EDITOR’S NOTE

CHANGE IS INEVITABLE.Especially in a fast-moving world where the old has to give way to the new, and the young step in to take the place of the seniors.

Sometimes, change can be hard to take.

Because it means acceptance, adjustment and accommodation among a diverse group of people.

History has it that the Tanah Merah Country Club (TMCC) has seen changes over the last 30 years of its existence.

And history has also recorded that TMCC has adapted to the changes well, and in positive light.

That is because of an enlightened committee, understanding membership and hardworking staff.

As we bid 2014 goodbye, and usher in 2015, we will see some changes to the Garden Course layout.

That is not fresh news to the TMCC members.

Since 16 February 2014 when the Government announced that it will be acquiring 10 hectares of the club land for a new taxiway in Changi Airport’s expansion plans, the committee has been transparent in all its moves towards the change.

The committee and management quickly responded by immediately looking into reconfi guring Garden to par 70. And the layout and design to Garden was displayed at the Garden lobby and it is heartening to note that it did not receive any negative comments.

On December 1, nine holes of the Garden were closed and reconfi guration works commenced.

The club had ensured minimum inconvenience to members’ play and the transition to nine-hole play was very smooth.

The par-70 course will be ready for play from March, 2015.

The club will also lose three tennis courts because of the land acquisition. And the club is looking into converting the two existing soft courts so that there will be four hard courts.

Among the memorable events for 2014 organised by the management were from golf (Remembering Par 72), F&B (Oktoberfest), Sports (TMCC Family Day) and Marketing (Festive events and year-end Countdown Party).

For all these events, the response was encouraging.

The management thanks the members for their participation in these events, and hope they would continue to do so for 2015.

To improve communication, the TMCC website will see improvement and modifi cation works that had started in December 2014 and ending in April 2015. The improved website will facilitate easier navigation and have better interface.

This magazine has also been given a facelift with new headers, fresher outlook and improved content.

So while changes come along, the club will move forward in tandem.

And it will be done the TMCC way.

The TMCC experience has been one to indulge, one to savour and one for every type of member.

And the culture and philosophy have been about bonding and bridging among management, members and staff.

And that will not change, as TMCC welcomes the other changes.

BEHIND THE SMILES, THERE WAS A TINGE OF SADNESS.

The title of the event said it all. It was the “Remembering Garden Course Par 72 Golf Challenge” event.

Whenever you are called to remember something, there will always be a feeling of nostalgia.

Call it a walk down memory lane.

So was it for 144 golfers on Sunday, 30 November 2014, when they competed in the historic event to mark the closure of some holes at the world-renowned Garden Course.

The closure came about because of land acquisition by the Government for the expansion of Changi Airport.

So it was a good enough reason for the Club to forego land and tweak some holes to keep the Garden identity.

There was also good enough reason for some golfers to delay proceedings as they walked on some holes for the last time.

They treasured the walk and took photos and some selfi es to remember the wonderful holes, especially the beautiful and challenging par-fi ve 13th, which ran alongside one of the runways.

Not surprisingly, there was overwhelming response for the event, and some members were put on the waiting list.

And for those who made it, this was a wonderful experience.

It was a shot-gun start for the Four Ball Match Play (participants were paired and drawn into two teams, Team 72 and Team 70).

Club President Ho Beng Huat played with Team 70 (all in grey polo tees) and Club Captain Lee Lian Hong played with Team 72 (dressed in red polo tees).

And on a day of superbly fi ne weather, competition was keen but in the true spirit of sportsmanship.

There were two holes offering hole-in-one prizes and all four par-threes offered nearest to pin prizes.

In the end, nobody bagged the hole-in-one prize and the set of golf irons (XXI08) were put into the Lucky Draw prize list, which Dave Goh won.

Another lucky draw big winner was Norliah Embong, who took home a set of Titleist AP1 irons.

Results were tallied according to the number of holes won (one point), halved (half-point) and lost (zero point), and the points were added up.

Team 70 won by a close margin and each member of the winning team received a $30 F&B voucher.

