Theres never been a better time

    to switch to an all-vegetarian,

    vegan diet ree o animal

    products. Going vegan gets easier

every day as more and more peopleseek healthy, delicious vegan oods and

    restaurant dishes. Demand or vegan

meals ree o dairy, meat and eggs is

growing so ast that Morningstar Farms,

    a Kellogg company, recently announced

even more new vegan products or our

    customers, adding to the companys

    already popular supermarket avorites

    like Grillers Recipe Crumbles, Veggie

    Steak Strips and Chikn Strips.

    With todays culinary creativity and

    technology, we can enjoy delicious

    animal-ree textures and avors without

    worrying about the cholesterol, diabetes,

and other health issues linked to animal-

    based diets.

    Why Choose Vegan?

As the human population grows, ood-

    saety and environmental problems

grow, and animals raised or ood get

treated worse. They suer more cruelly, grow sicker and pass their sickness on

to us. Current trends warn that global

production o meat, dairy and eggs

could double by 2050. However, we can

    reverse these trends.

ANew York Timesarticle urges thatconcern or deorestation, pollution, climate change, starvation, heart disease

and animal cruelty calls or a stronger

    public relations campaign in the

    reduction o meat consumption one

    like that around cigarettes emphasizing

personal health, compassion or animals, and doing good or the poor and the

    planet (Bittman).

    Vegan ood is not only conscientious;

its also delicious. A writer in ThePhiladelphia Inquirerraved that todays

vegan cuisine combines culinarysophistication, patient crat, and lovingly

nuanced avor to savor and celebrate

    (Nichols).

    The Environment

In 2007, the University o Chicago

reported that eeding animals to eed

humans requires growing 10 times as

many crops as are needed to providepasta and other nutritious plant-based

oods. The United Nations reports that

    animal agriculture consumes 70 percent

o all agricultural land and 30 percent

o the total land surace o the earth.

Raising animals or ood is a leading

cause o deorestation, carbon dioxide, methane and nitrous oxide emissions

    the toxic greenhouse gases responsible

    or global warming (Steineld).

    Though some 800

million people on theplanet now suer romhunger or malnutrition, the majority o cornand soy grown in theworld eeds cattle, pigsand chickens. MarkBittman, The New YorkTimes, January 27, 2008

Treatment of Animals Raised for Food

The most appalling thing we witnessedwas a broiler acility that produceschickens or eating. We went in and it

was totally dark, just three to our dimlightbulbs. . . . [T]he dust and ammoniasmells were overwhelming. RobertMartin, executive director o the Pew

    Commission on

    Industrial Farm Animal

    Production, 2008.

    Animals raised or ood

    are treated horribly

    and they are very

    unhealthy. Chickens,

    turkeys and ducks are

    crammed inside flthy,

dark buildings loadedwith bacteria, bird u

    viruses, toxic unguses,

and poisonous gases that burn their

eyes, their skin and their lungs. With no

resh air, sunshine, or normal activities,

    these birds develop painul skeletal

    deormities, sot watery muscles, stress

    hormones and heart disease.

    Chickens and turkeys go to

slaughter with rotting livers (necroticenteritis), wing rot, pus-flled lungs

    (airsacculitis), and ammonia-burned

    skin. Rotting intestines and ulcerated

    esh are removed at the

    slaughterhouse, and

    corpses are drenched

in chlorinated water toconceal the sickness and

    injuries being sold to

    consumers.

    Ducks develop painul

    eye inections rom lack

o water to wash theireyes in. Animal scientist

    Dr. John Webster calls

the treatment o chickens, turkeys, and

ducks, in both magnitude and severity,

    the single most severe, systematic

example o mans inhumanity to another

    sentient animal.

We changed our diet. Wejust couldnt look at a piece o

meat anymore without seeingthe sad, tortured ace thatwas attached to it some timein the past. Former Tysonchicken slaughterhouse

    Free-Range, Cage-Free, Humane Farming

One o the most destructive things we

can do or the animals is to lie to ourselvesor allow ourselves to be ooled andmisinormed into believing that animalagriculture o any kind is humane.www.PeaceulPrairie.org

Terms like ree range, cage ree,

humane and organic meat maysound reassuring, but the reality behind

the scenes is totally dierent. Nearly

all hens used or cage-ree eggs are

painully debeaked at the hatchery, and

the baby male chicks are destroyed at

birth since they dont lay eggs. The U.S.

government does not regulate the termcage-ree or defne its meaning. Free-

    range turkeys are violently milked

and inseminated by hand, as are all

turkeys raised or meat. Baby cows and

pigs are torn rom their mothers, and

newborn chickens, turkeys and ducksare denied the comort and protection

    o a mother hens wings.

