kNOW yOUR INGREDIENTSFLOUR & OTHER GRAINS
ALL-PURPOSE FLOUR All-purposeflourisablendofrefinedhardandsoftwheatfloursideallysuitedformakingquickbreadsandcakes.
BRAN Bran(unprocessed)iscoarseouterportionofwheatorryegrainsthatisseparatedfromflourbysiftingorbolting.Itisoftenaddedtobreadinsmallquantitiesfornutritionalenrichment,heartinessandflavor.Itisalsousedtoenhancebreadtexture.
BREAD FLOUR Breadflourtypicallyhashigherglutenconcentrationthanall-purposeflour.Usingbreadflourwillproduceloaveswithbettervolumeandstructure.
CORNMEAL AND OATMEAL Cornmealandoatmealcomefromcoarselygroundwhiteoryellowcornandfromrolledorsteel-cutoats.Theyareusedprimarilytoenhanceflavorandtextureofbread.
CRACkED WHEAT Crackedwheathasverycoarsetexture.Itcomesfromwheatkernelscutintoangularfragments.Itgiveswholegrainbreadsanuttyflavorandcrunchytexture.
RyE FLOUR Ryeflourmustalwaysbemixedwithhighproportionofbreadflour,asitdoesnotcontainenoughglutentodevelopstructureforhigh,even-grainedloaf.
SELF-RISING FLOUR Self-RisingFlourisNOTRECOMMENDEDforusewithyourbreadmaker.Self-risingflourcontainsleaveningingredientsthatwillinterferewithbreadandquickbreadmaking.
7 GRAIN CEREAL BLEND 7graincerealblendisablendofcrackedwheat,oats,bran,rye,cornmeal,flaxseedsandhulledmillet.Itisusedprimarilytoenhanceflavorandtextureofbread.
VITAL WHEAT GLUTEN VitalWheatGlutenismanufacturedfromwheatflourthathasbeentreatedtoremovenearlyallofthestarchtoleaveaveryhighproteincontent.(Glutenistheproteininwheatthatmakesdoughelastic.)VitalWheatGlutenisavailableatmosthealthfoodstores.Itcanbeusedinsmallportionstoincreasevolumeandlightentexture.
WHOLE WHEAT FLOUR Wholewheatflourismilledfromtheentirewheatkernel,whichcontainsthebranandgerm.Thishighfiberflourisricherinnutrientsthanall-purposeorbreadflour.Breadsmadewiththisflourareusuallysmallerandheavierthanwhiteloaves.Manyrecipesmixwholewheatflourwithbreadflourorvitalwheatglutentoproducehigher,lighter-texturedbread.

TIPS ON FLOUR STORAGEKeepflourinasecure,airtightcontainer.Storeryeandwholewheatfloursinarefrigerator,freezeoracoolareatopreventthemfrombecomingrancid.Allowflourtocometoroomtemperaturebeforeusing.Note: Flours,whilevisiblysimilar,canbeverydifferentinhowtheyareground,milled,stored,etc.Youmayhavetoexperimentwithdifferentbrandsofflourtohelpyoumaketheperfectloaf.SeeRECIPE TIPStoassistwiththeseexperiments.
yEASTActiveyeast,throughafermentationprocess,producescarbondioxidegasnecessarytomakebreadrise.Yeastfeedsoncarbohydratesinsugarandflourtoproducethisgas.Threedifferenttypesofyeastareavailable:fresh(cake),activedryandquick-acting.Quick,rapidriseandbreadmachineyeastsarequick-acting.Fresh(cake)yeastisNOTRECOMMENDEDforusewithyourbreadmaker.
TIPS ON yEASTEnsureyouryeastisfreshbycheckingitsexpirationdate.Ideally,yeastshouldbeusedseveralmonthsbeforetheexpirationdate.Onceapackageorjarofyeastisopened,itisimportantthattheremainingcontentsbeimmediatelyresealedandrefrigeratedorfrozenforfutureuse.Oftendoughthatfailstoriseisduetostaleyeast.

BAkING POWDER Double-actingbakingpowderisaleaveningagentusedinquickbreadsandcakes.Thistypeofleaveningagentdoesnotrequirerisingtimebeforebaking,aschemicalreactionworkswhenliquidingredientsareaddedandagainduringbakingprocess.
BAkING SODA Bakingsodaisanotherleaveningagent,nottobeconfusedorsubstitutedforbakingpowder.Italsodoesnotrequirerisingtimebeforebaking,aschemicalreactionworksduringbakingprocess.
EGGS Eggsaddrichnessandvelvetytexturetobreaddoughandcakes.Whenrecipecallsforegg(s),largeegg(s)atroomtemperatureshouldbeused.
FATS Butter,margarineandoilshortenortenderizethetextureofyeastbreads.Frenchbreadgetsuniquecrustandtexturefromthelackofaddedfat.However,breadsthatcallforfatstayfreshlonger.Ifbutterisuseddirectlyfromrefrigerator,itshouldbecutintosmallpiecesforeasierblendingduringkneadingprocess.
LIQUIDS Allliquidsshouldbewarm80ºF/27ºCto90°F/32°Cforallrecipes.Liquids,suchasmilk,wateroracombinationofpowderedmilkandwater,canbeusedwhenmakingbread.Milkwillimproveflavor,providevelvetytextureandsoftenthecrust,whilewateralonewillproduceacrispiercrust.Vegetableorfruitjuicesandpotatowatermaybeusedforflavorvariety.
SALT Saltisnecessarytobalanceflavorinbreadsandcakes;italsolimitsgrowthofyeast.Changingtheamountofsaltinagivenrecipemayresultinshorter,gummierbread.Whenfirstmakingatypeofbread,donotincreaseordecreaseamountofsaltshownintherecipe.
SUGAR Sugarisimportantforcolorandflavorofbreads.Italsoservesasfoodforyeastsinceitthesupportsfermentationprocess.Recipesinthisbookthatcallforsugarrequiregranulatedsugar.Important: Do not substitute powdered sugar. Artificial sweeteners cannot be used as substitute, as yeast will not react properly with them.