The seven-course dinner at the Garden Banquet Room was so delicious that many diners complimented the F&B department.

It was interesting that there was no guest-of-honour as all diners were considered honourable.

Club President Ho gave a moving speech about the fabulous Garden which had hosted some major events over the years.

Jolting the minds were trivia questions related to the Garden tossed to the fl oor by Michael Ng, also the day’s emcee.

This segment created a lot of attention and there was a lot of response from the enthusiastic diners.

It also gave the members a good sense of the rich history of Garden, judging by the spontaneity and excitement among the crowd.

It was truly a fi tting way to bade farewell to the original Garden. ❖

Citing the Lexus Cup, Tiger Skins, Johnnie Walker Classic, HSBC Women’s Champions and many Singapore Opens as big-time events staged by Garden, Mr Ho said that they brought back great memories.

He cited the Garden as a “beautiful woman”, adding that the new course would be “rejuvenated and seductive”.

He said that the affected holes were Hole 6, 7, 12, 14 and 17, with Hole 13 disappearing altogether with three tennis courts.

Each golfer went home with a great souvenir - mounted photos in a sleeved folder and a CD.

But more than that, they went back with great memories of Garden as a montage, prepared effi ciently by golf manager Michael Ng and his team, tracing the history of the Garden over the past 30 years.

The montage also showed in vibrant colours the true splendour of the Garden when it transitioned in 2005 and to 2014.

ROAD SAFETY ENHANCEMENT

Due to vehicles travelling at high speeds while approaching the Garden Golf Bag Drop Off area, various improvements have been carried out to enhance road safety.

New double yellow lines complete with guided footprint signs have been painted so that members can now walk safely with their golf bags from Carpark A to the Golf Bag Drop Off area.

In addition, a new road hump has been created so that vehicles can slow down when approaching the Golf Bag Drop Off area.

NEW HANDICAP LOTApart from the existing Handicap Lot found in Carpark E, members can now fi nd a new Handicap Lot that has been converted at the car park facing the Sports Complex for added convenience.

SAFETY GRAB BARSFor the convenience of members, new safety grab bars have each been installed in the Mens’ and Ladies’ Changing Room toilets respectively.

MANDATORY USE OF GOLF BUGGIES IN GARDEN COURSE

ON SATURDAYSThe General Committee at its meeting on 10 December 2014 decided that to

promote a faster pace of play, particularly on peak days, the use of golf buggies

will be mandatory for Saturday morning and afternoon time sheet sessions. This will take effect from March 2015 when the

reconfi gured Par 70 Garden Course opens for play.

EXTERNAL FACADE PAINTINGDuring the reconfi guration of the Garden Course, the Club has taken the opportunity to paint the premises for a refreshed look with a much brighter colour for 2015.

10ISSUANCE OF CAR DECAL FOR 2015With effect from Thursday, 1 January 2015, members may collect their new car decals from the two reception counters (Clubhouse at Garden Course and Sports Complex) Collection is from 9.30am to 9.30pm daily. Members are encouraged to use this new car decal as it is the permanent new design. Our security personnel will only recognise and allow members into the club premises with this new decal. Members have to produce their membership cards for verifi cation purposes and surrender their old decals in exchange for the new ones. Each member is entitled to two complimentary decals. The third and any subsequent car decal, if required, is at $50.00 each.

When one diner approached a member of the organising committee for more framed pictures of him with his family on a rickshaw, you should have seen the glint in her eyes.

It meant extra work, especially since the photo-taking event was hours earlier. It also meant that the rickshaw item, where the vehicle was placed at the corner of the Garden Course lobby with an old building in Shanghai as a backdrop and furious photo-taking was so very popular, was a major hit.

Close to 170 diners, with ladies elegantly dressed in cheongsams, colourful dresses with lace details and chiffon silk shawls and men looking smart in lounge suits and mandarin-collared shirts, went through happily with the pre-dinner photo-taking.

