Prelude

We would like to introduce you to our producers and their selection of wines. All

of our producers mentioned in this document tend their vines either organically or

biodynamically – not all of them are certified but many are.

The wines are all fermented using the yeasts that naturally occur in the vineyard

and the winery. No commercial yeasts are added. Nor are any of the other

common additives used to make the wine. No enzymes to change the mouthfeel of

the wine, no DAP (Diammonium Phosphate) or Fermex or Fermaid to help the

commercial yeasts flourish, no bentonite (clay) or fish meal or gelatine or egg

white used for fining and none of the other chemical additives that are common in

wines.

The only additive that is sometimes used is a little sulphur dioxide is added to the

bottle to help preserve it on its journey to Australia.

We use Hillebrand to transport our wine within Europe and from Europe to

Australia where the wine is transported at all time in refrigerated trucks and

refrigerated containers. In Australia we use Fresh Freight to transport the pallets

to our warehouse.

This document is designed to give you a glimpse into who makes the wines we

import and to give you a feeling for the range of wines each supplier produces.

Domaine Belluard

Vin de Savoie

Domaine Belluard is one of the leading biodynamic producers in the Savoie. The

vineyards of this region lie high in the mountains and are not very far from the

famous ski fields of the beautiful village of Chamonix.

The labels of the Belluard wines depict both Mont Blanc and an old winemaker’s

hut which is still standing in the steep Le Feu vineyard.

Dominique Belluard is the custodian of nearly all the remaining vines of the very

rare Gringet grape – a white grape that makes elegant, complex still and sparkling

wines. There are only 22 hectares left on the planet and 12 of them are in the

Belluard vineyards.

He also has plantings of Altesse another rare white grape that is native to this

region and also a small area of Mondeuse from which he makes the most

extraordinary red wine.

This domaine practices organic viniculture, uses no pesticides or herbicides in the

vineyard and no nasty additives in the winemaking process. The grapes are

fermented using only the naturally occurring yeasts.

Recently, Dominique Belluard has started to convert to the use of concrete ‘eggs’

to ferment the wine. He likes the fact that concrete ‘breathes’ and the shape of

the egg allows for more natural circulation during fermentation.

Concrete eggs in the Belluard cellar

The Ayse Brut and the Mont Blanc Brut Zéro are gorgeous sparkling wines with fine

beads and a creamy texture made from the Gringet grape. The Le Feu is a still wine

from the same grape that is complex and elegant. It now benefits from being

fermented in the concrete eggs. Another interesting wine is the Grandes Jorasses

made from the Altesse grape.

Domaine Fanny Sabre

Pommard, Meursault, Savigny les Beaune, Beaune, Aloxe Corton, Bourgogne, Bourgogne Grand Ordinaire

Fanny Sabre is one of the new breed of young, enthusiastic winemakers who are

growing grapes organically and making their wines naturally. Fanny has some great

sites around the city of Beaune including patches in Pommard, Meursault, Beaune

and Aloxe Corton.

Her wines are delicate and refined and reflect the terroir in which they are grown.

The Meursault is a stand out white made from 100% Chardonnay. However it is

her standard Bourgogne that really made people sit up and take notice! Her wines

are only made in tiny quantities although she is now expanding her holdings of

Gamay to make an exciting Bourgogne Grand Ordinaire.

Alice and Olivier de Moor

Chablis, Chitry, Saint Bris, Bourgogne Aligoté

Alice and Olivier are well known for their pure, natural wines that they craft from

small plots in Chablis, Chitry and the little known Saint Bris appellation. Their wines

are highly sought-after in Paris and New York.

A sign to the heart of the de Moor’s vineyards

They have been tending their organic vines near their village of Courgis for almost

fifteen years now.

Courgis lies north west of Dijon so it is quite a cold area leading to low yields from

the vines. Both Alice and Olivier share the winemaking as they work together to

craft these stunning wines which are clear, crisp and very elegant.

While they have become famous for their Chardonnay from the Chitry and Chablis

appellations their other wines are also some of the best you can buy, particularly

their Sauvignon Blanc from Saint Bris and their Aligoté wines.

All the grapes are picked by hand and only natural yeasts are used to ferment the

wines which are matured in oak barrels that are typically one to four years old to

ensure that the oak flavours do not dominate the fruit.

