Geraldine Dorman, Honorary Regent of Cooch's Bridge, Daughters of the American Revolution led the Pledge of Allegiance. Rev. Christopher Paul Keene, Immanuel’s Rector, and Rev. Annalie Korengel, from Unionville Presbyterian Church led the invocation and benediction respectively. Inclement weather brought the bell ringing indoors.

New Castle County will break ground on the Route 9 Library and Innovation Center near Wilmington in September.The $22 million library is primarily geared toward kids, and will contain a Lego room, a writing center for young people called the scriptorium, and a sensory room to accommodate children who have autism.The library won't be entirely designed for young people. WE ARE BACK FOR OUR 5TH SEASON!

Just As Tangy and Delicious as The Classic, but this one’s a Little Different

Ingredients• 3 medium zucchinis, ends

removed• 2 scallions, chopped• 2 cups plain Greek yogurt• 2 tablespoons freshly

squeezed lemon juice• 2 tablespoons fresh dill,

chopped• 1 tablespoon extra-virgin

olive oil• 1/2 teaspoon garlic powder• kosher salt and freshly

ground pepper, to taste

Directions• Take your zucchinis and, in a

food processor or with a grater, grate them into small shreds.

• If there’s excess moisture, wrap zucchini in a paper towel and squeeze out in the sink, before transferring to a large bowl.

• Add scallions and fold in Greek yogurt and dill.

• Season tzatziki with lemon juice, olive oil, garlic powder, salt and pepper, then taste and adjust seasoning, if necessary.

• Refrigerate for at least 20 minutes, or until ready to serve.

When you need a cool and refreshing appetizer - it just never fails to deliver! Normally, this Greek classic is made up of strained yogurt, cucumber, dill and lemon juice.This version is a bit different from the traditional. Cucumbers can add an awful lot of moisture and it can sometimes be a pain to drain them and make sure that they don’t make the final result too watery. Because of this, we thought we’d try switching out the main vegetable for...zucchini!

Try making tzatziki both ways for two tasty treats for summer entreating .

1.5  oz  Cachaca  •  1  lime,  cut  in  half1  tsp  of  sugar  •  3  slices  of  jalapeño  (2  for  drink  and  1  for  garnish)½  cup  of  watermelon,  chopped3  watermelon  balls  •  ½  cup  of  iceGarnish:  watermelon  balls,  jalapeno  slice,  and  sugared  rim

instructions:In  a  metal  mixing  glass  combine  cachaca,  lime,  sugar,  and  jalapeño.  Add  ice  to  serving  glass.  Muddle  mixture  and  strain  into  serving  glass.  Blend  chopped  watermelon  until  it  is  in  a  liquid  form.  Strain  watermelon  mixture  into  serving  glass.  Stir  mixture.  Garnish:  watermelon  balls,  jalapeño  slice,  and  sugared  rim.