The rickshaw item aside, there was another good layout for photo-taking. A Chinese lacquered divider, a cherry blossom pillow atop a wooden chair, wooden silk fan, photo frame with two Shanghai girls in picture and a very impressive gramophone formed the backdrop for another photo-shoot.

Such photos are treasured for they are taken on an auspicious day - the last day of a year.

The 2015 New Year’s Countdown event has always been a hit with Tanah Merah Country Club.And it was yet again this time, with the diners enjoying the cocktails and later feasting on good food, enjoying good company and great banter amidst good music and lovely songs.

The table centre-piece was set up with a red Chinese tea set (four cups were lighted with fl oating candles) and two complimentary bottles of wine were placed on each of the 17 tables.

The whole set-up fi tted appropriately for the Old Shanghai-themed dinner, which opened with fi ve dancers dressed in bright pink cheongsams and the classic wavy hair tied up to the side doing a traditional Chinese dance in high heels.

Once dinner was served in style - lights dimmed as waiters walked in - the guests wined and dined, serenaded to the soothing jazz music provided by the fi ve-piece live band, the Summertime Hotshots, including singer Joanna Dong.

This allowed guests to glide across the room in gingerly fashion and mingle with members, the clinking of glasses ad-lipped by “Cheers” giving the whole atmosphere a celebratory feeling.

The Fun and Games were aplenty, with the bingo-style treasure hunt causing enjoyable commotion and exciting comradeship.The mood picked up when the soothing jazz music switched to a higher tempo with singer, Estee Pook, and saxophonist, Eugene Pook.

They offered a great compilation of melodious Chinese, Cantonese and Old Shanghai songs, even the famous Shanghai Bund song - adding to the ambience and allure of the Old Shanghai theme.

And as the pair moved around the tables, sometimes grooving and hip-moving, emcee Colin Seet kept the audience further alive with his Q and A on guessing the names of the songs.

The fi rst of the two lucky draws were then conducted, and the highlight kept to later in the night where the top three prizes, Canon Powershot N2, Montblanc belt and iPad Air 2, were handed out.

And as midnight arrived, the Summertine Hotshots jazz music came back to serenade the guests and retro songs were played.

And when the dance fl oor was opened, Club President Ho Beng Huat led the way and many couples joined in on the dancing.

Not before long the dance fl oor was full, and music ranged from hot retro-beats to all-time classic like YMCA and Dancing Queen.

Mr Ho and F&B Convenor Benny Tay hit the gong to the countdown to the New Year, and as the clock struck 12, confetti cannons and crazy ribbons were sprayed and the entire room was awash with colour as the diners merrily welcomed 2015 with hugs and kisses.

And when the tempo had settled down, the guests adjourned to the Garden View Restaurant, an ideal venue for a good spread of teochew porridge supper.

The organisers received high praise and compliments from the majority of diners.

And they also acknowledged that Old Shanghai was a great way to welcome the New Year. ❖

Jack GohJack was introduced to the world of Ballroom Dancing at the age of 11. He grew up as one of the top local junior dancers and eventually went on to the adult fi eld. He is the current Singapore champion in the Professional Latin American category and has represented Singapore at the South-East Asian, Asian, Asia-Pacifi c, British and World Championships.

A member of the Singapore Ballroom Dance Teachers’ Association and the United Kingdom Alliance, he has been actively teaching and promoting the art of Latin-American Ballroom Dancing. His works range from students both young and old, right up to people with special needs.

Sam & Michelle FongSam & Michelle Fong, a husband & wife team, have been competing together since 1998. They have been ranked 1st in the professional Latin American dance category, both locally

and in the South-East Asian region, and have competed in many international ballroom dancing championships in Britain, South Korea, Taiwan, Thailand and Hong Kong. They are members of The Singapore Ballroom Dance Teachers Association, The National Award of Teachers of Dancing (UK) and the United Kingdom Alliance. They are also licensed adjudicators registered with The World Dance Council. Currently, Sam & Michelle are the offi cial trainers to the National University of Singapore (NUS) Social & Ballroom Club, as well as its performance team, Viva LatiNUS.

