Lobster with shell reduction and asparagus

Pork two ways Belly pork (cooked in water, star anise, fennel seeds and cloves for 3 hours, rested for 6 hours and refried in butter), pan fried pork fillet, roast parsnip, celeriac mash, carrot puree, green beans and reduced pork stock.

Pan fried salmon on crushed new potatoes, pea shoot puree, hollandaise sauce, pea shoots and baby salad

Roast rack of lamb with herb crust, lamb sausage, and lamb fillet, crushed potatoes, asparagus, honey shallot and peas shoots with a carrot and passion fruit reduction

Chicken stuffed with mozzarella and garlic wrapped in bacon, cabbage sheets, pickled carrots, carrot cones, carrot crisp, thrice fried chips, mash and a cheese sauce.

Milk poached smoked haddock, curry infused rice, poached egg yoke, green beans and a black pudding crumb.

Lamb mince curry, tandoori chicken, fresh raita (tomato and cucumber in sour cream, nann breads and poached egg yolk.

Surf & Turf - T bones steak, chilli king prawns and curried king scallops and peas

Pheasant 3 ways - A pie, sauted and slow braised with garlic mash and pea puree

Chateaubriand (Fillet beef), fondant potato, asparagus, carrot and beef reduction

Pan-fried pheasant breast, confit partridge legs, roast potatoes, honey carrots, cranberry gel with pheasant partridge and wine stock reduction.

Partridge with 12 hours cured belly pork, carrots and fondant potato and seasonal winter veg

Steak baguette with home made chips

Pan fried duck breast, roasted leg, red wine reduction, fondant potato and horseradish mash

Salmon in teriyaki, fish sauce and soy sauce oil, prawn hollandaise, crushed potatoes and chilli peas

Crab pie, buttered cod, lemon butter reduction and sprout flowers

Roast pigeon, mash topped off with a flambed breast

Curried minced stuffed into a marrow and baked, turmeric and cayenne pepper roast potatoes, turmeric rice and fresh melon

Bacon chop, aired in salt & pepper, basked in butter with marrowfat peas, garlic and chilli oil