BREAD PAN TIPSInserting bread panNote:Remembertoinsertkneadingpaddlesfirst,thenaddallingredientsintheorderlistedBEFOREinsertingthebreadpanintobakingchamber.Important: Collapsible kneading paddles may fall when ingredients are added. This is normal. They will stand up when kneading begins.• Wheninsertingbreadpanintobreadmaker,makesureto
setfirmlyinplace.Removing bread pan• Toremovebreadpanfrombakingchamber,holdhandlewith
anovenmittandliftstraightup.Important: When you remove bread pan after baking, be sure to wear oven mitts to prevent burning. • Afterremovingloaf(byturningbreadpanupsidedown
andshakinggently),checktoseethatkneadingpaddleisremovedfromloaf.Ifitisstuckinbread,allowbreadtocool;thenusethepaddleremovalkeytoremoveit,takingcarenottoscratchthekneadingpaddles.Allowbreadtocoolbeforeremovingthekneadingpaddles.
CHECkING DOUGH CONSISTENCyAlthoughyourbreadmakerwillmix,kneadandbakebreadautomatically,whenbakingbreadfromscratch,itisrecommendedthatyoulearntorecognizeconditionofyourdough.Theratioofflourtoliquidisthemostcriticalfactorinanybreadrecipe,yetthemosteasilyremedied.After5to8minutesinKnead2,openbreadmakertocheckconsistencyofdough.Doughshouldbeinasoft,tackyball(feelstickylikescotchtape).Ifitistoodry,add1tsp.ofliquidatatime.Ifitistoowet,add1tbsp.offlouratatime.

Important: Remember, bread pan and loaf are both very hot! Be careful not to place either on tablecloth, plastic surface or other heat-sensitive surface that may scorch or melt.
USING yOUR BREAD MAkERNote: Dependingonthecycleorrecipeused,somestepsmay
notapplyortheremaybeadditionalsteps.Refertotherespectiverecipesinstructionsintherecipesportionofthisbook,aswellasthespecificcycleinstructionslocatedattheendoftheseusageinstructions.
1. Openlidandremovebreadpan.Liftbreadpanstraightupandoutusingthehandle (B).
Caution: Do not turn or shake bread pan while taking it out. If the bread pan is bent, temperature sensor may not work properly.2. Positionkneadingpaddleonthe
driveshaft.Matchflatsideofdriveshafttoflatpartofholeinkneadingpaddle (C).Makesurepaddleissecure.
3. Placeingredientsintothebreadpan.Note: Asyouaddingredientsinto
thebreadpan,thecollapsiblekneadingpaddlesmayfall;thisisnormal.Paddleswillstandupautomaticallyoncethecycleisstarted.
Important: Add ingredients to bread pan in the order listed in the recipe.Important: Always add yeast last.
4. Makesmallindentationontopofdryingredients(notsodeepitreachesthewetlayer)andaddyeast (D).
Important: Indentation for yeast is important, especially when using the delay bake timer. It keeps yeast away from the wet ingredients until the kneading process begins. (Liquid ingredients will prematurely activate the yeast.)5. Insertthebreadpanintothebaking
chamber (E).Pressdownonrimofbreadpanuntilitsnapssecurelyintoplace.
6. Closethelid.Ifyourrecipeincludesextraingredientssuchasfruitsornuts(listedaftertheyeastintherecipe),addthesetotheautomaticfruitanddispenser.
Important: Do not exceed 2/3 cup capacity.Important: Do not pour liquids or spices into dispenser. Always make sure fresh fruit or vegetables are not wet; pat dry before putting them in the dispenser.7. Plugintostandardelectricaloutlet.Breadmakerwillbeep

SLICING AND STORING BREADForbestresults,placebreadonwirerackandallowtocoolatleast20minutesbeforeslicing.Useelectricknifeorserratedknifeforevenslices.Storeunusedbread,tightlysealed(sealableplasticbagsorplasticcontainersworkwell)atroomtemperatureforupto3days.Forlongerstorage,(upto1month)placebreadinsealedcontainerinfreezer.Sincehomemadebreadhasnopreservatives,ittendstodryoutandbecomestalefaster.Leftoverorslightlyhardenedbreadmaybecutinto½-inchor1-inchcubesandusedinrecipestomakecroutons,breadpuddingorstuffing.