All animals raised or ood ree-

    range included are slaughtered,

trashed, or trucked to live animal

markets and rendering companieswhen their moneymaking lie is over.

Farmers do not keep useless animals,

any more than stores stock shelves

with items they cant sell. The idea

that millions and billions o humans

    can have humanely-raised animals

is alse. Costly cage-ree eggs mayactuallyberom battery-caged hens, ascam uncovered in the United States

    and Australia (Singer & Mason, 110;

    Dowling).

    Live Bird Markets

Live bird markets spread avian infuenzaand other diseases in the U.S. andthroughout the world. In Asia, these

disease-ridden shops are called wetmarkets. Each year, New York and NewJersey markets alone sell more than 80million chickens and other birds brought

in rom places no one keeps track o. Manyo these birds are visibly sick and dyingas can be seen in Inside a Live Poultry

Market, a video o a typical New YorkCity market produced by United PoultryConcerns.

    What About Fish?

Fish are intelligent creatures witheelings. When pulled rom the water,

they suocate in panic and pain, the

same as humans and other land animals

    do when drowning. Being hooked

in the mouth is torture to

    a fsh. The belie that

fsh dont eel has beentotally discredited. As

    stated by Cambridge

    University scientist, Dr. Donald

Broom, The scientic literature isquite clear. Anatomically, physiologicallyand biologically, the pain system in sh

is virtually the same as in birds andmammals. www.fshinghurts.com.Fish are increasingly raised in huge

actory arm aquariums as a result o

    human overpopulation and water

    pollution. Theyre subjected

    to genetic engineering,

orced rapid growth, drugs, and diseases o

    confnement, making

    them, in the most ultimately

    gruesome sense, chickens o the

sea (Karen Davis, Prisoned Chickens,Poisoned Eggs, Chapter 6).

The Bad News about a Diet of Animal Products

According to the U.S. Departmento Agriculture, the major oodbornemicroorganisms that make peoplesick and can even kill them viruses, bacteria, parasites, and ungi occurmainly in meat, poultry, seaood, dairyproducts and eggs (Buzby & Roberts).

Foodborne bacteria such as E. coli,Salmonella, Campylobacter, Shigella,Yersinia, and Listeria in poultry, eggs andother animal products can migrate rompeoples intestines to other body partsar removed rom the site o inection blood, bones, nerves, organs, and joints

to cause chronic illnesses later in lie, such as arthritis.

Arsenic (roxarsone) is ed to armed

o arsenic are ed to 70 percent or more

The Good News about a Healthy Vegan Diet

Diabetes Care, a journal othe American Diabetes

    Association, reports that

    a healthy vegan diet

    can reverse diabetessymptoms. Participants in

    a recent study lowered their

    cholesterol more and

    ended up with better

    kidney unction (Fox).

    Jennier K. Reilly,R.D., senior

    nutritionist at The

    Cancer Project in Washington, DC,

    cites a ast-growing body o research

    that supports a low-at, plant-based diet

as one o the keys to preventing cancer.

Healthy vegan oods can help preventcancer and tumor recurrence.

    Famed che and cookbook

    author, Robin Robertson,

    says in her cookbook

    Vegan Planet, By

eliminating eggs anddairy, you can have

    a diet that is

    cholesterol-ree

    and lower in

    saturated at,

    while at the same

    time reducing

    your intake o antibiotics, hormones,

    and other man-made additives that

are ound in many o these oods.

Rabbi Stephen Fuchs, oCongregation Beth Israel in West

    Hartold, Connecticut, told

    a reporter: I ound there

was a real health beneft to

a vegan liestyle. I have seen

    a decrease in headaches,

weight loss generallyeeling better all around.

    And I have been eeling

more spiritually attuned as a vegan

    (Dresner).

Hip hop mogul Russell Simmons told

CNN why he ollows a vegan diet: Tocause less harm to the environment and

to animals. And I eel better. My riends

report to me over the last 15 years I look

better and have more clarity. I think

all o us want to be more clear, want

to look younger, want to eel better,

and want to be a greatercontributor to good on the

    planet.

    And civil rights icon

    and comedian,

    Dick Gregory,

    explained years

Your path to being a vegan started whenyou cut out milk in 1999. And that wasdue to an allergy?

I would always get these inner earinections and never knew what theproblem was. . . . I did some researchand ound out that milk allergies cancause those problems, so I cut out alldairy products and I havent had a single

    problem since.

What made you decide to stop eatingmeat?

