The Bianco is complex with an oxidative quality that blankets layers of minerals, nuttiness and acidity & a dry palate with flavors of apple pie, toasted pecans, honey, and citrus. The Ruscum is fermented on the lees longer than the basic Bianco and is more complex and extracted. This is an intriguing and beautifully peculiar wine bursting with notes of orange rind, saffron, cherry, dried mango, and Crenshaw melon with a firm mineral backbone & spritely acidity. Ribolla Gialla, Gravner, Friuli-Venezia Giulia 2007 130 N* -From Josko Gravner, the visionary maverick “King of Friulian Wines”, this wine is probably on every wine geek’s bucket list. The grapes are fermented in Georgian amphorae buried underground for long maceration with wild yeasts and no temperature control. After fermentation the wine rests in amphorae for five more months and then it is aged in large oak barrels for an additional six years and bottled without fining or filtering.
