The Kendal System Statement on Sustainability…

• Visit www.kendal.org. Click on “About” / Sustainability / on the Home Page.• Sustainability Mission Statement.• Spring 2009 – The Kendal System Sustainability Workgroup was formed.• Workgroup was comprised of Board Members, Residents and Staff.• Set in motion thirteen sustainability initiatives to have been worked on.• Implementation target dates of three to five years.• Several of those initiatives directly relate to Dining Services. Specifically : • Establishing and maintaining a recycling program.• Purchasing only “Energy Star” rated appliances.• Establishing a “food philosophy” which includes incorporating local foods.

Recycling Efforts in Dining ServicesWeekly Statistics ( *Crosslands Only )

• Approximately 175 large steel and aluminum cans ( 9,100 annually ).• Upwards of 300 large cardboard boxes ( 15,600 annually ).• Nearly 100 pounds of fryer oil – converted to bio-fuels ( 5,200 lbs.

annually).• Approximately 150 plastic tea / juice bottles through Café ( 7,800

annually).• Countless pounds of office scrap paper and junk mail.

Waste Oil

• Waste Oil Recyclers in Modena, Pennsylvania.• www.wasteoilrecyclers.com.• Benefits of recycling waste oil include conversion to bio-diesel

to fuel vehicles and machinery, greenhouse gas reduction of carbon monoxide, elimination of sulfur emissions which are linked with allergies and asthma and reduction of particulate matter.

Sustainability Initiatives• Styrofoam reduction with regard to service products through our Café /

Coffee Shop.• Successful implementation of “reusable” take-out containers.• We offer “reusable” green grocery bags for sale through our Café / Coffee

Shop.• Local sourcing of food products when available and where practical.• Hosting fresh produce sales, featuring local products when available, in

the Spring / Summer months.• Environmentally responsible purchasing practices – ie. utilizing the

Monterey Bay Aquarium list when purchasing seafood. • Making a conscious effort to purchase Energy Star rated commercial

equipment when capital replacement is necessary.• Sponsoring Earth Day events, sustainability dinners, “meet and greets”

with local Farmers and Artisans. • 4

Return Those Containers !

• Drop off points just outside of the Main Dining Room and Café.

• Containers are collected, washed and sanitized for use through the Café / Coffee Shop.

• Helps minimize cost and offset material disposal into a landfill.

Local Sourcing• Kendal affiliate definition of a local

vendor – within 100 mile radius of each community.

• Our list of local vendors includes Wawa Dairies – Wawa, Pa., American Beauty Produce in West Chester, Pa. ( purchase from the Lancaster and Philadelphia markets ), and E. Frank Hopkins Seafood Co. in Philadelphia amongst others.

• When possible, we will purchase and pick-up products from local vendors and Farmers, ie. corn, apples, etc. at Barnard’s Orchards in Unionville.

ENERGY CONSERVATION

• Energy Star (trademarked ENERGY STAR) is an international standard for energy efficient consumer products originated in the United States of America. It was created in 1992 by the Environmental Protection Agency and the Department of Energy.[2][3] Since then, Australia, Canada, Japan, New Zealand, Taiwan and the European Union have adopted the program. Devices carrying the Energy Star service mark, such as computer products and peripherals, kitchen appliances, buildings and other products, generally use 20–30% less energy than required by federal standards.[4] In the United States, the Energy Star label is also shown on EnergyGuide appliance label of qualifying products.

Energy Efficiency• We strive to purchase commercially rated “Energy Star” equipment when

capital replacement becomes necessary. • Crosslands Dining Service alone has 24 pieces of commercial cooking /

food processing and production equipment that is “Energy Star” rated.• Our Maintenance Department has made a concerted effort to switch out

light bulbs in Dining areas to LED’S and CFL’S.• Additionally, the Andover automated HVAC system controls conditioned

air and heat to allow it to come on and go off just before and after meal periods.

What’s Next for Dining Services ?• Elimination of styrofoam cups in Café / Coffee Shop.• Continued exploration into the possibility of Composting. Feasibility

study soon to be conducted in partnership with Waste Management on our campuses to transport food scrap materials to composting sites instead of landfills.

• Continued education for our residents / guests through education, signage and various other materials.

• Potential use of more “green” chemicals.