When I was 16, I cut out bee and pork.I just got to the point where I wanted to

minimize my intake o animal products.I knew about actory arming and thetheories that meat wasnt sae, but Isubscribed to the theory that, i you weredoing something athletic, you needed to

have [animal] protein, so I kept eatingchicken and sh. But then in 2004, I gotto the point where I was sick o eatingchicken. It started grossing me out or somereason. I was about a month out rom a

    Protein

All plants have protein. A varied diet o

beans, lentils, nuts, grains, chickpeas, ruits and vegetables has all the essential

    amino acids (proteins) people need

to be healthy and active. The average

American diet o meat, dairy & eggs

has too much protein. Excess protein

    spawns kidney disease, kidney stones,

osteoporosis and obesity. Excess proteinturns to at and causes people to lose

    calcium through their urine, increasing

    the risk o osteoporosis.

    Calcium

Calcium is a mineral in the soil obtained

rom plants. Leay greens, grains, nuts, legumes and ruits all have calcium.

    Calcium-ortifed orange juice alone

provides all the necessary calcium, plus

Vitamin C. Cows milk, by contrast,

is high in cholesterol and allergenic

proteins and may contain pus rom

inected cows udders. Dairy milk islinked to juvenile-onset diabetes and

    prevents many school children rom

doing their best due to the bloatingand cramps caused by indigestible dairy

proteins. Cows milk is a leading cause

    o respiratory inections, including

earaches, in children. Most o the

    worlds population cant even digest

    cows milk, yet Americans despite

heavy milk and cheese consumption have among the highest rates o

    osteoporosis in the world.

Instead o dairy milk, look or the many

brands and avors o soymilk, rice milk and

almond milk now available in virtually all

supermarkets. A bestseller is Silk and Silk coee

    Eggs

About 70 percent o the calories in

eggs are rom at, much o it saturated

at. Eggs are also ull o cholesterol

about 213 milligrams per egg. Eggs

are a leading cause oSalmonella oodpoisoning. So harsh have arming

practices become that Salmonellaenteritidisbacteria have actually

    migrated rom hens intestines, their

natural habitat, to hens ovaries where

eggs are ormed. Shoppers should also

know that the replacement o whole

eggs with egg whites actually doubles

the number o eggs used, increasing the

    number o hens in captivity.

Instead o eggs, add a little extra vegetable

oil or ruit puree. Tou can be scrambled likeeggs in an oiled skillet and used instead o eggs

in many recipes. Also, look or egg replacers

like ENER-G Egg Replacer, which comes in

a powdered orm in an easily stored box. For

uy egg-white textures, blend 1 tablespoon

ax seeds + 1 cup water or 1 egg in your

blender, until the mixture is thick and has theconsistency o a beaten egg white.

    Cholesterol

Occurs ONLY in animals and animal products.

    Vitamin B12

    This vitamin is ound

    in traditional vegetarian

    Asian oods like miso and

tempeh. While vitamin B12defciency is rare, a vegan

    diet should include this

    vitamin. Many commercial

    cereals and soy products are

    ortifed with vitamin B12.

    For instance, Bolthouse

    Farms Perectly Protein Vanilla

Chai Tea with Soy Protein, sold

in grocery stores, is a deliciously

rereshing and nutritiousdrink ortifed with vitamin

    B12. In addition, vitamin B12

    supplements are available in

    tablet orm wherever health

    products are sold.

    Quick Glossary

    Vegan: People who choose animal-ree

oods are vegans. Vegan oods are ree o

    animal products including poultry, red

    meat, dairy, eggs, and fsh.

    Nutritional Yeast: Flavorul golden

akes or powder give a delicious cheesy

taste and texture to gravies, sauces,

    casseroles, and salad dressings. Sprinkle

on pasta and soups like parmesan,

use or breading, whip with veganbuttery spread or vegetable oil in

mashed potatoes, and add to stir-ries.

    Nutritional yeast is non-leavening and

    does not cause yeast inections.

Seitan: High protein ood made o

wheat gluten with a meat-like texture.

Seitan is sold in many ood stores in

    oven-ready and ready-to-eat orms, and

is the grilled, baked, and sizzling meat

in many vegetarian entrees. Like stir-

    ried shitake mushrooms and grilled

    Portobello mushrooms, seitan makes

giving up meat a loteasier that you think.

    Tempeh: High-

    protein, somewhat

    meat-like ood with

    cubed or thinly sliced

    in stir-ries.

    Tou: This versatile soybean product

and meat replacement can be breaded, marinated, stir-ried, and baked in

many dierent ways. A good source

o protein and calcium, tou (also

called bean curd) absorbs the avors

o sauces and spices. It can be ound