Causse Marines

Gaillac, Marcillac, Vin de Table

The wines of Virginie Maignien and Patrice Lescarret of Causse Marines are

instantly recognisable through their humorous wine labels with their irreverent,

but obscure, jibes at French bureaucracy.

However, they are very serious wine makers who are committed to restoring the

Gaillac region to its former glory.

Their vineyards fall within two appellations - Gaillac and Marcillac (although they

are not producing from their Marcillac vineyard yet) both of which lie a short drive

north of the south-west city of Toulouse.

The vineyards are tended biodynamically with no pesticides or fungicides or

artificial fertilizers used.

They make their wines naturally and have a wide range of unusual grape varieties

to call on including Ondenc, Loin-de-l’oeil, Braucol, Duras and Mauzac.

The Les Greilles is a very savoury white wine made from Mauzac, Loin-de-l’oeil and

Muscadelle. The Marcillac Rouge is a spicy, fresh, lively red wine made from Fer

Servadou. This is a great wine for people who seek out obscure wines made from

obscure grapes.

The Peyrouzelles red from the Gaillac appellation is a lovely, fresh wine which

incorporates some of the native grapes of the area (Braucol, Duras, Alicante,

Jurancon and Prunelart) as well as some Syrah.

For fans of the Ondenc grape which has nearly been eradicated from the planet

(remember the great sparkling wines made from this grape by Seppelts in the

Great Western region of Victoria) Causse Marines make a bold white wine called

Dencon which uses only this grape.

Philippe Bornard

Côtes du Jura, Arbois, Arbois-Pupillin

Philippe Bornard live in the quaint village of Pupillin which is quite close to Arbois

near the Swiss border. Philippe inherited the vineyard from his father and decided

to make wine himself rather than sell his grapes to others. He makes his wine

under his house which overlooks the village.

The wines cover two appellations. The first is the broader Cotes du Jura and then

most of the wines are from the tiny Arbois Pupillin which only applies to grapes

grown in the commune of Pupillin. You will notice that in this appellation it is

permitted to name the grape variety on the label - which is unusual for France.

His wines are fascinating. He has eighteen different cuvees and they are all

remarkably different.

Les Chassagnes in the very old, egg-shaped barrel

Les Chassagnes is a savoury white wine made from Savagnin. Another Savagnin is

the Les Marnes which has been oxidised in the barrel to develop nutty, savoury

characteristics. His light, red wines made from Trousseau and Ploussard are

delicious, as are his Reds made from Pinot Noir. But the crowning glory is the Vin

Jaune which has been left in barrel for over six years to concentrate and oxidise so

that it turns yellow and develops sherry-like flavours.

Domaine de la Cadettte

Bourgogne Vézelay, Vin de France, Bourgogne, Bourgogne Grand Ordinaire

We have been great fans of the beautifully crafted Vezelay wines of the Domaine

de la Cadette for some time. It is run by Jean and Catherine Montanet in the small

village of St Père.

We import their entire range of wines, including some of their truly excellent

Melon de Bourgogne which is made from one of the few remaining plots of this

grape left in Burgundy, the salty, elegant Les Saulniers and the delightful Le

Châtelaine – an elegant, lively Chardonnay.

This domaine practices organic viniculture, uses no pesticides or herbicides in the

vineyard and no nasty additives in the winemaking process. The grapes are

fermented using only the naturally occurring yeasts.

The healthy Cadette vineyards hug the forests for biodiversity

Because their vineyards are in Vézelay it is permissible to use the César grape in

red wines. César (as the name hints) is a grape variety introduced by the Romans

into Burgundy and there are still some plots of this grape remaining. It is used in

their Bourgogne l'Ermitage which contains up to 20% of this grape with the

remainder being Pinot Noir.

Domaine Montanet-Thoden

Bourgogne Vézelay, Bourgogne

Domaine Montanet-Thoden is the family domaine run by Catherine Montanet and

her brother. The wines are made by Jean Montanet to the same exacting

standards he applies to the Domaine de la Cadette wines.

As with her Domaine de la Cadette vineyards Catherine and her brother practice

organic viniculture, uses no pesticides or herbicides in the vineyard and no nasty

additives in the winemaking process. The grapes are fermented using only the

naturally occurring yeasts.

