Brinawa Cheese Marook Farm -Hastings Valley, near Taree, NSWWhat is it? Pasteurised, Hard, Washed Rind, Cows Milk Cheese made with VegetarianRennet.
Why you need to know about it: Brinawa is made by cheese makers David Marks and his Swiss born wife Heidi Fallding on their 400 acre, bio-dynamic dairy farm. Marrook Farm is hidden away in Elands, in the idyllic, hinterland on the Mid-Northern coast of New South Wales. David and Heidi use milk from their own herd of 60 red & white Ayrshire cattle to produce this 3kg round of Raceltte or Tilsit style,
semi-hard, washed rind cheese. Unfortunately due to market demand they are better known for their award winning,
bottle fermented, probiotic natural yoghurt then they are their world class cheese.
What it tastes like: Brinawa has buttery, complex, robust, rich flavour with herbaceous, pasteur driven, grassy aromas and a long lasting, well balanced mouth feel.
You can buy Brinawa from Gourmet or Glutton in Morpeth see their advert on page 31 for details.
Pukara EstatePukara Estate, near Muswellbrook in the Upper Hunter is another olive producer processing its own olives. There are 26,000 trees in the large grove, but in Australian terms this is still considered a medium sized producer.
Pukara Estates extra virgin olive oils and balsamic vinegars are amongst Australias best, winning over50awards in shows nationally, including the prestigious Australian Olive Association National Show. For more information on Pukara Estate olives and olive oil products see the website www.pukaraestate.com.au
Krinklewood Biodynamic VineyardBiodynamics is a homeopathic medicine for agriculture, based on using natural means to obtain a better, more sustainable and healthier end product. Based on the Rudolf Steiner philosophy, it is believed that every plant is influenced by the two major energy forces in the world-the earthly & the cosmic and each individual farm is seen as an individual organism that should be as selfsufficient as possible.
A Biodynamic farm should have a diversity of crops & livestock and one should give life to the other. Biodynamics recognizes that the soil itself is alive, and this vitality supports and affects the quality and health of the plants that grow in it.
Biodynamic farming is organic, although it differs in that BD farmers use special Biodynamic preparations and they are applied at certain times of the year. The BD preparations act like a catalyst if used in the correct rhythm to improve the health of the plant or
increase the life in the soil, ie: Preparation 500 is made from cow manure, it is applied to the farm in droplet form in the late afternoon of a descending moon or when the moon is in opposition to Saturn.
(For more detailed information on BD preparations used at Krinklewood see www.krinklewood.com)
To be truly biodynamic is to have a farm with animals all contributing to the food web, biodynamic cycle including pest control and management. At Krinklewood we have pigs, cows, sheep, geese, ducks, chickens, peacocks and bees! They all directly contribute to the living biology in our soil, and in turn, the health and of our vines and fruit that makes our wines. Rod Windrim.
Krinklewood is holding its 6th Annual Biodynamic Workshop on 26th May at their Vineyard in Broke, Hunter Valley. For more information contact [email protected] or see editorial on our website www.hunterimag.com.au

May is the month of Mothers Day, and what better way than to surprise Mum than with a special meal out with her loving family? The best thing about dining in Lake Macquarie is the abundance of waterside venues. Here are some of Lake Macquaries dining hotspots:
Pelican/Swansea/Caves BeachLake and beach dining at its best! For an extra-special experience, arrive at Milanos on The Lake by boat and treat Mum to the exquisite fresh seafood of this renowned Lake Macquarie
institution. Swansea RSL is well liked by the locals and is located on the Swansea Channel for stunning water views. Caves Beachside Hotel houses the fine-dining C Restaurant, or for something a little more casual, try the Caves Bistro; both have access to large outdoor decks overlooking the ocean.
Belmont/Warners BayOne of the citys largest town centres, Belmont offers an array of cuisines to suit all tastes. For traditional bistro fare with breathtaking lake views, try the Sails Eatery at the Belmont 16 Foot Sailing Club. The place for a casual brekkie or lunch and great coffee is Caffe Macquarie, while lovers of modern Italian and gourmet pizzas shouldnt miss Salina Restaurant. Mum will especially love the Kids Eat Free meal deals on Monday and Tuesday nights. Located on the northern shores of the Lake, Warners Bay is a lively hub of cafes, restaurants and takeaways. Dine in at a restaurant, or grab some fish and chips and head down to the foreshore for a picnic. There are several ice creameries in Warners Bay for dessert.
Western Lake Macquarie With so many options to choose from, even the fussiest of eaters will find food to delight in on the western side of the Lake. Toronto has many waterfront eateries and the Royal Motor Yacht Club, while further south, Vita Pizza-Bar-Restaurant at Wang Wangi makes delicious stonebaked pizza and homemade pasta. Mum can relax on the outdoor deck overlooking Wangi Bay with a freshly poured tap beer or glass of the finest Hunter wine in her hand.
For information on any of the eateries above and MORE, contact the Lake Macquarie Visitors Information Centre on 1800 802 044, or visit the website: www.visitlakemac.com.au.

