Independence Edition - July & August 2011
Isn’t it a great time to be a Member of Greystone! Symphony on the Green was a huge success with close to 1,500 people in
attendance to enjoy the Alabama Symphony Orchestra. Brad Rankin and Sue Nuby are to be commended for their efforts in making the event one of our Club’s finest moments. Thank you to all member donors: Ann & Don Capps, Mark & Brenda Sheehan, Brad & Mary Rankin, Rodney & Janice Folmar, Roy & Cathy Sewell, Bob & Susie Gaston, Tom & Ellen Staner, Paul & LaRue Carter, Maurice & Sue Nuby, John & Jennifer Johnson, Roy & Cathy Holladay, Mark & Barbara White, John & Anita DeStefanis, Robert & Julie Kim, Carolyn Haynes, Sonny & Judy Hornsby, Vic & Janis Nichol, Tom & Pam Miller, Brad & Candice Rosenwald, Van & Laurie Major, Wes & Heather Burton, Ray & Glynis Burrow, Quinton & Stephanie Gurley, Steve & Janet Barlow, Patrick & Jodi Ward, Sam & Louise Mango, Bob & Pat Hilton, Manny & Maria Orfanon, Butch & Deborah Flatt, Donna Francavilla, Carol Hinshaw and Dan & Dorothy Lyles. The 11th annual Greystone Invitational headed by Tournament Chairman, Tom Ramsey, Housing Chair, Deanna Natale, and Volunteer Chair, Manny Orfanon, again made the tournament one of the premier amateur golf events in the country. The attention and notoriety this event brings to Greystone is unparalleled.
The next Town Hall Meeting will be Tuesday, July 12th at 6:00 pm in the Founders Clubhouse Main Dining Room. There will be several important issues discussed such as the Master Plan, Club finances, golf courses and Club functions and facilities. Members and spouses are encouraged to attend and provide feedback.
All Club areas are in full swing with the great summer weather. Hard tennis courts are close to becoming a reality, the Gators Swim Team is chomping through their opponents and having a great time. There’s always something fun going on at the pool. July pool events include Dive-In Movies every Friday night and Summer Saturday Cookouts every Saturday, weather permitting. Plans are underway for the Fallen Heroes charity event scheduled for spring 2012. This event is very special in that wounded war veterans participate in the festivities and proceeds benefit the Alabama National Guard Foundation. Greystone Foundation’s broader mission has also contributed to Hannah Home and Children’s Hospital. Contact Missy McCabe, Executive Director, at [email protected] to get involved in the event. Congratulations to the Membership Marketing Committee chaired by Jay Carter and Ashley Fuentes, Membership Director, for their very successful Passport Program. The program has brought over 30 new members to the Club, with more coming soon. You will see other programs from this group that will drive more new memberships in the future.
Thank you for all that you do,
Allen Franklin

Dear Member, Sizzling! Wow, our beautiful spring turned into the dog days of summer! Since we do not have input on the weather, we should just take advantage of the outdoor activities. 4th of July Celebration is a longstanding Greystone tradition. As in years past, plan your day around all of the activities at your Club.
Festivities include: Flag Day Tournament, Tennis Mixer, games at the pool, Radio Flyer Parade, Barbecue Buffet and to cap off the day’s activities... the famous fireworks show! Reservations are required to dine inside the clubhouse for the BBQ Buffet. Don’t be left out - come early and stay late! See page 10 for further details. Member-Member Golf Tournament - One of the Club’s premier events! The tournament will be July 16th and 17th at Founders and Legacy. This is a great time to play with a friend and fellow Greystone golfer. Register as a team online at www.greystonecc.com by Tuesday, July 12th. Dive-In Movies - Attendance for the first couple of movies has been incredible! Make plans in July to be a part of these fun-filled Friday night events. The Aquatics Team will send you a text notification if the weather will not allow the event to occur. Register to receive text notifications on the Greystone website homepage. Food & Beverage - There continues to be positive modifications in the Food & Beverage area. Alan Dobbs, Director of Food & Beverage, the House Committee and F & B Team appreciate your feedback, compliments and constructive concerns. One of the positive comments that we continue to hear is about the “waiter service” at the pool. This has really alleviated some of the wait times! Over the last several months, the House Committee and staff have reviewed Sunday Brunch, Friday Lunch Buffet and Family Night. In an effort to provide the programs that you want and support, the Club will host one special Sunday Brunch each month. This event will consist of entertainment, drink specials and action stations focused on brunch foods. Also, we will discontinue the Friday Lunch Buffet during the remaining summer months as attendance consistently dips to less than twenty people each Friday. For more on the Food & Beverage program, see page 9. 5K - Greystone’s 7th annual 5K and 1 Mile Fun Run in support of ovarian cancer research will be held on August 13, 2011. This is a great family memory-building event. To register and/or for sponsorship information, contact the Fitness Center at 986-5139 or Founders Front Desk at 986-5120. See page 6 for more on this special event. Membership - Please welcome the 38 Members who joined Greystone in May and June. The June nominees list was the largest one month group in over six years! (Maybe the economy is improving!) On a personal note - Our son Marshall goes to college, Auburn University, on August 13th. As all of you college parents know, there are mixed emotions about this event and life opportunity. This is one more step towards a boy becoming a man!
