Ingredients

500g lamb mince1 onion, grated1 clove garlic, crushed1 teaspoon ground cumin1/4 cup fl at-leaf parsley, fi nely chopped1 egg8 small panini rollsCracked pepperLettuce leavesSliced tomatoAioli or Mayonnaise

Method

Combine the mince, onion, garlic, cumin, parsley and egg. Stir and season with salt and pepper. Shape into 8 small rissoles.

Heat a chargrill or frying pan on high and spray with oil. Cook patties for 2-3 mins each side, or until cooked through.

Cut panini rolls in half and lightly toast both sides under a griller.

Top the base of each roll with lettuce, tomato, lamb patty and aioli or mayonnaise. Season with cracked pepper. To hold toppings in place skewer with a toothpick.
