    I completed my Masters at Cranfield because I wanted to undertake a course which would

    prepare me for a career in the food industry. The course covered many important topicsrelated to the food industry and we were encouraged to link these together to form a wider

    concept of how the food chain is formed and what is involved in the manufacture and supply

    of food. I have recently accepted a technical position with a local food manufacturer and look

    forward to developing my career in the food manufacturing/ processing industry.

    Food Chain Systems MScAt Cranfield Health we conduct extensive industry-led research in

    the area of food quality. Working with major food producers and

    retailers, governments and global food producers we help to provide

    and sustain healthier, fresher and better food for consumers.

    This research has resulted in the development of our Food Chain

    Systems MSc a unique course that examines the whole of the food

    chain from pre-harvest to market through the integration of science,

    technology and management, with the overall aim of enhancing the quality

    and safety of food.

    The holistic approach of this MSc responds to the increasingly integrated

    food supply chain ('farm to fork') and will provide you with a detailed

    understanding of food microbiology, postharvest technology, diagnostics,

    risk assessment of food, supply chain management and nutritional aspects.Successful completion of the MSc will enable you to pursue a variety of opportunities

    available within food related sectors, including manufacturing, retailers, Government

    agencies, logistics and supply chain management and research institutions.

    The production and distribution of food,

    including agriculture, fisheries and relatedservices, is the largest and most important

    economic activity in the world. The health

    and welfare of people everywhere dependon good agricultural yields and on the

    reliable storage, successful processing and

    safe handling of all types of food. Food

    professionals work in many occupations

    including industry (manufacturing, retailing

    and food service), universities and schools,

    government, research and development,quality assurance and food law enforcement

    - but whatever their occupation, their

    overriding responsibility is to the consumer.

    All these activities, and many others, create

    a demand for well-qualified and experienced

    specialists who can play their part in the

    complex and increasingly sophisticated foodsupply system.

    What qualifications do I need to

    Food Science & Technology are science

    based subjects, so a good groundingin science subjects (including Food

    appropriate starting point, while in some

    instances mature students can make good

    some of the shortfall in their qualifications

    1. Passion for learning you must neverstop learning. Whether it be formal trainingin certain accreditation standards or even

    just new ways of working, it is essential thatfoodies keep learning. IFST is a great sourceof learning especially for those needing

    to maintain CPD (Continual ProfessionalDevelopment).

    2. Focus & specialism Taking a generalistdegree or one with limited food content maymean that you enter the industry withoutspecific or in depth knowledge of foodscience. Making a choice during your degreeto specify a route or choosing a degree witha clear job/discipline outcome helps secureemployment.

    3. Be realistic after you graduate, youwill not get a jobs as a manager. Thereis a ladder and it needs to be workedup. Dont under estimate starting at thebottom, learning the basics and building

    on this. Show eagerness and take on extraresponsibility and you will do well.

    4. Experience is everything take up everyopportunity to get as much experience bothpaid and unpaid during your degree. If thereis opportunity for work experience then do

    it. Think seriously about taking a sandwichyear. Most people can get a decent degreeclassification but what makes a CV standout in the pile is some great experience.

    5. Love food There will always be a UKfood industry because people dont justeat food to survive, they eat for pleasure.Remember that youre not making widgetsbut food for people to enjoy. There isnothing like the feeling you get when you

    see a product you worked on making itonto the shelf. Having pride in your workand a passion is what changes a job fromsomething you turn up to do into a careerand all the rewards this brings. n

    Food safety and nutrition experts at theUniversity of Central Lancashire (UCLan)have pooled their knowledge to forma research institute that will work in

    collaboration with industry bodies.

    The International Institute of NutritionalSciences and Applied Food Safety Studies(iINSAFSs) draws together expertise fromacross the University to advance thepromotion, teaching and research of foodsafety and nutrition.

    Staff within the Institute work closelywith organisations outside of the Universityincluding local charities, international NGOs,the food industry, environmental healthdepartments, and the NHS.

    The team has already built up a portfolioof successful projects and bids, a keyexample being the Abaseen Foundationproject, which won the Times Higher

    Education International Collaboration of theYear Award 2010.

