Hello, and welcome to the webinar class titled Living a Gluten-Free Life. I am Joanne Slyter, Dietitian and owner of Slyter Nutrition Consulting Services. I hope you will find the presentation very informative in providing answer to questions you most likely have at this stage after sitting down with your doctor about the results of your lab work. In this class my goal is to provide you an understanding of celiac disease, nutritional concerns with celiac disease, what is a gluten-free diet, and how to successfully live a gluten-free life. What do we know about celiac disease?Click It is a chronic autoimmune intestinal disorder in which the bodys immune system wrongly attacks part of the gastrointestinal tractClick It can develop at any age. When genetically susceptible individuals consume specific proteins in the grains wheat, rye and barley, which are collectively known as gluten, the absorptive surface of the small intestine is damaged.4