Every time he creates waves in swimming pools at home and abroad, there are ripples of excitement at Tanah Merah Country Club (TMCC). For it is as though an “umbilical cord” still connects Joseph Isaac Schooling to the club.

And it is heartening to note that Joseph, 19, has not forgotten his roots with the club.

It was at the Changi Coastal Road Club that Joseph received the baptism to swimming. He was only four years old, and he had his fi rst dip in the turquoise waters of the pool at the renowned club.

The pool subsequently has seen Olympic swimmers from Australia and many other leading countries wade in its waters.

But TMCC wants to remember best Joseph, who had his fi rst lessons from then club coach, Vincent Poon.

Fifteen years ago, when “Uncle” Poon tossed Joseph into the TMCC pool, he wanted to see if the child prodigy would panic. On that, Joseph told me in a previous interview: “I didn’t panic. I came out of the water smiling”.

He did that on many occasions since, the latest being when he won the 100 metres butterfl y gold medal at the 2014 Asian Games in Incheon, South Korea, in September.

Now, with the full backing of his businessman father, Colin, and chartered accountant mum, May, he is aiming for an unprecedented eight gold medals at the 2015 South-east Asia Games in Singapore in June.

And the bigger target is a medal at the Rio Olympics in 2016. Towards that dream, he is working closely with his new coach at Texas University, Eddie Reese.

Reese, 73, a coach for more than 50 years and the United States team coach for the 2004 and 2008 Olympics, says that Joseph is the biggest talent he had ever coached.

With that rare compliment for a Singapore athlete, Joseph is set to go places where swimming is concerned.

And TMCC will always occupy a place in the top swimmer’s heart. ❖

It was a quiet morning early last month, and few people noticed the presence of national team golfers at the Tanah Merah Country Club Tampines Course.

The six golfers were there for one of their practice rounds for the upcoming South-east Asian (SEA) Games in Singapore in June.

Among them was the likeable, mild-mannered Jerome Ng, who was easily recognised by the golf marshals.

Ng, 25, became a popular fi gure at both the Tampines and Garden Courses since he became a TMCC member in September 2013.

His father John, bought him a membership to allow his son play games at the TMCC course to improve his game. “I like the Tanah Merah Country Club,” said Ng.”

“It is often very quiet, the members are friendly and warm, and I have made a lot of golfi ng friends there.” he added.

Ng, a national team member for almost eight years, also enjoys his practice rounds at the club’s two courses. He also uses the well-maintained driving range for his chipping and putting.

Among his golfi ng buddies are committee member Ken Lye, fellow club member George Foo, and his national team compatriot Gregory Foo.

Ng, who also plays for TMCC in the Singapore Golf Association league, tries to play three times a week at the club.

He acknowledges that he should play more often in the club’s competitions, though. Ng played in one big event there -- and fi nished runner-up to Gregory Foo - -in the club’s strokeplay event.

Ng is one of seven players in the national team vying for four slots to make the national team for the SEA Games.

The others are Gregory Foo, Jonathan Woo, Johnson Poh, Marc Ong, Abdul Hadi and Wong Qi Wen. However, the SEA Games may be Ng’s last big tournament as an amateur.

For he is hoping to take on a job and spend more time on social golf. ❖

You better watch out, you better not cry, Santarinas are coming to town.

That was the scenario at TMCC’s Golf Yuletide Challenge on 21 December 2014, when Santarinas in red dresses and reindeer hats went around the Tampines golf course. The ladies distributed bananas and muesli bars to the golfers for energy boost.

Ninety seven golfers formed 27 fl ights in a System 36 friendly-cum-fun competition to raise the Christmas spirit at TMCC’s Tampines Course. And they were in good spirits as they took photographs with the Santarinas to remember the Yuletide event.

Because of the inclement weather, play was suspended between 3.30pm and 4.50pm, leaving many golfers to complete only 16 holes.

But there was prizes galore for the competition and the lucky draw during the dinner, themed “A Colourful Christmas”.

