Welcome back to another season of great food and spinning taste buds. I am sure everyone has aresolution to eat healthier and to lose those holiday pounds, so we are going to try and help. January weare going to change the traditional Caesar salad and sprout it up with a Brussel Sprout Caesar Salad. Thisflavorful salad takes shredded Brussel Sprouts, lightly warmed and tossed with diced bacon, diced chicken,crushed croutons and a classic Caesar dressing. The combination of warm Brussel Sprouts with creamydressing make it delicious and let’s not forget the bacon. Sorry resolutions, but there is always next year.February brings some cooler weather with spring in the horizon and strawberries in the fields. We aregoing to sear delicious seas scallops and top them with a strawberry salsa that will make your head spin. The combination of buttery scallops with the sweet and savory salsa really go great together withchardonnay. To bring in the Irish heritage in March we are going to do a traditional dish called DublinCoddle. This dish combines sausage, vegetables and potatoes, so a stew meets casserole. It will look andtaste incredible and of course we will have a stout beer to go along for the ride. With spring in the airthere is no better time to use some fresh rhubarb. An almond rhubarb coffee cake with a hot cup of joe toset you right in the middle of the day. A sweet treat to pick you up and set you down gently. I hope to seeyou all for a wonderful time and good eats that will surely spin your taste buds.

Carly will provideindividualized assistance to ensure everyone receives the maximum benefit. Mornings have never felt sogood!

While an interest in candles seems to be more common amongst ladies than gentlemen in our modernage, the making of candles itself is a rather masculine skill that traces back thousands of years. Especiallyin medieval times, the trade of chandlery (candle making) was vitally important to kingdoms and villages.Light was obviously a necessity, and that light came from wax or tallow (animal fat) candles. Businesses,homes, parishes, etc. all relied on chandlers, making it a rather lucrative profession for the medievalcraftsman. Today, while candles aren’t a practical necessity, they can add a masculine or romanticambiance (depending on what you’re going for) to any room and can truly be very meditative andthought-provoking. Join me in learning how to create a candle. In this class, we will be making candlesthat look like martinis, complete with a garnish!

Welcome back to another season of great food and spinning taste buds. I am sure everyone has aresolution to eat healthier and to lose those holiday pounds, so we are going to try and help. January weare going to change the traditional Caesar salad and sprout it up with a Brussel Sprout Caesar Salad. Thisflavorful salad takes shredded Brussel Sprouts, lightly warmed and tossed with diced bacon, diced chicken,crushed croutons and a classic Caesar dressing. The combination of warm Brussel Sprouts with creamydressing make it delicious and let’s not forget the bacon. Sorry resolutions, but there is always next year.February brings some cooler weather with spring in the horizon and strawberries in the fields. We aregoing to sear delicious seas scallops and top them with a strawberry salsa that will make your head spin. The combination of buttery scallops with the sweet and savory salsa really go great together withchardonnay. To bring in the Irish heritage in March we are going to do a traditional dish called DublinCoddle. This dish combines sausage, vegetables and potatoes, so a stew meets casserole. It will look andtaste incredible and of course we will have a stout beer to go along for the ride. With spring in the airthere is no better time to use some fresh rhubarb. An almond rhubarb coffee cake with a hot cup of joe toset you right in the middle of the day. A sweet treat to pick you up and set you down gently. I hope to seeyou all for a wonderful time and good eats that will surely spin your taste buds.