There is just one white which is from the Bourgogne Vézelay appellation and a

lovely red from the broader Bourgogne appellation.

Terres Dorees (JP Brun)

Morgon, Fleurie, Cote du Brouilly, Moulin à Vent, Beaujolais, Bourgogne, Crémant de Bourgogne,

Condrieu, Côte-Rôtie

Terres Dorées is the domaine of Beaujolais icon Jean-Paul Brun.

He is one of the most revered vignerons in this appellation, making wines of great

purity and extraordinary flavour. Even his entry level Beaujolais wines are full of

interest.

He eschews the widely-practised carbonic maceration technique and, instead,

makes his wines in the tradition Burgundian winemaking techniques..

The best wines of Beaujolais, however, are from the ten 'cru' areas where the

finest wines are produced. These are Brouilly, Chenas, Chiroubles, Cote de Brouilly,

Fleurie, Julienas, Morgon, Moulin à Vent, Regnie and Saint Amour. Of these, the

most venerable are Moulin à Vent and Morgon. Wine produced from these tiny

areas do not display Beaujolais on the label, only the name of the cru.

Jean-Paul Brun at our recent tasting in his cellars

Jean Paul Brun produces cru Beaujolais from Morgon, Moulin à Vent, Fleurie and

Cote de Brouilly. All are excellent wines at very reasonable prices.

Also of some interest is the white Beaujolais made from 100% Chardonnay. This is

a lovely, lively wine which spends some time on lees. Unusually, Jean-Paul also

makes a Bourgogne red using grapes from a vineyard further north of his vineyards

in Beaujolais.

Domaine Milan

Les Baux de Provence, Vin de Table

Domaine Milan occupies prime real estate in the holiday town of St Remy de

Provence. The immaculate vineyards are framed by both suburban estates and the

famous nearby mountains called the Alpilles that provide climatic protection for

the vineyards.

Here, the gregarious Henri Milan crafts elegant wines using no chemicals, no

additives, no commercial yeasts and, in some cases, no added sulphur.

He has an inquiring mind and restless energy and is always experimenting with

new ideas. Recently he has planted another vineyard in front of his house including

some varieties that have never been seen in Provence before such as Mondeuse

from the Savoie.

He also, unusually for most of the vineyards we represent, maintains a tasting

centre next to his winery.

Two wines are particularly noteworthy. His Le Grand Blanc is an incredibly complex

and interesting wine made from Grenache Blanc, Rolle (the local name for

Vermentino), Roussanne, Chardonnay and Muscat Petit Grains, The Sans Soufre

Ajouté Rouge is a mix of Grenache, Shiraz, Mourvèdre, Cinsault and Cabernet

Sauvignon to which no sulphur has been added – hence the name.

Michel Gahier

Arbois, Crémant de Jura

Michel Gahier lives in the centre of the village of Montigny-les-Arsures which lies

near the central Jura town of Arbois. The reason this is significant is that Montigny

is regarded as the finest terroir for the Trousseau grape in the Jura. When we first

tasted his wines we were very excited by their purity and their minerality.

Michel tends 6 hectares of vines of which 3 hectares are given over to Trousseau

and the remainder is split between Chardonnay and Savagnin.

His Trousseau wines are delicate and delicious and have a strong backbone. The

whites are mostly Chardonnay which also thrives in this small area of the

appellation. The white wines are classics expressions of Jura winemaking.

The Chardonnay comes in three styles which have increasing levels of oxidisation.

The Les Follasses has been topped up in the barrel and therefore does not exhibit

much in the way of oxidative qualities. The Les Crêts has some oxidative qualities

and then the La Fauquette is an oxidative wine that has spent some time in barrels

that have not received any topping up. This last wine has been treated in the same

way as a Vin Jaune but not for as many years (and obviously using Chardonnay

grapes rather than Savagnin).

And we are delighted that he also makes a Vin Jaune that wonderful, oxidised,

concentrated wine that is held in such reverence in France. A sip of Vin Jaune and a

bite of Comté cheese is a food and wine pairing like no other.

Michel Gahier inspects his vines

The vines that Michel has behind his house are very special. The Trousseau vines

are over eighty years old and produce the grapes that are used to make the lovely

Grands Vergers Trousseau wine that has become so popular in Australia. In the

photo below you can see the thickness of the gnarled trunks.