The dinner was held at the Garden Banquet Room and all guests were given the door gift of a Welcome Christmas Mug in a matching festive box and Candycanes at the reception.

To raise the Christmas spirit, the organisers, the imaginative marketing division of the club, decorated each table with a fruit-basket centre-piece

along with various colourful Christmas-y ornaments of wrapped sweets and present boxes, with pine tree greens adding more sass to the basket.

Each seat had a party pack fi lled with party poppers/balloons/whistles, and a festive hat that came in different colours and styles.

The stage was a kaleidoscope of colours with the bold words of “Golf Yuletide Challenge” backdrop.Pillars in the room were also wrapped in matching backdrop design, adding to the vibrancy and liveliness of the surroundings.

The dinner started with a table game titled “Frosty The Snowman”. Each table

had to dress up one person as Frosty The Snowman using

the pack of props handed out, which had kitchen towels, a

bath towel, cups, paper, scotch tape, scissors, scarf, headband,

safety pins and stickers.

This event raised loud cheers from the excited and enthusiastic diners, and Table 8 did the best presentation to win the game.

Next was the “Guess My Worth?” item. Each person had to guess the worth of an exquisite Santa Claus decorative piece and a glass bowl full of Hersheys chocolates and Christmas ornaments, placed in front of the stage.

Many diners crowded around at the front of the stage and took their time to guess the value of the items.

The winner, Mr Bond Tan who guessed $178, was closest to the actual worth of $175.20 and won the prize presented by Lady Vice Captain Corrina Chin.

Before the entertainment segment - a performance by singer Donna Daniels - there was the fi rst round of the lucky draw conducted by Ms Corrina Chin and the golf prize presentation was by Disciplinary Committee member Wee Jim Hock.

Prizes for the second round of the lucky draw were presented by H&R convenor Dr Neo Eak Chan.

The food spread, as usual, was plenty and appetising, and was complemented by Christmas signature dishes such as roast tom turkey served with cranberry sauce, baked whole gammon ham bone served with pineapple sauce, log cakes and Christmas cookies, all to match the Christmas-themed party.

It was a highly pleasant evening, rich in fun and entertainment, and it was appropriate that the emcee, Naz Foltier, thanked the Marketing, F&B, Maintenance, Housekeeping and Security divisions for a job well done.

Among the prize winners were Gillian Sim, Penny Yap, Lee Beng Hong, Michael Pang, Ang Yong Hock, Kyoko Kanaya, Lynette Yeo and Corrina Chin, but the mood was such that every diner walked home a winner. ❖

Tanah Merah Country Club (TMCC) fi rst hosted the Friendly Golf Game with Seletar Country Club back in 2012 at Garden Course.

After receiving the hospitality from Seletar who hosted the game in 2013, the 2014 Friendly Match was held in Garden Course for the second time on 23 November.

The inclement weather fortunately died down after breakfast and the Ryder Cup style matchplay friendly game between both committees commenced.

Although Tanah Merah was going strong, the grass proved to be greener

for Seletar as they swung their way to winning four points to two.

Not only did it strengthen the bonds between both clubs, it was also played in good fun and camaraderie.

TMCC also hosted our guests for a Chinese lunch in the Hibiscus room, with a breathtaking view overlooking the golf course.

The afternoon went by like a breeze as good food and drinks fl owed smoothly with the conversations for a memorable event. ❖

Most golfers know you can practise on the course before a Match Play round, but you must not practise on the course before a Stroke Play competition (Rule 7-1).

During several of the Club’s multi-round competitions - the Club Stroke Play Championship, the Club Match Play Championship, the Ladies Match Play Championship, the Ladies Club Championship and the Ladies Intermediate Championship, the question of when a player can practise during a multi-round competition arises.

For multi-round competitions the basics of Rule 7 are the same; but what about practise putting between holes when there is another round to be played on the same course the following day, and what about practising during the intervening days when there are gaps between two and more days of the competition?

Rule 7-1b says that when two or more rounds are to be played on consecutive days, a player may not practise between those rounds on any competition course remaining to be played.

