VASA Celebrates 37th Annual with Thanksgiving PotluckThe 37th annual VASA Pod

Chili Cookoff was held Thanksgiv-ing weekend at the Victoria Coleto Creek Lake KOA RV Park. The rain held off and it was a beautiful weekend to get together to enjoy great food, friends and raising money for our charities.

A delicious Thanksgiving meal started off the weekend, with fried turkeys provided by the Pod and sides brought by chili cooks and KOA guests. Everyone contrib-uted something to the meal and everyone had a great time. If you missed it, put it on your calendar for next year!

Friday’s cookoffs benefited the VASA Pods Victoria College Memorial Scholarship Fund. Tak-ing first place with 50 CASI chilis judged was Diana Klade. Other events included 13 desserts, 12 dips, 19 beans and 12 green chilis, with a total of $1,200 donated to our Scholarship Fund.

Saturday was the Pod’s CASI Autoqualifier. Taking first place out of 55 chilis judged was Mike Klade. Congrats on your qualifying to compete at TICC in 2019!

The Pod designated the Junior

event as a Kids Cooking for Kids cookoff. Congrats to Gavin Wilson for taking first place. We were able to donate $100 to this program. The Pod challenges other Pods to designate a KCFK event at their cookoffs.

Besides CASI chili and Junior chili, we had 23 beans and 12 mar-garitas turned in.

Our charity for the day was for the love of JD and Lisa Duggan. Thanks to the generosity of cooks and donations, $2,700 was raised for our fellow cook and Pod mem-ber. Thank you all for helping to make this cookoff a success.

Sunday was the last of our events. Twenty-five chilis were judged, with Paul Porter coming in first.

Great job, VASA Pod members and everyone who came out to help at the cookoff, from raffle ticket sales and registration to monitoring tables, judging events and tallying.

First, I would like to wish each of you a safe and healthy 2019. May all the joys of life be yours in this new year.

We will be having our Winter Board of Directors meeting this month in Irving on the 13th at the Irving Elks Lodge. As always, we encourage everyone to attend who would like to. We have a Saturday workshop day, and the official board meeting is on Sunday. If you have never been to a meeting, make plans to be there.

Very soon we will begin planning the 53rd Annual TICC and we would like to hear from you. We are always looking for ways to promote, market and get the word out about CASI, our Pods, our membership and of course our premier event, TICC.

We welcome your ideas, your insight and most importantly, your participation. Most of you know the amount of time, effort, planning and execution this event demands. Be a part of it and get involved. You are always most welcome.

At the 2018 GP meeting, I announced the resurrection of the ‘Kids Cooking for Kids’ program. I en-courage everyone to hold a junior cookoff this year. Here is how it works. You notify me that you are go-ing to have a junior cookoff and that it is going to be listed as a Kids Cooking For Kids event. You must designate that the entry fees from the junior cookoff will benefit the CASI National Scholarship Fund. Let me know when you are having the event and if you can, give me an approximate number of juniors you are expecting. When it gets closer to your cookoff, you will receive something from me to hand out to the kids who are cooking. Once the cookoff is over, you let me know how many juniors you had and the amount that you are sending for the scholarship fund. Michael and I are going to match your dona-tions dollar for dollar.

I am very happy to announce that one Pod has already taken advantage of this. I would like to thank Dianna Hoy and the VASA Pod for holding the first KCFK. I was at that cookoff and was honored to be able to present the matching funds to VASA. Thank you VASA Pod for your commitment and dedication

to the CASI National Scholar-ship Fund.

The wheels are already turning on the planning and prepping for the 40th Meeting of the Great Peppers. Before you know it, May will be here and credentials will be due. Applications for the BOD will be due. Pod elections will be due. Hotel reservations will be due. I think you get the gist. It may seem like a long way away but trust me, it hap-pens faster than you know.

As I close this, I wish you all the best for a prosperous and happy 2019. Be safe in your travels and keep your families and friends in your hearts and thoughts. You can never have enough positive energy flowing your way.

Back in the “old” days (about three years ago) there was only one way to submit cookoff paperwork to the Tallymaster. It

involved an envelope, a stamp, and the USPS. Now, thanks to technology, CASI members have options.

If you have the ability to scan the paperwork documents, you can send the scanned copies to the Tallymaster through the Members Only section of the CASI website. Further, if you want to experience what the Tallymaster does, you may enter the winners directly from the website. However, make no mistake, if you choose to enter the winners in this manner it does not absolve you of attaching the scanned

forms. The entry of the winners is just a help to the Tallymaster. It does not take the place of a signed copy of the results sheet. Plus, it does not allow the Tallymaster to view the Entrants lists.