The terroir in this vineyard is perfect for Trousseau – it also abuts the famous

vineyard of Jacques Puffeney who is also well known for his Trousseau wines.

Champagne Piollot

Champagne

Roland Piollot is a serious winemaker who is just as serious about the quality of the

soil in which his vines grow. He assiduously attends to his long mounds of organic

compost (see photo below) that he prepares with care for application to his

vineyard. The vineyard is being converted to biodynamic practices therefore no

chemicals are used, no chemical fertilisers are used and no herbicides are used.

His vineyard is a special place with sweeping views across the valley in which his

home village of Polisot nestles. Here ducks swim contentedly in the tranquil upper

reaches of the Seine River and vegetable gardens line its banks. It is an idyllic

location. The nearest major town is the ancient city of Troyes.

Domaine la Paonnerie

Muscadet Coteaux de Loire, Coteaux d’Ancenis, Anjou

Domaine la Paonnerie is a recent addition to our portfolio. They are a biodynamic

and natural producer from close to Angers in the Loire Valley. They use very little

or no sulphur in their wines.

These wines have been very popular with the unsulphured Gamay being a

particular favourite. The Muscadet Coteaux de Loire has also been popular among

the lovers of the Melon de Bourgogne grape.

Catherine & Dominique Derain

Gevrey-Chambertin, Pommard, Saint Aubin, Mercurey, Bourgogne, Bourgogne Aligoté

Catherine & Dominique Derain are biodynamic producers in Burgundy with vines

in a number of different Burgundy appellations.

Dominique Derain started his career making wine barrels but decided, instead, to

study wine making in Beaune. In 1988 he and his wife Catherine purchased 5.5

hectares of vineyards in Saint Aubin just south of Beaune and began tending the

vines biodynamically and making their wines in a non-interventionist way as well.

The Aligoté is a particular favourite but all of the wines are pure, lively, vibrant and

interesting. The Saint Aubin “Le Ban” 2009 is a delicate, delicious, perfumed wine

of considerable elegance.

Nicolas Carmarans

Vin de Pays de l'Aveyron

For many years Nicolas Carmarans ran the delightful wine bar in Paris called

Nouvelle Mairie. He sold it recently to concentrate on his vineyard in south west

France where he makes stunningly delicious natural wines from local grape

varieties such as Fer Servadou and Negret de Banhars.

The Nicolas Carmarans Mauvais Temps is a particular favourite. This light, but

complex red wine from the Aveyron in central France is lively, exciting and

delicious leaving you wanting more! The wine comprises four grape varieties,

namely 30% Negret de Banhars, 50% Fer Servadou (known locally as Mansois) and

10% each of Cabernet Sauvignon and Cabernet Franc. This wine is quite rare as

there are only 1.3 hectares of the Negret de Banhars grape left in the world and

Nicolas is the only commercial producer of wines from this grape.

Le Temps des Cerises

Vin de Table

Axel Prufer was born and raised in East Germany but moved to France as a young

man to take up a career in wine making. He now owns several small plots of vines

in the high mountains behind Beziers in France's Languedoc region under the Le

Temps des Cerises label.

He produces delicious wines naturally with as little intervention as possible - many

of his wines have no added sulphur. In fact, on a visit to his winery we tried one of

his cuvees which had been bottled without sulphur and one that had been bottled

with minimal amounts of sulphur and the result was simply amazing. The one

without sulphur stood head and shoulders above the other for freshness, vitality

and flavour.

His vineyard is one of the most beautiful we have ever seen. We had to drive

through the forest and then walk up a mountain track (see below) to get to his

remote vineyard surrounded by forest - it was a magic spot where the biodiversity

provided by the forest protected his vines and allowed them to flourish.

The Fou du roi expresses the terroir perfectly. It is a blend of 30% of each of

Grenache Noir, Cinsault and Carignan and 10% of Cabernet Sauvignon and weighs

in at only 12% alcohol.

Domaine Mosse

Anjou, Savennières, Coteaux du Layon, Vin de Table, Vin de France

Domaine Mosse is where Agnès and René Mosse craft their beautiful white wines

and elegant reds. The wines are meticulously made with little intervention either

in the vineyard or the winery. They are certified biodynamic by Qualité France.

