Mary from the Christian religion, as well as carvings of the sun and the moon that represent the energy that comes from heaven.

OCHANOKO SAISAI is a popular store that stocks a lot of seasonings using domestic red pepper such as Ichimi and Shichimi. The Kyoto Hot Pepper Oil which combines red pepper used in Chinese cuisine and hot sesame oil is very popular. The Kujo green onions, garlic, spices and other seasonings, blend together for a umami taste that gets even better when you chew on it. The oil is not as spicy as it looks, so use it not only as a hot pepper oil but as a sauce over deep fried dishes, spicy grilled meat or ramen.

Jyako Sansho makes you feel the taste of good old home-cooking from Kyoto. Aromatic Japanese grape pepper and carefully selected soft baby sardines are cooked for a sweet taste. The Jyako Sansho is great with white rice, fried rice, and pasta as well. No artifi cial coloring or preservatives are used, which is great too. It is perfect for gifts because you can select what gift wrapping you would like and write messages according to your request.
YAOSAN is a yuzu miso specialty store with a history of 290 years. The interior of the wooden building will make you feel like you went back in time to the Edo period. Originally this shop produced vegetarian dishes, which eventually led to the creation of their Yuu Miso (130g without the jar, from ¥900). Miso is a traditional Japanese fermented food made from soybeans. You can smell the sweet miso and the citrus fragrance of yuzu. It is generally used as a topping with boiled daikon radish and namafu (wheat gluten mixed with rice fl our and steamed) but it is excellent as a dip for bread as well.

Since SHIMOGAMOSARYO's founding in 1856, this well-established restaurant has offered traditional Japanese cuisine from Kyoto (Cha-kaiseki) in the area of Shimogamo. Soy sauce is an indispensable seasoning for Japanese cuisine. This restaurant’s head chef invented a new type of Powdered Soy Sauce through trial and error. This is a stylish new seasoning with just the right amount of yuzu accent. Liquid soy sauce is common, but this soy sauce is in powder form and can be easily carried around. It is used in a wide variety of dishes such as egg dishes, grilled vegetables, tempura, karaage fried chicken and more. You can enjoy a taste of Japanese by sprinkling just a little on your food.

BONCHI KYOTO is an independent
tourist information center in Kyoto
city. They sell zines about Japanese
culture, run workshops for making
miniature food, and more! They always
have the latest in cool Kyoto info.
Why don’t you explore small alleys and laneways? They’re so magical!
Kyoto is great for walking, with so many unique
and historical buildings to see. We had a fantastic
time exploring lots of lanes and alleys that are away
from the center of town. And the freshly made tofu
we had at a local eatery was unbelievably good!
Cannot get what I’m trying to get, hahaha!
Japan has great sweet foods and
café breakfasts, and the meat dishes
are excellent too. I wanted to try
out an udon restaurant that I saw on
television but the fi rst time I went
there I was too late, the second time it
was closed for the day... fi nally on the
third attempt I got lucky! It just shows
that it’s important to do your research.
The early bird gets the worm
We came to see Japan’s natural attractions,
to explore its history and to enjoy the great
Japanese food. We woke up at four o’clock
in the morning to cycle around the city. I’d
really recommend it, because there’s no-one
else around! Kyoto has fabulous temples and
shrines with stunning gardens as well, omg!
It’s such a special place. We want to live here!
If you come to Japan, you have to come to Kyoto
Kyoto was everything we’d hoped for and
we would absolutely recommend it for
anyone coming to Japan. Having said that,
everywhere you go is crowded so you have
to do your research fi rst and work out a
timetable to avoid the crowds. And remember
to always carry some cash with you.

TIPS FOR ENJOYING KYOTOAt BONCHI KYOTO, we asked
tourists visiting from overseas
what they think of Kyoto and if
they have any tips for getting
the most out of their holidays.
Don’t be afraid to get lost!
We have always been attracted to the authenticity and history
of Kyoto, and especially the architecture and craftsmanship.
It’s so great to fi nally be here! On every street corner there’s
something new and exciting to look at. It’s hard to know
whether we’re lost or whether we’re on a voyage of discovery!
Try something a bit diff erent
We went on a walking tour led by Kyoto locals.
They took us to a great local place for lunch, which
we would never have found by ourselves. And they
gave us lots of fascinating insights into the Kyoto
culture and customs. It was a real eye-opener!
Tofu meals are the best!
Kyoto is both traditional and modern at once, giving you
the opportunity to experience both sides of Japanese
culture at the same time. On this visit, I ate deep-
fried tofu with egg on rice for the fi rst time and it was
fantastic! Then I had a great time trying all the different
types of tofu: fresh, fried, and even yuba soymilk skin!

