RAYS-HELIOS SCHOLARSIn their second year of partnership, the Rays Baseball Founda-tion and Helios Education Foundation honored 100 Rays-Helios Scholars on Aug. 29 at Tropicana Field. During the implementation of the scholarship, the Rays Baseball Foundation and Helios Edu-cation Foundation made a million-dollar pledge to “Take Stock in Children” in Hillsborough, Manatee, Pasco, Pinellas and Sarasota counties. “Doubling Up for Education” is a unique program that gives students the fi nancial resources and mentor support they need in order to successfully achieve a postsecondary education at any publicly funded university in the state of Florida.

LEAVE IT TO Manager Joe Maddon and close friend Michael Stewart to find a Southern California pizza chef from Sarasota for their South Tampa restaurant, which opens in October. For Maddon and Stewart, the free-agent signing of chef Joshua Hernandez is one of the many reasons Ava, their Italian-inspired restaurant, promises a unique dining experience.

Hernandez says the menu will emphasize simple, fresh, ingredient-centric dishes that are not about hitting someone over the head with cheese or cream. “It’s about letting the tomatoes speak,” Hernandez says. “�ere won’t be a lot of fuss about tall, com-posed food. It’s going to be rustic. �e spirit of this

food is that you use a couple of ingredients, but they’re always the best.”

�at approach was important to Stewart, owner of one of Tampa’s most popular eateries, 717 SOUTH. He and Maddon have been friends since 2006 and share a passion for food, wine and adventure that led to their collaboration.

“Ava is Michael’s creation,” Maddon explains, adding, “He ate, slept and breathed this entire proj-ect. His thoughts are so complete regarding what he wants and how he gets it.”

For Stewart, that meant traveling to Los An-geles, New Orleans, Chicago, New York, Austin,

Atlanta and Miami with a team looking for anything they could repurpose with the right style.

“No different than sending Rocco Baldelli out on a scouting trip,” Maddon reasons.

The results of Stewart’s search are evident throughout the restaurant, which is named for his 7-year-old daughter. �e food prep table was found in Verona, Italy — home of Romeo and Juliet, as Mad-don is quick to point out. A 200-year-old butcher block from Edwards Air Force Base in Pensacola stands next to the floor-to-ceiling wine rack, which houses a 1,000-bottle collection. And the tile in the kitchen was discovered by Stewart and Maddon on

a trip to Boston, when the Rays took two of three games from the defending World Champions. Even the scaffolding used to build the restaurant has been repurposed and is now part of the roof.

�en there is the oven, transported from Naples (not the one down I-75). �is 6,000-pound beast fires at 1,000 degrees and cooks pizza quicker than a David Ortiz trip around the bases.

As with all things Maddon, there will also be music. Diners will be asked to join in a sing-along of “�at’s Amore” on Wednesdays.

Different, for sure. �e Rays manager wouldn’t have it any other way.
