    Chef De Partie ChineseJob Objectives

    Room service and buffet food consistency & quality. Daily check of all Mis-en-place to ensure freshness & quality standard. Assign and follow – up tasks

    as dictated by business volumes. Promote and ensure proper health and safety at all time. Strive to maintain & improve all food preparations &

    presentations with innovative presentations, specializing in Chinese cuisine, dim sum, BBQ and wok preparations in traditional Chinese style.

    Must be able to speak mandarin, Cantonese and English

    Job Requirement:

    1. To follow proper grooming procedures.

    2. To run the day to day operations of the breakfast operations and Asian stations in the market kitchen.

    3. To understand the stock holding needs.

    4. To ensure that mise-en-place is prepared for the shifts needs.

    5. To ensure that sanitation standards as set forth by Dusit and local authorities are in compliance as well as the cleanliness and neat ness of the

    kitchen.

    6. To assist in maintenance and cleanliness of all food preparation equipment.

    7. To ensure a safe working environment for work.

    8. To follow control systems this will ensure quality and portion consistency.

    9. To store items properly at the end of the shift.

    10. To ensure clean, neat and organized work area.

    11. To ensure the food cost for the outlet kitchen is at a minimum by adhering to standards and minimalizing waste.

    12. To handle and report any accident immediately, no matter how minor.

    13. To respond properly in any hotel emergency or safety situation.

    14. To perform other tasks or projects as assigned by hotel management and staff.

    Job Requirement

    1. At least 2 years of Chef de Partie experience in a 5 star hotel

    2. Have a strong working knowledge of Asian Cuisine

    3. Production of dim sum and innovative buffet set ups  As of 07 July 015 

    4. Strong understanding of HACCP

    5. Proven track record of cost control including food, equipment’s, labor and waste to meet the food quality goals and the hotel’s financial goals. 

    6. Demonstrate real passion for menu planning and leadership, giving guidance to junior chefs