    Dr Nicola Lowe, who co-directs theinstitute with Dr Carol Wallace, commented:

    Our vision for this new Institute is that it

    will provide an environment to enhance the

    synergy between academics within UCLan

    and external partners, that will enable us

    build on our international reputation andfurther develop our research, teaching and

    knowledge transfer activities in areas that

    have a practical application and can bring

    WHENI was at

    schoolI wassponsoredby my

    local Nestlefactory to

    go on the 6thform summer

    school at ReadingUniversity. I actually thoughtit sounded so good I did thedegree too!

    The lectures gave essentialbackground knowledge on ahuge range of subjects and thefocus on training in the foodIndustry really appealed to me.I had 4 placements in the foodindustry in quite different areas from canning to frozen fishpies, chocolate to live lobsters!

    I later joined the Marks &

    Spencer Graduate trainingscheme which continued my

    education and provided afantastic place to build up anetwork.

    I most enjoyed being in thefactory so after 3 years I wentto work for Katsouris FreshFoods as Quality Managerfor a large site. I faced thechallenge of managing a teamof 12 Quality Controllers andhandling day-to-day quality

    problems in a busy and variedproduction environment.Later I went to work for

    a privately owned sandwichbusiness as Technical Manager.In this role, I improved andupdated the quality systems,recruited a new team of Qualityauditors and was responsiblefor areas as diverse as budgets,

    customer liaison and training.I then went on to be

    Technical Manager for a Geestfactory in Spain making fruitsalads for M&S. I also learntSpanish and even got a tan!

    Today, I am TechnicalManager at Dominos PizzaGroup where I now haveresponsibility for food safety,legality and quality for allproducts, right from bought-infood and packaging ingredients

    to the fresh dough we make.Im constantly using all theknowledge Ive built up throughmy career so far and its neverdull!

    There are so manyopportunities in the foodindustry to keep developingyourself and others, it certainlynever gets boring. n

    WITHa chef as a father,food has always played an

    important role in my lifeand when I found out itwas possible to study FoodScience as a degree it seemedtoo good to be true. Here wasa way for me to combine thesciences I so enjoyed studyingwith my passion for food.

    I studied Food Science atReading University and reallyenjoyed the variety the course

    offered food processing,chemistry of food systems,microbiology, etc. The icecream practical particularlysticks in my mind!!

    My first job was with GlaxoSmithKline working on NPD(new product development)including the global Horlicksdrink. It was fascinating to see

    how differentcountries

    consumedHorlicks fordifferentreasons forenergy in somemarkets, to helpsleep in others.

    I moved toingredient supplier NationalStarch Food Innovation,heading up their Technical

    Service Team in the UK& Ireland. This involvedworking with customersin their developmentkitchens, attending trials intheir factories or analysingsamples of their products.We could work on any typeof food product custard,ready meals, pet food,

    cakes - making ita fascinating and

    challenging role.An internalmove withinNSFI took me to

    a European role,developing a portfolio

    of ingredients for use inthe Bakery industry. Travelto customers across Europehas taken me to places asfar a field as Kiev, Milan,

    rural France and Glasgow!A product I had developed,N-Dulge FR, was the winnerof Most Innovative FoodIngredient of the Year & theBakery Innovation of the

    Year Awards at FiE 2009, thehighest accolade in the FoodIndustry and something I amvery proud of.n

    POST Fellowship

    POST is the UK Parliaments in-house sourceof independent, balanced and objectiveanalysis of public policy issues relatingto science and technology, providinginformation to the Houses of Lordsand Commons. Food science is a multi-disciplinary area, and there are many diverseareas of close interest to policy e.g. globalfood production, nanotechnology, GM andfood labelling.

    Nancy Acosta won the IFST Fellowship towork at the Parliamentary Office of Science& Technology (POST) for three months. Thisis an account of her time there.

    I was a PhD Student at the Universityof Birmingham researching Food Safety,Hygiene & Management.

