When to Replace Hood FiltersIf your hood filters have corrosion, dents, or wear that has created holes or disfiguration, then it’s time to replace them. Removing Your Hood FiltersWhether you’re replacing your hood filters or removing them for cleaning, it’s crucial to make sure this process isdonesafely.Often,employeeswillstandontopofequipment—including hot deep fryers—to clean ventilation components. This is incredibly dangerous and can result in seriousinjuries.Forexample,in1991,anemployeeofaColoradofastfoodrestaurantwasfollowingtherestaurant’sprocedure for cleaning hood filters. The procedure involved placingawoodencoverover3ofthefryer’s4binscontaining hot grease. While standing on a chair on the wooden cover, she fell and sustained second and third degree burns over 10% of her body. Topreventthepotentialforthistypeofinjury,besureyourfacility has a safe ventilation cleaning procedure, such as using a ladder or reach extension device.

Don’t Let Your Waste Go to WasteCheck your twist/lever waste often to make sure it’s working properly and does not have leaks. If there are leaks or broken/missing components, they can usually be easily fixed. Replace missing or damaged drain screens. If a leak is coming from where the waste joins the sink, replace the washers and O-rings. If the leak is coming from the handle, then the handle itself needs replacing. However, if the unit is leaking in multiple places, the entire waste will need to be replaced.