TALKING BUSINESS by Brett GleesonExcellence pays offThe pursuit of excellence in business has to be admired. We often come across people who are so passionate about what they do, they appear to be 'driven' to achieve at a high level.Second best is nowhere good enough, whilst cutting corners or knocking off early doesn't enter their thinking.Individuals and businesses who pursue and achieve excellence stand out from the crowd. The Lake Macquarie Business Excellence Awards are an initiative of the Business Growth Centre in partnership with the 7 Business Chambers around Lake Macquarie. When launching the Awards last December, the Mayor of Lake Macquarie, Greg Piper acknowledged that the Awards represented a wonderful opportunity to showcase the diversity and strength of the 12,000 businesses within
the Lake Macquarie local government area. The Awards offer 13 categories along with 3 major awards, namely the
Young Business Person of the Year, the Business Person of the Year and the Business of the Year. The details and entry forms are available of the Awards website, www.lmbea.com.au. Entries close on Thursday 31 May at 5pm.The Awards have enjoyed tremendous support from the local businesses and government agencies, including the JSA group as major sponsor with support from Lake Macquarie City Council and TAFE NSW-Hunter Institute and 20 other business sponsors.Todate, over $60,000 in prizes have been donated by 9 local businesses. The Awards will be presented at a Gala Dinner on Saturday 21st July at Belmont 16 Foot Sailing Club. The Awards are about demonstrated excellence, not popularity. Each category will have a panel of independent judges. This is a great opportunity for businesses to showcase their excellence and reap the rewards.
Until next month,

Wollombi Valley www.hunterimag.com.auHistoric Wollombi
Wollombi Valley is an oasis of peace and tranquility just an hour and a half north of Sydney. It lies between the Watagan Forests and Yengo National Park, part of the Greater Blue
Mountains World Heritage Area. Host to several boutique vineyards, It is the gateway to the Hunter wine area.Wollombi is a place where you can step back in time whilst being pampered in top class accommodation or camp in the wilderness. To get to Wollombi follow in the footsteps of the convicts up the winding Great North Road through a sandstone and well timbered landscape. Take a moment to marvel at the convicts work as you enjoy views across farmlands reminiscent of times past. Whether you take a picnic lunch, dine at a high-class restaurant, experience a local pub or explore the Aboriginal heritage there will be something for you in Wollombi. Historically Wollombi has always been an important centre for travellers along the Great North Road.Today it retains its fine architectural
heritage bolstered by cafes, wineries and comfortable guesthouses. Nearby are national parks with great bushwalking trails and lookouts and ancient Aboriginal rock carvings.

James Gleeson An exhibition chronicling the boundaries of
human consciousness
A close focus on an extraordinary vision, an exciting exhibitionThis exhibition demonstrates the skills of Australias last remaining, relatively recently departed, surreal artist, James Gleeson.
A close focus on an extraordinary vision is an opportunity to examine and investigate a select number of works of art gathered from only three owners - with one of these owners being a public art gallery.
This exhibition features some truly magnificent artworks many which have only been seen recently by a special few behind the doors of private collectors who have generously allowed us to borrow the paintings for this one public exhibition.
To accompany the exhibition
MRAG has designed an outstanding catalogue. Lou Klepac, author and regular supporter of MRAG and a member of the James Gleeson Foundation has written and published much on Gleeson. Ray Wilson who was the supreme collector of surreal Australian art and another member of the Gleeson foundation will open the exhibition. It is also his donation of annual funds for the Agapitos/Wilson that has supported this exhibition and the printing of the catalogue. Ray Wilson is, and the late James Agapitos are, the first MRAG patrons.
Do not miss this singular, unprecedented and fantastic exhibition .. and please enjoy.

