March Reps Webinar Meeting
The Reps March Webinar Meeting was held on March 20.. (Reps Webi-nar Meetings are the third Wednes-day night of Jan, March, May, Sept and Nov. and the annual Reps Meet-ing is held the 2 days prior to conven-tion.)
Not too much was discussed at this meeting but here are the highlights.
• We were informed that there will be By-law changes coming but they didn't explain what is changing yet. These proposed changes will be published in an upcoming ICES Newsletter to inform all members. It will be voted on at the general membership meeting at Conven-tion. Make sure to read any upcom-ing issues of the digital ICES news-letter.
• Sugar Artist Certification Test-ing will be changing to every other year following the 2019 Convention. Currently it was offered every year.
• I made a motion to reinstate the Gold Key Membership reduced rate to $35.00. Gold Key Members are those who are 60 yrs. and older and have been a ICES Member for at least 15 consecutive yrs. Current-ly there are 84 Gold Key Members in the organization.. Previously, it was $10 less than the general mem-bership rate, prior to going all digi-tal. Now it's the same as everyone at regular rate of $45. It was ap-proved by the Reps but now it will be sent to the BOD and it be pre-sented, discussed and then voted on. I don't think it will make it but maybe there is a chance.
• Show Directors were not pre-sent for this meeting but Jan Wolfe reported for them. Volunteer Sig-nup will be open April 1. A blast email will be sent out to advise eve-ryone when it's open on the Con-vention website. If you are interest-ed in volunteering at convention, it’s best to sign up early and hope-fully receive assignments you re-quest.
• This year's charity for conven-tion is Women and Children First, an organization fighting against do-mestic violence.
• Currently there are 140 regis-tered for convention as of March 20. Early Bird registration ends April 15. Take advantage of the best rate if you are planning on attending con-vention.
• Challenges are open. They are Wedding Cake, Live Relay Team, Bling Bag Fashion Show, Mystery Box Cookie (limited to 10), Tasting (limited to 10) and the Step Chal-lenge. This year instead of a medal-lion, the Step Challenge will be changing to a pin and bar recogni-tion. The pin will be in the shape of a gym shoe with ICES logo and the year bar for each year you do it, starting with 2019.
• The Convention is looking for Sponsorships within our organiza-tion. Two chapters-MA and TX, have already supported the conven-tion by making a donation. A few mentioned last night that they were going to do it for their chapters. If a state/chapter makes a donation by May 15, their name will be acknowl-edged in the souvenir book and on
a sign at convention. Is this some-thing we'd like to do for ICES in IL ICES's name? Please send your com-ment to me. We don't have a meet-ing prior to May 15 to ask our mem-bers and vote on.
• They are looking for nomina-tions to the Board of Directors-anyone interested???
• Tina Crews, Rep Liaison, re-minded all about being compliant with following all rules in submit-ting our reports, chapter officer contracts and anything that is re-quired by the Board and By-laws. There will be no exceptions.

standardizing the State/Chapter
Elections, so every state/chapter
has their elections at the same time
every other year. Right now, the
reps/alternates/treasurers and sec-
retaries, all have to fill out the con-
tracts each year after convention,
This would mean, you'd only have
to do it once per 2 yr. term, rather
than each year. They want the elec-
tion date changed to it's before the
annual convention, so the new Rep
may attend the Reps Meeting and
sign up by the early bird date. If
that happens it would mean our
next IL ICES election would be
moved up a few months in 2020.
Nothing worry about now- it defi-
nitely wouldn't happen for this
coming year-if it does change. Re-
member, it’s just in the talking stag-
es, they were just giving us a heads
up.