Enjoy your summer,

STEVE SMITH • Director of Golf As with all things in life, there comes a time when we all need a little reminder. Lately, I’ve had a few people ask me to address a few different issues regarding etiquette and care of the course.
Raking bunkers– It’s not that people aren’t raking bunkers at all, but that the job that’s being done is not thorough. Make sure that when you rake a bunker you take the time to make it better than when you got there. I use this little tip: smooth the footprints out by raking toward you and then finish raking by gently raking away. This will leave the bunker in a perfect condition for the next golfer. Cell Phones- Especially at the practice areas, talking on a cell phone can be very bothersome to others around you. While it seems very innocent, it can be distracting to others who are trying to concentrate. Next time you have to take that phone call at the range or putting green, please find an area that is removed from others to have a conversation. Others around you will truly appreciate it. Checking in before play- We are having a real problem with people not checking in before they play. In order for us to work in an effective manner and know what is going on on the golf course, it is imperative that all golfers check-in at the golf shop before they play. The amount of man-hours spent verifying charge tickets for people who haven’t checked in continues to grow as people do not check in to sign their tickets before teeing off. Now for some encouraging news- Rounds of golf are up! We are currently 1,500+ rounds up YTD over last year. Each round of golf at Greystone provides approximately $10.00 in merchandise sales, not to mention food and beverage. Great job to all who help make those rounds add up! Please remember, our desire is to provide a one-of-a-kind experience when you are out here at “the Stone”. We all have to do our part to make it work. Thanks for making Grey-stone great. In fact, I think we should call it... Greatstone!

HANK JOHNSON • School of Golf “Our primary goal is to provide the best golf instruction for Greystone members and guest. In this regard, several new initiatives are currently underway. At the heart of these new programs is the TaylorMade Performance Lab (TMPL). This
comprehensive evaluation facility can assure that you are on a program to fully develop your potential as a golfer. The TaylorMade Performance Lab (TMPL) is a state-of-the-art fitting experience that uses 3D motion capture technology. This is the same technology used in the club fitting process for all TaylorMade Tour Staff Professionals. This unique experience at Greystone Golf & Country Club is the only of its kind in Alabama. For more information or to schedule your personalized fitting, please call 986-5129 or email [email protected].
The first session of the Junior Summer Series of 2011 was a great success! Everyone had a great time as we incorporated elements from our upcoming TPI Junior Long Term Athletic Development program. Here are some comments from parents and participants:
“Golf is super fun!!!” – Sam
“Wow! Did you see that shot?!” – Connor
“Can we go play on the course?” - Brooks
“Y’all must be doing something right. My daughter couldn’t wait to come back the next day!” – Parent
“I did much better than I thought I would” – Jackson
“My son really loves golf now!” – Parent
Unfortunately our July session is already filled. If there is enough interest we may add a third session. If you would like more information regarding a third session please contact Scott Hassee at 205-529-8546 or [email protected]. The new TPI Junior Development Program is a revolutionary concept that will contribute to the development of elite junior golfers at our Club for years to come. The Hank Johnson School of Golf is proud to announce the launch of a TPI Junior Long Term Athletic Development (LTAD) program at Greystone in July 2011. This is the only TPI Junior based program offered in Alabama. TPI (Titleist Performance Institute) has created a junior golf development program that is based on extensive research in Long Term Athletic Development. The philosophy is based on developing children as athletes first and golfers second. Participants in this weekly program will learn FUNdamental Movement Skills as well as Golf Specific Skills at the appropriate developmental age. We develop golfers by teaching your children specific skill sets based on their biological/developmental age as opposed to chronological age. Our aim is to help promote a life long love for golf amongst the juniors here at Greystone. This weekly program will meet every Tuesday evening from 4pm to 5:30pm. The cost will be $150 per month with a one time registration fee of $100. Sibling discounts are available. For more information about this program, please contact Siew Ai Lim at 205-914-7888 or [email protected].
