WHY Lady’s Leap?When the daredevil skipperof the paddle steamer LadyHopetown found himselfbehind in a race down theMurray River, he made a callwhich would find him foreverenshrined in outback folklore.He cut to the inside, the boathit the sand at full steam andbecame airborne, momentumcarrying her over the bar andahead of her rival.From then on, that point inthe river became known asLady’s Leap.

Grilled Tuna, Pancetta andBay Spiedini… (serves 4)1kg fresh tuna. . .12 sl ices fatty pancetta. . .8 bay leaves. . .approx 500g waxy new potatoes. . .s ea salt. . .1 clove garl ic. . .black pepper. . .150ml olive o il , plus extra to serve. . .1 tablespoon mustard. . .splash of herb v inegar. . .1 tablespoon small capers. . .2 spr igs flat leaf parsley, chopped. . .1 lemon
Cut the tuna into 12 pieces and wrap each in a
slice of pancetta. Thread the pieces onto skewers
to make 4 kebabs, putting a bay leaf between
each piece of fish. Boil the new potatoes with salt
and a crushed garlic clove. Drain and season with
sea salt, black pepper, olive oil, mustard and the
herb vinegar. When cold add the capers & parsley. The perfect
accompaniment for a