    POST asked me to provide the Members ofParliament (MPs) with impartial informationrelating to the importance of Food Hygiene

    Standards in Public Health. My main dutywas to write a short briefing document onFood Hygiene Standards, to anticipatepolicy implications for Parliamentarians.

    In my particular case, the briefing

    described the enforcement of a EuropeanCommission Regulation using a particularapproach and to examine the options toimprove food hygiene among businesses inthe UK.

    The work that I have done has vastlyincreased my knowledge of policy issues onfood hygiene. In order for me to compose anaccurate and up to date report, I interviewedpeople from vary ing national regulators

    and professional bodies. Meeting with allof these individuals gave me the abilityto extend my networking, which will beinvaluable when attending future seminarsand meetings.

    The opportunity of working within theUK Parliament really has been a dreamcome true and a big achievement for mepersonally. It has been a fascinating andinteresting experience, and as a member

    of Parliamentary Staff, I am given theopportunity to watch live debates andattend other meetings within the House.This is an opportunity that most people willnever get. n

    People are more concerned than ever abouthealthy eating, therefore having suitablyskilled and qualified food scientists and food

    technologists is vital to ensure that the food weeat is safe and of the highest quality.

    Being a food scientist or food technologistin the food manufacturing industry is exciting,varied and rewarding. If you love science andhave a keen interest in issues around foodpreservation, development and safety, one ofthese could be the career for you.

    Food scientists and food technologists havetwo separate roles but some duties of their

    jobs often overlap.

    What is a food scientist?Food scientists develop new food products,design processes to produce foods, packaging

    materials, study shelf-life and carry outmicrobiological and chemical testing. Foodscientists can also look at the production of aparticular food product and its properties.Food scientists are involved in many areasof food production, including: product development - the invention of new

    food products quality assurance of both raw materials

    and food products. For example, analysing

    ingredients as they enter a factory to makesure they have not come into contact withdangerous chemicals

    food packaging - the study of howpackaging is used to preserve food after it

    What is a Food technologist?Food technologists develop ways toprocess and package food to ensure safety,convenience and taste. They may also convertraw foodstuffs into food products within alarge and busy manufacture environment.As a food technologist you may work onexisting and newly discovered ingredientsand technologies to invent new recipes andconcepts, as well as modifying existing foods,for example ready meals and fat-free products.

    Your role may involve producing sampleproducts, as well as conducting experiments.

    You could also be involved in designing themachinery and processes for making productswith a consistent colour, flavour and texture.

    Main duties include: researching current consumer markets and

    latest technologies to develop new products

    checking and improving quality controlprocesses, from the raw material stagethrough to the finished product

    addressing issues of food safety and security supporting food inspection and hygiene

    agencies

    Having graduated with aMasters degree in Chemistryfrom Liverpool University,I chose to apply to UnitedBiscuits as it seemed a greatopportunity to use theskills I had acquired whilststudying in a fast-paced andprofessional company.     I studied Food Science and Economics withMarketing at Reading University. This allowedme to indulge in my passion for food, whilststudying it at the same time, perfect!After graduating I worked in the TechnicalServices department at United Biscuits for 18months before moving to Tesco as a TechnicalManager for Poultry. I have been workingat Tesco for 4 years and now manage 2Technologists with one of them lookingafter turkey (always a busy time aroundChristmas!), and fresh sauces. The otherTechnologist completed an industry yearwith us in 2008, they have since been placedon our Graduate Leadership Programmeand now looks after BBQ, Breaded productsand the Simply Cook range. My mainresponsibility is for food safety, legality andthe quality of products from farm to fork.We work really hard to continually review

    and develop our products using the latesttechnologies to exceed our customersexpectations. People ask me what an averageweek looks like however no day is ever thesame. One day I may be tasting the latestfood trends with our chefs and developers,the next doing focus groups with ourcustomers or I may even have mywellies on visiting farms. I spenda lot of time in factories both in

    the UK and abroad, whetherits to complete an audit,to approve new suppliersor to launch newinnovative products tothe market. Developingand launching theseproducts givesme a great senseof achievement,

    especially when I see iton our shelves or evenbetter when we win anaward!