As I write this article we have had less than 1” of rainfall in the last 45 days and it has been 95 degrees plus the last 13 days, making for drought conditions. During this time, our irrigation system operates 4 to 5 nights per week.
This alone cannot keep turf from browning. Portable sprinklers and hand watering are a daily task. Our irrigation lake is fed by a single well with an output of 432,000 gallons per 24 hour period. Our daily usage can be as high 800,000 gallons. Because our demand is higher than our inputs, managing the existing supply is paramount. I hope that by the time you read this article we will have received beneficial rains. Following the Member-Member Tournament, the course will be aerified July 18th - 28th. We will be verticutting greens at 1/8”deep and pulling 1/2” cores. The holes will be larger than those pulled in late May. We will also be deep drilling greens during this time. Drilling is a way to create channels 10” deep that helps with compaction, water infiltration and gas exchange. Our aerifiers will only reach a maximum of about 4”. This is a tool to use in conjunction with core aerification, but is not meant to replace it. While we are closed, fairways will be aerified with a slicing machine and cores will be pulled on tees and approaches. Be sure to check the blog for updates of the drilling machine in action.
Upcoming Projects & Events:
Growth regulators will be continually used every 3 weeks on fairways, tees and the driving range.
Sunken areas near drain basins will be repaired in the driving range.
Greens will be on a steady diet of light verticutting and topdressing.
Preventative maintenance on the pump station is scheduled for August.
Fairways will be verticut each month. Sodding select tee boxes on #’s 5, 6 and 14. Greens will be vented every 2 weeks using 1/4" tines (little
to no disruption in playability). Dead tree removal and #4 dump clean up. Broken areas of cart path and curbs will be replaced in
various areas around the course.

RUSTY HOWARD • Founders Course JASON MILLER • Legacy Course This summer has gotten off to a very hot and dry start. We received a record low amount of rainfall for the Legacy Course in May (.62”) and have yet to receive any rain 9 days into June. Our water supply is getting tested early. We have
begun supplementing our night watering by hand watering isolated dry areas on tees and fairways in order to help conserve water.
The arrival of summer also means that bentgrass greens are entering their peak stress season. In order to combat the stress, the greens fans have now been turned on, wilt watchers are out on a daily basis, and we will be venting the greens every 2-3 weeks to allow movement of air, water, and gases in the greens profile. I would like to ask for your patience with the wilt watchers on greens. They have a difficult task and one that is very important to the health of the greens!
Upcoming Projects & Events:
Venting rotation on greens (every 2-3 weeks). Tee and fairway aerification. Verti-cutting of tees and fairways (every 2-3 weeks). Herbicide applications on bermuda encroachment in
fairways (monthly).

It’s summertime in Alabama and it’s scorching hot! But the hot isn’t always a bad thing. It makes swimming a necessity, napping a survival technique and procrastination a viable excuse. From the culinary side, it also brings back the flavor into our vegetables and fruits. I want to share three of my favorite summer vegetables and tips for preparing them. Maybe after reading about them you’ll cook with them and share your experience with me.