Is it Spring yet? We all hope it’s here to stay, welcoming us with sun-shine and warm days.
As we close the chapter on the first quarter of 2019, let’s recognize Donna Wagner for hosting our Win-ter DOS on Feb 22. As usual, Donna knows how to plan and execute a day filled with fun demos, lining up something for everyone. We had a great turnout with 38 members/guests, with one coming from Cali-fornia! Thanks to all the demonstra-tors- Barb Evans, Kristi Caccippio and Mary Buscemi and the team of volunteers that helped make the day a huge success. Thanks Donna, for the awesome DOS and for influ-encing more of your students to join ICES. Way to go!

newsletter regarding her DOS fea-turing Guest Demonstrator, Glenda Stockwell, plus additional demon-strators, in Elk Grove Village. At this DOS, we will be drawing for our annual raffles- Free Membership renewal and the Early Bird Conven-tion Registration, plus more. So plan on attending , you’ll get anoth-er raffle ticket just for coming and maybe you’ll be a lucky winner that day!
Reminder for Door Prize Winners at Feb DOS –Your DOS Certificate stated for April DOS but those are good for this June 2 DOS…so pull out your certificates and mail them in with your registration form and remaining fee to Denise. A little birdie shared some upcom-
ing event information. The Wilton Outlet Sale is in the works for the month of June at the previous loca-tion in Naperville, IL on Rt 59 at Au-rora Ave. Look for more infor-mation on the Wilton website around the first week of May for the actual dates and store hours. It will be posted once everything has definitely been confirmed. The bar-gains will be waiting for you!
Linda Kelsey, will be planning her DOS on August 28 at the Wilton School in Darien, IL. The hunt for a great white shark, oops, no it’s real-ly the great white cake recipe will be one of the main challenges of the day. Stay tuned for more infor-mation to come.

February day Of Sharing Follow Up by Donna Wagner
The second demonstration was a
fun cake topper by COD’s own
Kristi Caccippio. A graduate of
COD, Kristi creates beautiful, fun
cake toppers to sell online. She is
a very talented young lady and we
hope to have her demo her talent
again in the future.
Lunch was served in the Silverleaf
room and consisted of hot soup,
sandwiches, salad, a chocolate
brownie sundae, plus cookies and
a yellow buttercream cake.
“Thanks ladies” for your help!
The afternoon started with a busi-
ness meeting and then we were on
to more demos. Mary Buscemi did
an excellent job of showing us
how to make many different types
of Fondant flowers. She makes it
look so easy and what a neat way
to put them on a stem! I’m going
to try that…
Mary Gavenda finished the day’s
demo with Geode Cookies. What
a fun new way to decorate cookies
and they are so pretty with all the
colors and sugars. I’m going to
send pictures to my granddaughter
who has a good cookie business in
Indianapolis. After a fun raffle,
cleaning up and folding tables, we
finished the day and got to go
clean snow and ice off our cars,
head home, and think about all we
saw and need to try.
As always, Day of Sharing could
not be accomplished without help
from many people. “Thank you”
to my number one helper Nancy
Farber, who helped any way I
needed her. Also, thanks to the
Chambliss family who helped set
up the tables and
chairs on Satur-
day. “Thank
you” to the many
wonderful folks who worked right
up to the day its self.
A big “THANK YOU” to all who
helped in the kitchen and the tear
down. And, special thanks to
College of DuPage for letting us
use the room.
I hope everyone had a good time
and enjoyed the day! Now it’s
time to start thinking about DOS

and planning more exciting things

DuPage, Glen Ellyn, Illinois in the
Culinary Building, that came com-
plete with snow and ice! Next
year we will just keep quiet and
see what happens.
After a break-
fast of coffee,
rolls, juice and
fruit we started
the first
demonstration given by Barbara
Evans. She did a wonderful job of
showing and explaining the ins
and outs of Run Sugar Panels.
Not just a simple panel, but one
“over the top” with added lace,
etc. It was beautiful work and
worth learning how to do.

