La Rulles La Grande La Grande, first brewed to celebrate the brewery’s 10th anniversary, is a hybrid of two Belgian beer styles: Triple and Saison. The main flavor derives from the esters of the yeast. It is like a strong triple, the alco- hol is hidden but you can taste it. 100% Pilsen malt is used, along with water from the Rulles forest. Warrior hops are added, and a bit of Simcoe hops. White candi sugar is added for secondary fermen- tation. La Grande has a burnt orange color, with a dense lacy head. The nose is light, honeyed, and slightly spicey so as not to have big hoppy aromas like the Estivale. Flavors are of sweet malt, apple, orange peel, and black pepper. Bitterness is strong. The finish is dry & warming. Finally, another goal was to produce a beer that ages well. To obtain a good beer for aging (if you don’t use Brettanomyces yeast), you need high alcohol content and you have to avoid too much volatile flavors (like some hop flavors for example). Brewed with American west coast hops and the special yeast created by Orval Trappiste brewery, it marries the flavors of two different worlds. La Rulles Triple is brewed with Pilsner malt, as well as Warrior and Amarillo hops from the Yakima valley in Washington state. The beer is then fermented with Orval’s top fermenting triple yeast. This rare yeast lends the ale a more complex character. Secondary fermentation is done in bottle with dark candy sugar. Fermentation: Primary fermentation: Between 10 to 12 days. With a few brews, he went from being completely unknown to international fame. 2003: to satisfy demand, a storage hall was con- structed next to the brewery. 2006: new facilities were added to the lobby, the original installation reaching its production limit. Improvements were added: a dedicated filter tank, open fermenters, and a bottling machine.

La Rulles EstivaleLa Rulles summer specialty Estivale is a Belgian blonde ale with a strong hoppy character. This beer was first created to celebrate the brewery’s 5th anniversary in 2005. This beer uses the same American West Coast hops from Washington state as the La Rulles Triple, Warrior and Amarillo. Estivale has a lower gravity (5.2% alcohol) and less sweetness. Top fermenting yeast from Orval Trappiste Brewery add to the complex flavor. It’s meant to be drunk cold to refresh you during the hot spring and summer months.

The beer’s name, Estivale, is “summer” in French.

La Rulles Cuvée Meilleurs VoeuxLa Rulles Brewery’s Christmas brew is a spicy, roasty Belgian brown. Like La Rulles Brewery’s other beers, it uses only American West Coast hops, and yeast from Orval Trappiste brewery. Big hop flavors of citrus and spice compete with dark roasted malt to temper the sweet-ness of this big bodied beer. No spices are added to the beer, all the flavor comes from the traditional elements of hops, malt, yeast, and dark candy sugar.

The name, Meilleurs Voeux, means “best wishes” in French.