The Domaine Mosse wines are found in many of the smartest restaurants in

Europe. They are featured on the wine list at NOMA, for example.

The Anjou Rouge is always a favourite with its lively herbaciousness. But it is with

the Chenin Blanc grape that René Mosse really shines. The Bonnes Blanches is an

elegant wine crafted from Chenin Blanc which is a revered grape variety in the

Loire Valley. For a special treat he also makes another cuvée from the oldest plot

within the Bonnes Blanches vineyard. The plot is called initials and the cuvée is

called Initials BB. Another superb wine is the sweet Coteaux du Layon which is also

made from Chenin Blanc.

His entry level wines, two white called Magic of JuJu and Welcome Aboard and a

red called Bois Rouge made from Cabernet franc and Cabernet Sauvignon are

excellent wines at a reasonable price considering the quality.

One wine from the Mosse stable is the darling of the Paris wine bar set. It is the

slightly sweet pink sparkling wine called Moussamoussettes. This is very refreshing

as an aperitif and is also perfect as a full stop at the end of the evening.

Domaine Saint Nicolas

Fiefs Vendéens

Domaine Saint Nicolas is located in the Fiefs Vendéens AOC on the Atlantic Coast.

It is here that Thierry Michon manages an extensive area biodynamically. The

vineyard is very close to the sea and you can almost taste the salt in his white

wines. He grows both well-known grape varieties (Pinot Noir, Cabernet Franc and

Chardonnay) and some that are less well known (Negrette, Groslot Gris).

The Le Poiré is a fascinating red with soft tannins and huge flavour from the

Negrette grape. His Cabaret is made from 100% Cabernet Franc and is a perfect

expression of this grape with ripe berry flavours and soft, fine tannins. The Les

Clous is a perfect entry level white wine to match with seafood.

All of his wines are clean, precise and packed with flavour. It is interesting to try

some of his pure Pinot Noir wines as they are created in a maritime climate unlike

the wines of Burgundy.

He also blends Pinot Noir judiciously. The Cuvée Jacques sees 80% Pinot Noir

blended with Cabernet Franc and the entry level Reflet sees Pinot Noir blended

with small amounts of Cabernet Franc and sometimes Gamay and Negrette.

When the seasons are good and the Gamay fruit is perfect, Thierry makes a pure

Domaine Stéphane Guion

Bourgueil

Stéphane Guion is a quiet, thoughtful man who takes his winemaking very

seriously and we think that results speak for themselves.

He only produces two cuvees of red wine from his aged vines which range from 35

to 80 years old.

The Bourgueil appellation area is centered on the village of the same name which

lies to the west of Tours in the Loire Valley. It is a red wine only appellation.

His wines are natural because the vines are tended organically (and have been

since 1965), he only uses the natural yeasts on the fruit to ferment the wines and

there are no additives with the exception of very low amounts of sulphur added

during bottling to preserve the wine on its long journey out here.

Touraine, Vin de Table

Francois and Pascaline Plouzeau maintain an immaculate vineyard near the

fascinating village of Richelieu which lies south of Tours quite close to the Chinon

region. Here they implement strict biodynamic vineyard practices which are

certified by Ecocert.

A feature of their lovely wines is the wonderful set of labels produced by local

artists that reflect the naming of the wine. So the racy Cendrillon white made from

Sauvignon Blanc and Chardonnay, as the name suggests, has a Cinderella theme

and the Gamay Sans Tra La La has an eye-catching label that suggests that drinking

Gamay can be fun.

Domaine du Moulin

Cheverny, Cour-Cheverny, Vin de Pays du Val de Loire, Vin de Pays du Loir et Cher, Vin de Table

Domaine du Moulin can be found quite close to the village of Cellettes which is

north east of the city of Tours in the Loire Valley. Here Hervé Villemade and his

sister Isabelle produce exciting natural wines from a variety of grapes including

Pinot Noir, Gamay, Malbec (called Cot in the Loire), Sauvignon Blanc and

Chardonnay which are produced under the Cheverny appellation. They also have

some vines in the nearby Cour-Cheverny appellation where the obscure

Romorantin grape is found.