But Rule 7-2 says that between the play of two holes, a player may practise putting or chipping on or near:a) the putting green of the hole last played,b) any practice putting greenc) the teeing ground of the next hole to be played, provided a

practice stroke is not played from a hazard and does not unduly delay play.

Decision 7-1b/7 clarifi es the above by telling us that Rule 7-2 applies to any round regardless of whether it is part of a multi-round competition.

So for example, if the fi rst two rounds of a competition are to be played on consecutive days on the same course, competitors may not practise on the course after completion of the fi rst round. But, if there is a further round to be played two or more days later, a player may practise on the competition course during the intervening days before the third round, because Rule 7-1b only forbids practice between rounds that are to be played on consecutive days.

Some other decisions on practising:7-2/5 In some circumstances, the hitting of a range ball during the play of a hole would be a breech of Rule 7-2 (no practising during a round with some exceptions), but the casual fl icking of a range ball, apparently only for the purpose of tidying up the course is not a breech.

It is a question of fact whether or not such an action amounts to practising. So, to avoid diffi culty, it is perhaps better not to hit range balls during a competition.

7-2/5.5 A player hit an abandoned ball to its owner on an adjacent hole. It was ruled that, since the player acted out of courtesy, there is no penalty.

7-2/7 A player making a practice swing in the rough dislodged a concealed ball. Since the player had no intention of striking the ball his swing remained a practice swing and did not amount to either a practice stroke or a stroke with a wrong ball. Note that a stroke is defi ned as a forward movement of the club made with the intention of fairly striking at and moving the ball. ❖

Malacca, a former fi shing village inhabited by local Malays, was founded by Parameswara, also known as Iskandar Shah or Sri Majara, the last Raja of Singapura (present day Singapore) following a Majapahit attack in 1377.

Popular legend has it that Parameswara was resting under a tree near a river during a hunt, when one of his dogs cornered a mouse deer.

In self-defence, the mouse deer pushed the dog into the river. Impressed by the courage of the deer, and taking it as a propitious omen of the weak overcoming the powerful, Parameswara decided then and there to fi nd an empire on that very spot.

He named it ‘Melaka’ after the tree where he had just taken shelter at, the Melaka tree.

Because of its strategic location, Malacca was an important stopping point for many fl eet.

In April 1511, Alfonso de Albuquerque set sail from Goa to Malacca with a force of some 1200 men and 17 or 18 ships.

The Portuguese conquered the city on 24 Aug 1511.

Later the Dutch defeated the Portuguese in an effort to capture Malacca, with the help of the Sultan of Johore.

The Dutch ruled Malacca from 1641 to 1798 but they were not interested in developing it as a trading centre.

Malacca was ceded to the British in the Anglo-Dutch Treaty in 1824.

So rich is the history of Malacca, that many Singaporeans, especially students regularly make trips north to get a taste of what that history is.

The Club’s 2-day 1-Night Malacca Getaway was about history as well as geography for a group of about 30 members.

The trip on 15 and 16 November was also an exciting one for the group, who had club offi cials accompanying them as they set out in the early morning at 7am.

Going by Tuas, breakfast was at Gelang Patah in Johor on Nov 15. Lunch at New Lagoon Restaurant in Malacca had seen a full array of food, and members thoroughly enjoyed the spread. After lunch, it was a full day of sightseeing.First on the itinerary was a short heritage and cultural stop at St Paul’s Church located at the summit of St Paul’s Hill. Originally built in 1521, it is now part of the Malacca Museum Complex.

Also within the Complex was the A’Famosa ruins that is among the oldest surviving European architectural remains in SouthEast Asia.

Of course, no trip to Malacca is complete without shopping at Jonker Street in the heart of Chinatown.Filled with rows of shops selling everything from antiques to craft-pieces, the street is constantly bustling with groups of tourists, especially during the weekends. All our members were spoilt for choice as they shopped to their hearts’ content before returning to Hatten Hotel to rest.