Ray Auclair Basics of Drawing with Ray,Landscape Painting with Ray

Ray's passion has always been art and music. In 1971, after being discharged from the military,Ray started air brushing custom cars and vans with murals and other select items. Soon after that,he started attending state and county fairs and other public events, air brushing T-Shirts. Since the 90’she has been doing acrylic pet portraits and pencil people portraits. To date, he has portraits in about 30states and 5 in Great Britain. Ray's other passion is playing the piano. He began taking lessons at the age of 9. By age 14 he wanted tolearn more theory. Mom agreed as long as he would show her how to play “her music” (1920’s, 30’s and40’s) Well, long story short, she is the reason he learned songs way back into the late 1800’s.At age 17 Ray played his first professional gig, at the Mahaffey theater in St. Petersburg, FL and received astanding ovation. Ray was hooked, and found another passion. He started playing at St. Pete andClearwater resort motels through the 90’s. In 1995 he was invited to Emerald Records in Nashville, TN tocompete with 100 other bands. He had a country trio at that time, “Ray Auclair and the CountryGentlemen”. They won the top “Southern Band” after a three day completion and turned down a touroffer to Europe and Japan to stay home with their families. Soon after Ray started his ”Memories inMusic” show at the local Ramada Inns. Now he enjoys playing for the senior market in the area, andwatching their memories come to life when they hear “The Oldies”. He still plays Mom’s oldies butgoodies! You will have plenty of opportunity to enjoy Ray's talents days to come.

Josh is the Executive Chef and Dining Service Director at The Watermark at Trinity. His culinary careerstarted in his mother’s kitchen at the age of 15. After graduating culinary school and working at variousrestaurants, Josh found his way to our sister property, The Fountains of Boca Ciega Bay. Josh began as aSous Chef and as he worked his way up to Executive Chef, he found his calling for helping others. He leftfor two years to start his own restaurant in Fort Lauderdale but realized he missed the family environmentof senior living and came back to join the Trinity team. He believes in creating food that ignites the senses.His guiding principle for cooking is about getting back to the basics and creating dishes with simpleingredients and seasonings. Josh is excited to cater to all of the residents and hopefully learn a few newthings along the way!

Julie is the Community Life Director. She relocated from Connecticut where she worked in a groupof skilled nursing homes for 31 years. She worked her way up from a Dietary Aide to the Director ofTherapeutic Recreation. After graduating with an AS degree Julie went on to study Family Studies at SaintJoseph's College. Although no children of her own, she raised a foster child from the age of 12 who hasturned into a beautiful 22 year old young lady. Tatiana is and will forever be her daughter. Julie loves totravel and has been to many places including Ireland, Switzerland, Germany, Peru, Mexico & theDominican Republic. She will be sure to share her experiences with you so buckle up and get ready!

Lucy is a resident at Watermark at Trinity. She was born in Caltanisseta, Sicily where she learned theantique Sicilian language. Lucy came to America at the age of three and a half years old. She grew up inNew Haven County CT, but after enjoying being a snowbird for over 20 years, she decided to move to FLonce and for all. Lucy loves to read and is a writer. She has been journaling since she was 18 yearsold. One day when the minister couldn't make it for Bible Study Lucy eagerly volunteered. She enjoyedsharing an inspirational message so much she agreed to do it as a Watermark University Class. All were infavor! Lucy has Catholic roots from her childhood and is currently a member of Bethel Baptist Church.She has been studying The Bible for over 40 years.

Walter is an award winning filmmaker. His programs have aired on PBS, TV Land, History Channel, MTV,Biography Channel, and Comedy Central. He has worked with stars such as Michael Stipe and CyndiLauper. Walter has filmed helicopter scenes in the Australian Outback, directed “Scotty” of Star Trek on awild aerial ride through New York, and has even worked with crocodiles, kangaroos, and mermaids! He isthe president and creative director of Heritage Media Group, the founder of Life-Stories Sharing, andpresident of Carrollwood Toastmasters Club.

Paul is a decorated veteran who has spent his life helping others through a variety of different positions.Paul was honorably discharged as a Sergeant in the Army. During his career, he has worked with thePresidential Honor Guard and the Tomb of the Unknown Soldier Detail. He served as a first responderwith the Pasco County Sheriff’s Office as well as Pasco Fire and Rescue. He also served with the FloridaJoint Replacement & Sports Medicine Center and worked as a personal trainer for athletes, friends and co-workers. Paul holds degrees in criminology and psychology from Northwestern University and is amember of Phi Theta Kappa Society.