Although CASI Rules do not state that a referee must keep a copy of the cookoff paper-work, we have always suggested (read: insisted) that the referee do so. If you scan the paperwork in preparation for transmitting them electroni-cally, you have the ability to store them on your computer, without all that paper laying around.

Have you ever been at a cookoff where the winners were announced by another cook? I have. Not only is this totally against CASI Rules, it gives an impression of cheating. I ex-perienced this several years ago, and when the announcer called a number and pulled his ticket

out of his pocket, it really left a bad taste in my mouth.

I am aware that at some cookoffs, the only people left during the announcements are the cooks. That is not an excuse for not following the rules. The cookoff organizers must plan ahead. So, make no mistake; an independent an-nouncer for the awards ceremony is an essential part of your cookoff organization.

I have attended several cookoffs where an independent person (not a cook, obviously) was employed to verify the winning ticket num-bers. This position is not described in the CASI Rules book, but it is certainly a good idea. And, if your announcer is not all that familiar with CASI, it is a great idea. It is definitely endorsed by the Senior Referee.

The Mid-Atlantic Chiliheads and Mason-Dixon Chili Pods, along with 25 cooks, joined forces with Mason Dixon BBQ Services and the Greencastle Exchange Club at the fifth annual Pennsylvania State “Chilly Chili” Championship on December 8.

Chili-loving public and chili cooks alike had a great time visiting and sampling a variety of grilled and smoked goodies, including an unexpected treat – cinnamon rolls in orange peels (You gotta try making these!). All combined, the generous donations from the People’s Choice Chili Compe-tition and raffles helped raise over $2,500 for the Greencastle Exchange Club, which will use the donations to bring Christmas happiness to many local families in need. Mark Benda of Williamsport MD was once again crowned the People’s Choice Champion.

The top three Pennsylvania residents who are now automatically qualified for TICC 2019 are: Jerry Gates, Waynesboro, 10th; Nathan Gramm, Dillsburg, 12th; and Jason Willis, Dillsburg, 16th. Congratulations, Jerry, Nathan, and Jason on earn-ing your first “Q”!

Many enthusiastic show teams competed to the amusement and enjoyment of the public crowds. The Plum Crazy Show Team, captained by How-ard Poole of Warfordsburg PA, three-peated as showmanship kings. Mrs. Claus Chili captained by Christii Watkins took second; and “Daddy’s Angel” captained by Eric DeMuth took third.

In the chili competition, Rick Zimmerli (MD) separated himself from the field by five points with his winning pot of red. Congratulations, Rick on winning the Pennsylvania State and on your 2019 TICC qualification. Reserve champion was Mike Watkins (MD). Ledgerwood Takes "TICC East" Honors

The annual MRE Tug o’ War was started 21 years ago so that the “Maritime Republic of Eastport” could settle the dispute resulting from the unannounced closure of the Spa Creek bridge which con-nects Eastport to Annapolis. They call it the “Slaughter Across the Water” aka “the MRE,” although nothing gets slaughtered other than several hundred egos. And yes, thousands of chili samples are consumed in the process!

2018 marks the 12th year of the MRE Chili Cookoff at the Tug. The Tug o’ War is held the same weekend as the TICC, so we af-fectionately nicknamed the cookoff “TICC East.” The Mason-Dixon Pod would like to thank our team that made our MRE participation possible: Christopher Watkins, Dan and Jane Bauer, Adrienne Grant, Brian Ledgerwood, and Rob Spitler.

Sixteen chili cooks and over a thousand chili-loving spectators cheered on a succession of tuggers as they grabbed each end of an 1,800-foot long rope extended over Spa Creek. With the tugs conclud-ed (Annapolis won 5-3 this year) and the chilis tallied, the Mason-Dixon war room announced: Brian Ledgerwood’s chili had reigned supreme!

The rest of the top ten: 2nd Tex-as transplant Brie Foresman (wel-come to the DC area), 3rd Christo-pher Watkins (aka Baby Face Chili Assassin), 4th Rick Zimmerli, 5th Beverly King, 6th Rob Spitler, 7th Adrienne Grant, 8th Bruce Baker, 9th Colin Orr, and 10th Rick Siever-ing.