Illinois ICES Business Meeting Minutes 2/17/2019 By Lyn Gray
• Mary Gavenda started the business meeting welcoming new members, first timers, Pat a former member,
Thelma, the California ICES representative, the current chapter officers, and the demonstrators-Barb,
Kristi and Mary.
• She mentioned the opportunities for first timers if they joined while at their first DOS. IL ICES will put
$20 toward their membership fee. After having the first timers introduce themselves, Mary said that
there was a gift for each of them.
• Mary welcomed Thelma, the ICES representative from California. Thelma drove here, brought and do-
nated a tier cake stand that is one of the original stands to our raffle prizes.
• Business Meeting minutes from Oct. 21, 2018 , were motioned to approve by Ellen Pomes and seconded
by Donna Wagner. Motion carried.
• Treasurer’s report for the last quarter ending 12.31.2018 was motioned to approve by Cara Cap and Se-
conded by Pam Eggum. Motion carried.
• As of Feb.1 2019, IL ICES has 77 members! Special reminder to all members to make sure your mem-
bership is current by April 1 to be eligible for the Hank and Betty Steinman award which awards one IC-
ES Member $1,000 to be used to cover convention expenses.
• Mary discussed the convention and reminded about Early Bird registration beginning March 1 thru April
15. She explained about Hotel accommodations and various things about the convention changes. Print
out of Demos and classes, along with more information, were on the back table for all to see.
• We had a representation of 39 people today, which was good for the DOS. Annette from Missouri ICES
and Thelma, California representative says they only have 2 DOS meetings a year.
• Kathy Cheri had a suggestion about sharing bakers/decorators information on the website. It would help
others should they need a cake decorator somewhere else in IL. SO far one individual has given their
permission to be listed in the newsletter and/or website.
• DOS demo suggestions- white cake bake off and taste test; Chocolate Collars, sugar molding.
• The next day of sharing scheduled for April will be rescheduled to possibly August, due to holidays and
room availability.
• Kathy’s June 2 DOS will be in Elk Grove Village. There will be a guest demonstrator, Glenda Stockwell
from Missouri and Rebecca Stewart, plus more.
• Ellen Pomes shared her specialty multi purpose pan from the UK.
• Pam discussed her chocolate piñata stand is currently available at Aldi’s.
• Early Bird Drawing winner was Ryne Thacker.
• Motion to adjourn meeting was made by Kathy Cheri and seconded by Rebecca McGreal. Motion car-
ried.
• Door Prize –DOS Certificate winners for next DOS were Mary Gavenda, Barb Evans, Brianna Wills,
Anna Astaskina, Debra Friedman, Solomon Chambliss and Rebecca McGreal.

This scholarship award must be used for continuing education in the art of Cake Decorating and/or food art. At least 75% of the scholarship award may be used for actual class tuition and registration fees if applicable. Luscious Lemon Cake—Southern Living
8 egg yolks
3/4 cup butter, softened
1 1/4 cups sugar
2 1/2 cups cake flour
1 tablespoon baking powder
1/4 teaspoon salt
3/4 cup milk
1 teaspoon lemon zest
1 teaspoon fresh lemon juice
1 teaspoon vanilla extract Preheat oven to 375°. Beat egg yolks at high speed with an electric mixer 4 minutes or until thick and pale. Beat butter at medium speed until creamy; gradually add sugar, beating well. Add beaten egg yolks, beat-ing well.
Combine flour, baking powder, and salt; add to butter
mixture alternately with ¾ cup milk, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Stir in 1 tsp. lemon zest, 1 tsp. fresh lemon juice, and 1 tsp. vanilla. Spoon batter into 3 greased and floured 8-inch round cake pans.
Bake at 375° for 12 to 17 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes. Remove from pans to wire racks and let cool 1 hour or until completely cool.
Spread Luscious Lemon Frosting between layers of cake. Cover and chill until ready to serve.
Luscious Lemon Frosting
1 cup butter, softened
2 teaspoons lemon zest
32 oz powdered sugar 1 to 2 tablespoons half-and-half (optional) Beat butter at medium speed with an electric mixer until creamy; stir in lemon zest and juice. (Mixture will appear curdled.) Gradually add sugar; beat at high speed 4 minutes or until spreading consistency. Gradually beat in up to 2 Tbsp. half-and-half, if necessary, for desired con-sistency