Morpeth is an area of outstanding natural beauty and offers a great experience for everyone who enjoys the pleasure of a walk in a country village with the opportunity of shopping and dining in unique style.
It's a little place not far from Maitland, with a history to make us all proud. Morpeth was once upon a time a busy river port and frontier town established during the late 1820's. The Heritage buildings and Bond Stores stand in testament indeed, Morpeth was the largest inland seaport of the new Australian colony and commercial icons Brambles, Simsmetal, Arnotts and Soul's Pharmacy were born in this magnificent place.
Set along the banks of the Hunter River, the drive to Morpeth is an added attraction. The green fields stretch for miles and the weeping willows sway in the breeze. It is very hard to find a place to match our beautiful Morpeth.
As you stroll through the cobblestoned village you will notice that Morpeth has everything from art galleries to specialty shops to a Trading Post and even a Bazaar. Local artisans and craftspeople have their wares for sale throughout the town.
You will have the opportunity to taste locally made fudge and sip ginger beer. Fine fashion, teddy bears, art and craft, tempting treats to take home, beautiful jewellery, home furnishings and objects of interest, we promise that you will find them in Morpeth.
A range of restaurants and cafes offer al fresco dining, river views, heritage surroundings and a cosmopolitan standard of menu. Grab a bottle of the finest wine available for tasting from the local wine cellar then select your caf, even the most finicky of foodies will find something to their liking.
Morpeth does have its own museum, a service that traces family names and
shields, St Johns Theological college and is home to the beautiful St James church to name but a few of the significant buildings throughout the town.
Just down the road a way is a structure of a different nature. The infamous Maitland Gaol is now open to the public, experience what it's like to walk in the footsteps of some of Australia's most notorious criminals.
Morpeth, the town, the heritage, the buildings and carriage ways make this a place to not only visit but make a regular event.
What to See & Do Morpeth is National Trust classified, so take one of the Heritage Walks - enjoy the colorful history of Morpeth and its characters - in a living museum of Australias past.
Take a ride through the town with Juliet Clydesdale.
The streets of Morpeth are home to over 40 specialty shops and boutiques. Browse the gift shops, antique shops, galleries, lolly shops, a tea house, ginger beer factory and bakery.
Visit the Morpeth Museum housed in the old Court House built in 1862.

The Allyn & Paterson River ValleyTocal Homestead
Tocal - Paterson - Vacy - East Gresford - Gresford
Tocal Road, PatersonPh: 4939 8901 w/days; 4939 8939 w/ends
Open every weekend from March to Nov 30th 10am 3pm. When you visit Tocal Homestead its not hard to imagine days gone by. Tales of architects and graziers, bushrangers, businessmen, social reform and philanthropy are woven through the highs and lows of life on this unique property.
There is a lot on offer for visitors to the Allyn & Paterson River Valley, just two and a half hours drive from Sydney, an hour from Newcastle and where Dr Henry Lindeman planted his first grape vines in 1843.
Here you will discover the geographically blessed towns of Paterson, Vacy, Gresford and East Gresford, ringed by the ancient Moonabung Ranges and criss-crossed by the pristine waters of the two rivers that flow from the Barrington Tops.
First stop could be historic Tocal
Homestead for tales of the olden days of bushrangers, graziers, and other characters who inhabited one of the greatest Australian cattle and horse studs of its time. Have a look at the rare architect-designed barn built around 1867, and the gracious Colonial Georgian country house. Tocal Homestead is a very popular venue for weddings and milestone celebrations.
Paterson has inspired many artists to pick up a brush to try to capture this picturesque Australian country town on canvas. Take the time to look at the many fine old homes, grand commercial buildings, museums, art gallery, pubs, cafes, parks and shops that contribute to Patersons unique style.
9km north of Paterson is Vacy, with rugged Mt George to the west. It is well worth a visit to the caf, hotel, arts & crafts shop and general store for a taste of country hospitality, great food
and quirky crafts. Travel over the Vacy bridge, circa 1898, to Bunna Bunoo olive grove and gift shop. You can see the roof tops of the cabins and lodges such as Banjos Bushland Retreat and Cabins in the Clouds on Mt George, perfect destinations for weekend getaways or a longer stay.
The small towns of Gresford and East Gresford are the gateway to Lostock Dam, Mt Allyn and the Chichester State Forest to the north. Take the Allyn River Road drive past homesteads set among rolling green hills and granite outcrops. Visit Clevedon craft shop, Natural Furniture Works, the Beatty Hotel and Camyr Allyn winery. History lovers will enjoy a drive to St Annes Anglican Church and suspension bridge, and St Marys on Allyn at Allynbrook.