Chili cooks raised $1,320 this year for a family of Annapolis MD charities through the People’s Choice Chili competition. Cooks served thousands of chili-loving spectators and solicited their votes for the best MRE chili. New chili cook Ian Patterson won the Peo-ple’s Choice Award.

This year’s MRE Tug o’ War Cookoff will be held on November 2. So, if you’re not joining your chili family in the Old 320 at the TICC, make plans to join us at the TICC East at the MRE. See you there!

When you read this it will be time to start chasing those points again. The new year brings new opportunities. I hope the weather gets cooler and everyone has good luck this year.

I was going to write about C.A.S.I/CASI this issue, but changed my mind when I got to the GP meeting in Midland, Texas. In talking to cooks from all over this great nation of ours, I am still hearing that the same problems exist in our Pods. These problems include recruiting and retaining new members, low attendance at Pod meetings, and a lack of understanding about the functions of a Pod and how to run a successful cookoff.

One year ago, I wrote about pods going out and getting new members and putting on more cookoffs. It ticked off a few people and I got some emails whining about how their areas are so different and nothing would work for them. It seemed to me that the common thread through these emails was, “We are a six-point state and we want to keep it that way.” What I wrote then will work, but some people will have to get off their lazy butts and go to work.

I am happy to say my home pod (Classic CASI) did pay attention and went out and proved pod members working together can accomplish a lot. Previously, we had low attendance at meetings. We now average between 20 and 30 at every meeting. You really can accomplish a lot when your at-tendance quadruples. But it will not happen without work and dedication by the majority of the members. How did it happen?

We recruited new members. We were not looking to just increase our membership roll but to get members who would be active and involved.

How do you make your new members active? You have to mentor each one indi-vidually. Give them a job in the pod, explain the workings of a pod the correct CASI way. Teach every one of them to monitor and how to run judging by the book. (It’s amazing how many areas of the country still don’t run judging correctly. I heard this complaint more than any other at the GP meeting. I was certainly surprised.)

Here is the part of mentoring with which some of you will have a problem. You will have to give the person you are mentoring a good recipe to cook that will get them some points. If you them a BS recipe that you know won’t be successful, it will be a waste of time, cause your new member to give up, and make you look like a self-centered expletive. But once the new cook has a taste of success, the hook is set. Yes, you will have to compete against them and

your recipe at cookoffs, but it is a great feel-ing to see them get points even when they are kicking your butt.

Remember, CASI was started to have fun, relax, raise some money for charity and keep a level playing field for all cooks. This is a game and if you take it too seriously, you become a negative force and defeat the purpose you think you are accomplishing.

RECRUIT (friends and strangers, your potential new friends), TEACH (the way CASI and pods work), and MENTOR (stay with them as long as it takes, even if it takes an entire chili year, or more).

It is simple, but it takes a lot of work and dedication.

This will get results. Classic will have 12 to 15 new cooks who will be qualified and cooking at TICC this year for the first time. When the Tallymaster knows your local area code by memory, you’re doing a good job.

We don’t consider our new members “new” anymore. They are now qualified to recruit, teach, and mentor on their own.

Two of our formerly new members put on their first cookoffs this year at their places of business. These cookoffs worked with their charities and made them an integral part.

I had my doubts about one of them. It was up against the only two ICS events in Texas this year, the weather was still in the hundreds, it was September and I thought most cooks were already qualified.

I was wrong. It was one of the best cookoffs I have attended in a long time. The member and the charities got out and advertised the event. Spectators showed up in the heat. Cooks were well fed on Friday and Saturday nights, and food booths were open both days. Good money was raised for the two VFDs. There was a good turnout of cooks; three qualified and three reached the 11-point plateau. The cookoffs were run professionally from registration through judging and refereeing. But it didn’t just happen. A lot of time and work went into the preparation.

Working together with new members, getting them involved and continuing to mentor them will result in new members and their retention. We all can and should set a goal this chili year to bring in a new cook, and set as a continuing goal the retention of that cook. CASI and pod memberships have a lot to offer, and with continuing efforts on our part, we can continue to grow in chili, charity and fun.

As a CASI Pod you are required to put on a pod cookoff once a year. To help you advertise your pod cookoff we allow each pod to place one quarter-page ad in the Terlingua Trails each year, free of charge. This ad should run the month before your cookoff occurs. Should you decide that you need an ad larger than a quarter-page, we will simply bill you for the difference in price. This ad should not be confused with the article advertising your cookoff in the "Upcoming Events" section in this periodical. That article will start to run as soon as you request your cookoff packet and will run until your cookoff occurs.