The appeal about Jonker Street is that it gives you a fresh experience in the day, followed by a completely new one at night.

Towards the evening, shutters were being drawn and shops were closed as tables and chairs were set up for the street stalls to welcome the dinner crowd.

The members had their own free and easy time during dinner as some went to have their meal at restaurants, at the street stalls in Jonker Street and others, nearby the hotel.

After breakfast the next day, the members proceeded to capture the sights of Malacca on the refreshing Malacca River Cruise.

They then made their way to the Charlie Baba Kueh Factory and were surprised with the countless varieties of kueh to choose from. It was a kueh lover’s paradise as everyone bought a few varieties for themselves to take home, before the nyonya lunch at Nancy Kitchen in Jonker Street.

Following a stopover at Dataran Pahlawan Mall (Makhota Parade) for shopping, the group left by coach south and had dinner at Rong Cheng Restaurant at Yong Peng in Johor, as well as a quick stop at Peanut King for some shopping.

And the subsequent smooth coach ride brought the group back to TMCC at 10.45pm.

The TMCC poster said: “Spend a fun weekend soaking up the culture and heritage of Malacca. Hunt for knick-knacks at the bustling weekend Jonker Street night market or if you are a foodie, savour the delectable local roadside treats or tuck into Peranakan fare in restaurants.

“Shop to your heart’s content in Malacca!”

KUEH SARLAT & TAPIOCA KUEHSaturday, 29 November 2014

Nyonya kuehs are famous for their artisan touch and traditional methods, like using ingredients such as fresh coconut milk and pandan leaves to create the fragrant fl avour. Using these very ingredients, the ladies mixed and put together their kueh sarlat and steamed tapioca kueh that Saturday morning on 29th November.

Kueh sarlat is a pandan-fl avoured coconut-based custard steamed on top of a layer of glutinous rice, while steamed tapioca kueh is soft and chewy, coated with grated fresh coconut. It can be made in different colours depending on what whets your appetite.

Instructor Valerie Kong demonstrated the right techniques as she taught the ladies, who were delighted to see the recipes come to life. What made learning a lot more fun was having a taste of the authentically delicious creations by their instructor, motivating them to want to immediately try making it themselves. All the ladies went home satisfi ed with some slices to share with their families.

With yet another successful series of workshops, we wrap up the year with the sweetness of kueh making that mixes Peranakan and Malay heritage together. Thanks to the continuous support of our members, a whole array of refreshing workshops have already been planned for 2015, so members can look forward to new recipes to bag home in the coming year. ❖

RAINBOW LAPIS & KUEH KOSWEESaturday, 8 November 2014

The Nyonyas are legendary for their kueh, a popular bite-sized dessert that comes in various different shapes and fl avours within Southeast Asia. These sweet treats can be enjoyed for breakfast, afternoon tea, and even as desserts.

Our members got their hands on making rainbow lapis and kueh koswee on the morning of 8th November. A childhood favourite of many, each colour of the rainbow lapis has to be made separately before layering them to create the moist and bouncy kueh. They can be pulled apart, allowing you to savour it for much longer.

Kueh koswee on the other hand are little steamed rice cakes with a fudge-like texture and is infused with the rich taste of gula melaka, topped with coconut shavings. This not only adds in that extra punch in fl avour, but also makes it look more appetizing.

Although the steps in making each kueh were a little tricky, the ladies were all smiles while baking, as instructor, Valerie Kong, made it look just too easy. With her step-by-step guiding process, they learnt many useful tips on getting the right texture and softness.

At the end of the workshop, everyone was pleased to take home good quality treats to share with their families. It was defi nitely a colourful morning well spent. ❖

BINGOPartyFriday, 14 November 2014One of the more popular children’s events, the last Bingo Party of the year saw a great turnout og 54 children playing to their hearts’ content. The bingo games took off after the children were treated to a sumptuous buffet dinner spread.

There were a total of nine games being played. The energetic atmosphere in the room could be felt throughout the two-and-a-half hours as players enthusiastically did their best to win. Participants were also given lots of bonus prizes such as candies, toys, snacks, on top of the yummy ice-cream that they were treated to during the interval break.