Hervé makes his thrilling white wines using organic vineyard practices and organic

winemaking methods. He also makes excellent reds based on a blend of Pinot Noir,

Côt and Gamay grapes. His wines are also very low in sulphur.

His Cour Cheverny Les Acacias wine is of interest to those who seek out different

and rare grape varieties – this one is made from 100% Romorantin – a white grape

introduced by the Romans. It makes full-bodied wines of considerable character

and lingering flavour. Hervé called this cuvée Les Acacias because the Romorantin

vines are the ones in the above photo right next to the Acacia trees.

Hervé also makes an exciting no added sulphur wine called Pivoine from the Côt

grape. This is the local name for Malbec.

Both the white and red Cheverny Domaine wines are amazing value for money.

Saint Jean du Barroux

Ventoux

Philippe Gimel of Saint Jean du Barroux is as fastidious in the vineyard as he is

when making his wines. He worries about every step he takes in the process. And

the good news is that he is now producing a wider range of red wines and selling

them at very reasonable prices considering the quality of his offerings and the very

low yields he works with on his north facing vineyards in the Ventoux in southern

France.

He worries about every aspect of every part of his work. He even designed the

label for his wine (see above) showing Mont Ventoux on the left, the hilltop village

of Saint Jean du Barroux (which is very close to his vineyard) in the centre and the

jagged Dentelles de Montmirail which loom in front of his vineyard on the right.

His La Source is a big red wine that is packed with flavour and which sells at a very

reasonable price.

His elegant and rich white wines are made from Clairet, Grenache Blanc and

Bourboulenc.

The pinnacle of his red wine making is expressed in the fabulous Oligocene , a

blend of Grenache, Syrah, Carignan and Cinsault hand-picked from very low-

yielding vines.

Domaine Catherine le Goeuil

Côtes du Rhone Cairanne

Catherine le Goeuil is a thoughtful, passionate winemaker who tends her vines

organically and makes her wines with care and precision. Her vineyards are quite

close to the village of Cairanne on the rolling plains that lie between the Rhone

river and the jagged Dentelles de Montmirail mountains.

Cairanne is one of the special villages that can be named on the label of Cotes du

Rhone wines due to the quality of the wine produced here. Therefore instead of

this being a 'Cotes du Rhone' wine it is a 'Cairanne Cotes du Rhone Villages' wine.

She produces just one red wine under this label. This vintage it is Cuvée Léa Felsch

which is made from Grenache, Syrah, Mourvedre, Carignan, Cinsault and Counoise

– the same grapes used in nearby Chateauneuf-du-Pape.

Domaine du Pech

Buzet, Vin de France, Vin de Table

Domaine du Pech lies deep in the heart of south-west France in the Buzet

appellation. So, it lies to the west of Toulouse and to the east of Bordeaux.

Domaine du Pech vineyard

It is at this domaine that Magali Tissot and Ludovic Bonnelle practice biodynamic

viticulture, use no pesticides or herbicides in the vineyard and no nasty additives in

the winemaking process including no sulphur being added. The grapes are

fermented using only the naturally occurring yeasts.

The typical grape varieties of Buzet are Cabernet Sauvignon, Merlot and Cabernet

Franc - grape varieties that it shares with Bordeaux. There is also Sauvignon Blanc

for the special white wines that are produced here.

It is quite large by biodynamic standard with 17 hectares given over to vines. The

soils are gravels, limestone and clay and the yields are very low being in the range

10-25 hectolitres per hectare.

They encourage natural predators in the vineyard and that is why the labels

(designed by their young daughters) feature the ladybird.

Bainbridge and Cathcart

Vin de France

Bainbridge and Cathcart is the domaine of Toby and Julie Bainbridge who have

acquired some very old vineyards near the village of Chavagnes-les-Eaux which

lies approximately thirty kilometres south of the city of Angers. They began their

operations in 2007.

Toby has worked for seven years for Agnes and Rene Mosse who live in the same

area.

The vineyards are situated between the villages of Faye D'Anjou and Chavagnes les

Eaux and consist of Chenin Blanc, Cabernet Franc and Groslot (Grolleau) Noir. The

The wines are fresh, lively and gulpable – designed to drink now rather than to be

cellared. They are bottled in clear Champagne bottles so that the colour of the

wine is highlighted. They are also capped with crown seals to avoid the possibility

of cork taint.