There are many types of lettuces and greens for salads and each bring to the table something a little different. Arugula is a leaf that can be used with salads, sandwiches, sauces or even a garnish. A basic rule of thumb is the larger the leaf, the more peppery the flavor. Arugula can be a tad bitter, so it’s always good to use a citrus dressing when using it as a salad. Try it tossed with a lemon vinaigrette, red onions, your favorite savory cheese and candied pecans for a wonderful summer salad. Eggplant is one of those, “hate it or love it” foods. I personally love it. A simple grilled eggplant with oregano, salt and pepper is a great side dish for a lunch or dinner. You can also roast slices topped with tomatoes, bell peppers and mozzarella for a heartier main dish. There are many varieties, sizes and colors of eggplant, so if you are a “hate it” person keep trying one until you become a “love it” person. The last of my three headliners are cucumbers. I think I like them so much in the summer because of how refreshing they are. Cucumbers consist of primarily water, so when you’re hot and dehydrated, they’ll put some life back in you. Cucumbers aren’t just a salad topping either; put some slices on your favorite sandwich. Marinate some with tomatoes, fresh herbs and onions and you may just become a cucumber fanatic. I hope my passion fuels your culinary adventures and may all of your arugula be fresh, eggplant fulfilling and cucumbers crisp. Bon Appétit!
ALAN DOBBS • Food and Beverage Enhancements As Mr. Bolling mentioned in his article, we have been doing quite a bit of research & study of the current events that we are offering and the overall value of each. After reviewing all the data collected, the House Commit-tee, management and the F & B staff are implementing several major changes. These changes will allow us to provide a higher caliber program rather than simply providing something to eat, while at the same time maxi-mizing your resources and reducing expenses. The following are the changes you will see beginning in July:
Sundays at Founders – New & Exciting options - The success of the Southern Style Meat & Three at Legacy continues to exceed the capacity of The Falls on a normal basis while our average Founders Sunday Brunch numbers are stag-nant. Bringing this menu to Founders should allow for everyone to enjoy this favorite. Along with this new addition we will also be offering a breakfast action station that will include omelets & waffles, a salad bar & dessert display and a “Club Special” menu featuring our most popular lunch items along with kid approved items. These different platforms will allow you to tailor your dining experience to what you want, Sunday special with salad & dessert, salad & dessert only, breakfast with salad & dessert, or a club favorite with salad & dessert. It’s your call. Our hours will also be chang-ing to 11:00 am - 3:00pm.
Last Sunday of the Month at Founders – On the last Sunday of each month we will bring to you an extravagant & entertaining brunch. Chef Daniel and his talented staff will continue to create a fabulous brunch display which they are already known for. In addition to these culinary delights we will also add more action stations, not only including omelets and waffles but others such as carving stations, crepes and others. Along with these wonderful offerings we will be adding a “build your own bloody mary” bar filled with all the goodies needed to create your own classic, just the way you like it. We will also be offering our signature bubbly cocktail menu along with a complimentary welcom-ing glass of bubbles upon arrival. Live music from Good Fellows & Friends will complete your afternoon. Hours – 11:00am – 3:00pm.
Legacy Sunday Menu – As many of you know we have a wonderful “looking” grill to the left of The Falls patio. While beautiful in appearance, in its current state it is highly unfunctional. Efforts are under way to change this, including the addition of a large charcoal burning grill and refrigeration to provide higher efficiency and to properly store in-gredients. As this transformation occurs we will be unveiling an “Off the Grill” menu for Sunday lunch. Salad bars and a baked potato bar are just a couple of the exciting things that will also be in the works.
Thursday Family Nights – The second Thursday night of each month will feature a culinary themed menu. You will en-joy an extensive array of offerings tied to one specific food theme. Themes such as “Naturally N’ Awlins” & “Pizza & Pasta.” The other family nights of the month we will continue to offer our awesome family style buffet but will also be offering two to three Chef’s Specials off the grill along with a salad bar & dessert display. This again will offer you more & different options to enhance your family night. See your weekly e-news for family night menus.
While change is often much needed, it does come with challenges. We are doing our best to improve every aspect of the food & beverage service here at Greystone. Will we execute all the changes perfectly every time? Certainly not. However we will remain relentless in our efforts to enhance your enjoyment and use of your Club! Reminder: Jeans (provided that they are not baggy, frayed, torn or stained) are permitted 7 days a week in all dining areas; however, we prefer a bit nicer attire on Sundays and for Falls Dinner. Jeans being allowed 7 days a week has been very well received at Greystone. A special thanks to the House Committee for implementing this successful program.