After much anticipation from the crowd for the numbers on their card to be called out, nine lucky winners took home some great prizes. It was yet another fun-fi lled party and everyone had a good time playing the night away. Till next year!

For the second year running, TMCC organised a Christmas Party just for children on 20 December 2014 at the Garden Events Room. A superb turnout of 30 children sunk their teeth into a scrumptious buffet dinner spread, complete with Christmas signature dishes like roasted turkey breast served with cranberry sauce and Christmas log cake. After the children fi lled their tummies, show host, Wacky Alex the Magician, kicked off the programme with interactive games and prizes. The atmosphere got more cheerful with the Johnny Bubble Show, as everyone laughed and jumped in excitement from the creativity of bubbles of different sizes being made.

Children were also called up on stage to participate in some of the activities and got a chance to be covered in giant bubbles. During the break, the children were treated to ice cream and the show continued with Wacky Alex performing his comical and magical acts. The kids were jumping for joy when Wacky Alex did his balloon twisting, making swords, hats, bows as well as heart-shaped balloons. To end the night, Santa Claus mascot made a special appearance to mingle with the children. Not only was everyone given a chance to take photos with Santa, they also received a present each from Santa Claus. It was truly a memorable Christmas Party for the children. ❖

TAKE US ONan Adventure!

It was the time of the year most children looked forward to, as they kicked back their heels and soaked in the exhilaration of the year-end school holidays. As early as October, the TMCC Adventure Camp was already fully booked with a total of 37 participants.

The Monday morning of 17th November was also the start of the fi rst week of school holidays. After registration for the next three days of their Adventure Camp, the participants said their goodbyes to their parents, and little did they know what was in store for them.

Day 1 started off with a safety briefi ng. The excitement grew within the participants as they were issued their camp T-shirts and began a series of icebreaker games and teambuilding activities such as the Egg-Straw Race, Balloon Walk, and Structure Building.

After lunch at the poolside-covered terrace, the campers were introduced to Laser Tag, where they were split into four teams to carry out three missions of combat games against each other.

The winning team with the most points was then invited for a bonus round to compete with all the counsellors. Next up was a Scavenger Hunt, as the teams were issued a list of items to search for around the Sports Complex.

The campers enjoyed a night of music and dance at the Heliconia Room before ending off watching the movie, ‘Gulliver’s Travel’ and munching on some night snacks.

Day 2 after breakfast was the most anticipated outing as they headed to Adventure Cove Waterpark at Resorts World Sentosa. The participants got to experience the rides in a slight drizzle, which made the outing even more enthralling.

They started with Riptide Rocket, followed by Spiral Washout, Whirlpool Washout and Big Bucket Treehouse before proceeding for lunch at The Bay Restaurant. The excitement did not stop there, as they continued on with the Adventure River, Bluwater Bay, Dueling Racer, Splashworks, and fi nished off at the Rainbow Reef.

After the fun-fi lled outing to Adventure Cove, the campers refuelled themselves with dinner at Vivo City and caught the latest blockbuster animation “Big Hero 6”, before heading back to the club. The second night of the camp ended with the movie ‘Astro Boy’.

On the fi nal day, the campers headed for yet another outing after breakfast, this time to play at the Real-Life Escape Game. The concept of the game was that teams will be locked in a room of a different theme and the mission was to fi nd a chain

of clues to free themselves from that particular room. They were given an hour to escape, and this fostered teamwork among them to strategically plan and fi nd their way out.

They recharged with lunch at Burger King before heading back to the Club. The campers then had a splashing good time at the pool before getting fetched by their parents.

Each one of the campers was given a CD as a souvenir, containing all the camp photos from the past three days. Truly, a good start to the rest of the well-deserved school holidays these children had earned after a busy school year.

Tanah Merah Country Club had the greatest pleasure in planning a terrifi c adventurous time for all, with new friendships made, teambuilding skills learnt and good memories created. ❖
