3 cups mixed organic baby salad greens

2 lbs organic asparagus, snapped in half

1/4 cup Monari Aged Balsamic Vinegar

2 cloves organic garlic, minced

1/2 cup ZOE Extra Virgin Olive Oil

1/3 cup organic scallions, minced (reserving some stalks for ties)

1/4 cup organic lemon juice

2 tsp Dijon mustard

2-3 tbsp chopped organic parsley

1 cup shredded Meadowkaas Spring Gouda

1 cup pitted cherries

Salt and pepper to taste

DIRECTIONS:• Prepare dressing by combining garlic, scallions, Dijon mustard, lemon juice, olive oil, balsamic vinegar and salt and pepper to taste. • Brush some dressing onto asparagus and grill 2-3 minutes. At the same time, brush the reserved scallion stalks with olive oil and grill with a piece of tin foil for support (keep in mind, these stalks can be fragile when tying so you may want to grill a few extra strips). • In a large bowl, toss salad greens, shredded Gouda, pitted cherries and parsley with remaining dressing. • Lay out a scallion stalk horizontally and soldier asparagus vertically on top (be sure to leave enough room to tie). • Place a small amount of the salad mixture in the center of the asparagus and roll up tower. • Secure by making a knot with your scallion. • Use a sharp knife to even out the bottoms of asparagus and stand tower upright to serve.

DIRECTIONS: Preheat grill on high. Season chicken breast

with olive oil, salt and pepper. Place chicken

on the grill and spray with marinade. Turn

and spray every 3-4 minutes until the internal

temperature reaches 165 degrees. Keep warm.

serve with tortilla chips.

Fresh Ginger

1 1/2 lb Kobe ground beef

Jane’s Crazy Mixed Up Steakhouse Seasoning, to taste

1 tbsp Tonton Kobe BBQ Sauce

1 tsp Dijon mustard

4 large organic romaine lettuce leaves

Asian slaw: 1 cup shredded cabbage

1/4 cup shredded organic carrots

3 tbsp organic cilantro leaves

1 shallot minced

Salt and pepper

1/4 cup olive oil

3 tbsp lime juice

1 tbsp minced lemongrass

1” piece fresh ginger, grated

1/4 tsp minced red chili pepper

DIRECTIONS: Preheat grill on medium. Toss cabbage, carrots,

cilantro leaves, minced lemongrass, ginger and

chili pepper with olive oil and lime juice, season

with salt and pepper. Gently form the Kobe

ground beef into four patties. Brush each side

with Dijon mustard and season with steakhouse

seasoning. Keep chilled until ready to cook.

Add the burgers to the grill and cook for 6-7

minutes, turning once or twice, for medium rare.

Continue cooking to desired degree of doneness.

Place each burger on a leaf of lettuce and top

with the Kobe BBQ sauce and the Asian slaw.

surf’s upTIP: Timing is everything for perfectly grilled seafood. Be sure to place the lobsters meat side down for 4 to 5 minutes until light grill marks show. Then flip the lobster tails to shell side down. The meat will become opaque and you should get just a touch of browning from the heat.

3 North Atlantic lobster tails, split in half

4 cloves organic garlic, roasted

1 cup mayonnaise

1 tsp Musette Dijon Mustard

2-3 tbsp fresh organic lemon juice

2 tbsp chopped fresh organic thyme

2 anchovies, minced

4-6 drops Tabasco

Salt and pepper, to taste

1/4 cup Columela Olive Oil

1/4 tsp hot red pepper flakes

1/2 tsp chopped fresh organic Italian parsley

DIRECTIONS: Preheat the grill on high. Combine the olive oil,

salt, pepper, chopped parsley and hot pepper

flakes. Marinate the split lobster tails in this

mixture. Prepare the garlic aioli by puréeing

the mayonnaise, Dijon mustard, lemon juice,

minced roasted garlic, chopped thyme, minced

anchovies, and Tabasco in a food processor.

Adjust seasonings with salt and pepper, then

set aside. Grill the lobster tails on all sides until

cooked through. Place the grilled lobster tails on

a platter and serve with the roasted garlic aioli.

8 oz gorgonzola cheese, crumbled

1 lb flank steak, grilled & sliced thin

1 container organic grape tomatoes

1/4 cup olive oil

2 tbsp balsamic vinegar

Kosher salt & freshly ground black pepper

1 tsp thyme leaves, finely minced

1 tsp garlic, mashed

1 package of Waterthins Fine Wafer Crackers

Fresh basil leaves, garnish

DIRECTIONS:Preheat grill to medium. Toss the tomatoes with

the 3 tbsp olive oil, salt, pepper and thyme. Place

the tomatoes on foil and roast on the grill for the

8-10 minutes, or until the tomatoes begin to soften

and release their juices. Remove from the grill

and allow to cool for 5 minutes. Transfer to a food

processor adding in garlic, herbs and vinegar.

Process until smooth. Adjust seasoning with salt

and pepper. Top Waterthins Crackers with grilled

thinly sliced beef tenderloin topped with crumbled

Gorgonzola cheese, and finished by drizzling with

balsamic tomato mixture. Garnish with fresh basil.
