Okay, ice-cream lovers. Ice-cream is good and all, but it has NOTHING on Asian shaved ice desserts. I have had shaved ice in many forms, flavors and countries: Taiwanese, Indian, Thai and even here in South Korea.

Here in Korea, shaved ice is enjoyed more commonly in the form of ‘pat bingsoo”. Pat bingsoo is mainly composed of two main ingredients: shaved ice and red bean or ‘pat’. Bingsoo can be topped off with fruit, milk, cereal, ice cream, jelly, Korean rice cakes, yogurt and an endless array of ingredients, all piled up into a mini mountain on a bowl.

Now let me tell you about Sulbing. This Korean Dessert Café has given my heart (/stomach) a lot of happiness. This uber-trendy and modern café has become very popular all over Korea. This franchise establishment pushes forward some of the town’s hottest… wait… no - coldest and most delicious shaved ice desserts – I have ever had.

Sulbing has taken the traditional bingsoo and delivers it in a healthier and yummier way. Instead of shaved ice, they elevate the base by using shaved milk. The milk is shaved thin, light like air and tastes refreshing. Sulbing Café also serves a decent range of delicious coffee, toasts and snacks.

The most popular dishes at Sulbing include the rice cake (“injulmi”) sulbing, which is a mountain of milk shaved like snow, topped off with sweet bean powder, tiny chewy pieces of rice cakes and served with a small tumbler of sweet condensed milk. The bean powder has a nutty flavor - not too sweet and not too strong. Eat a few spoonfuls of the icy-goodness to create some space and then slowly drizzle the condensed milk on top. Get a spoonful with all three components of the dish and KABOOM: that will be your mind. This flavor explosion is light, not too sweet, delicious and an addictive Asian flavor.

Not a fan of Korean rice cakes? It’s okay. Because this place also has CHEESE SULBING! Ok – don’t be deterred by the name, this shaved ice creation is topped off with chunks of cheesecake, one scoop of berry cheesecake ice cream, a little powdered sugar and sliced almonds. Out of this world.

Coffee lovers, the coffee sulbing is pretty awesome, too. This sulbing is served with a heavy scoop of coffee ice cream, a little bit of ‘pat’ red bean (you can ask for this to be omitted if you want, but I thought it went great together) and a generous granola crumble with almonds. The tumbler had a shot of espresso in it, taking this non-coffee drinker to a happy and buzzed place.

Happy Eating Everyone!

Directions:

If you know where Kitchen Del Vino is (the end of the right ring finger, from AK Plaza) and if you’re looking at it from the side you enter the stairwell, then Sulbing is in the building right behind you, across the street on the second floor. It says ‘Korean Traditional Dessert Café’ in English. The entrance is a few doors down from the bus stop, towards the back of the building.