providing an entirely new way for people to learn to tolerate each other. haha...
Karaoké has advanced technologically over the past decade or so. It started
off on 8-track cartridges (what were those???) in the 70s, then moved to tapes, CDs, VCDs, laser discs, DVDs, mp3s (or some digital format) to just streaming live. The newest machines constantly update their songs, offer games to play, and even judge your singing.
There are literally thousands of karaoké places in Japan, but the 2
in Kyoto, I'd like to introduce you to are Jankara, which means jumbo
karaoke, and BarCode, a cozy, but big karaoke place run by two brothers,
Revo and Hiro. The fi rst, Jankara is a massive company all over Japan. They have
so many different kinds of rooms recently, like the above-mentioned Bouldering and Skateboard
rooms and many more. The variety doesn’t stop there, you have a plethora of drink choices and lots of food options plus the option of Nomihodai, which means all-you-can-drink: something I took advantage of shortly after arriving to Japan – moderation people! You’re going to fi nd a little bit of everything for everyone in this fast food style karaoke system at Jankara. The other place
is my go to recommendation for visitors to Kyoto – BarCode. It is more like the western style karaoké bars but with a little more swank. There are no sports here, but there is a lot of singing, dancing, dressing up and NO cover charge! The drinks are usually custom made by Hiro, while Revo runs the fl oor. Revo is actually an amazing singer and if you’re lucky, you might get a chance to experience his singing talent. He also won fi rst prize at the Battle of the Champions Nodojiman World 2018 (a singing contest) this March. Their food is all hand cooked and they have a nice international menu. BarCode is quite unique as I’ve seen it turn into a full-blown club, late on weekends– they have events all the time and can be booked for parties as well.
Whichever you choose, give it a try and always pass the mic after you’re done. Also, try and put in only 1 song at a time – no one likes a karaoké hog!

O k, quiz time. Where can you go bouldering, skate boarding, put on funky wigs, masks or do cosplay, turn into a real life rock star and
all the while, listen to your choice of song and also sing it or try to. Karaoké, of course!
You can fi nd hundreds of portmanteaus all over the country. The Japanese love shortening everything. Here, the word “misudo” comes from Mister Donuts, Pokémon, from pocket monster, and my favorite, fi rst kitchen, which has colloquially been abbreviated to “fakkin,” though the company does not use, nor approve of it – go fi gure?!? The word karaoké is derived from “kara,” which in Japanese means empty and “oke”, which the Japanese pinched from orchestra, thus giving us the empty orchestra. It defi nitely sounds better in Japanese;
Karaoké has gained in popularity all over the world from bars to hotels, cruise ships to Hollywood movies.
Karaoké back home for me was a lot different than it is here in Japan. We’re used to big bars, sometimes with stages, where people make absolute fools of themselves, intentionally or not, and usually with the help of some beverage, whether it be to lubricate your vocal chords or to add a wee bit of liquid cheer so you can cheer when you’re being catcalled. You can fi nd it in busses, cabs, airport lounges and even at concerts. Robbie Williams is in the Guinness book of world records for leading the biggest karaoké event in the world with 120,000 singers. In Japan, it is the exact opposite – the rooms are small, private and limited to your party, be it, 1 person or 30 and usually rented by the hour. The main similarity, other than the singing, is the liquid cheer but that’s probably to help you get over your fear of singing in public.
Karaoké was born in the 1970s by Daisuke Inoue, a Japanese drummer who received the tongue-in-cheek IG Nobel Peace Prize for inventing karaoke thereby

To truly enjoy your holiday abroad, it is important to familiarize your-self with some of the country’s basic customs. This is particularly true for Kyoto, a city that welcomes a great number of foreign tourists every year. It is important to respect the local laws and customs to ensure that everyone can enjoy a trouble free and pleasant stay. Please take note of the signs posted in shrines and temples so as to avoid doing or saying anything that may be considered offensive. If you are unsure of something, a friendly English speaking staff mem-ber is never too far away.
