BETTER CONVERSATIONS, BETTER TIMES

Lots of factors in a restaurant can contribute to noise. People talking, clinking plates and glasses, reverberation from hard surfaces like wood and metal, as well as music, can lead to an uncomfortable fog of sound. So how do you best go about meeting the challenge?

At the Johan P fish restaurant in Malmö, Sweden, where the number of guests varies from small quantities up to a hundred, the staff faced a significant noise problem. They set about finding out how to optimise their acoustic climate. What they discovered is illuminating for any restaurateur!

Robin Zimmerfors, restaurant manager says: “When we moved into this facility a couple of years ago, we hadn’t planned much around the sound and acoustics. We have one big dining room that’s almost six meters to the ceiling, and an open kitchen that is facing that room. This set-up leads to a lot of noise.”

CRISPY FISH, CRISPY ACOUSTICS

Not considering acoustics from the word ‘go’ led to difficul-ties, according to Robin. “Since we are a fish restaurant, we want the organic sound to be present, and not be silenced by too much cloth, drapes and carpets. But we quickly learned that no acoustic planning was a mistake. Our restaurant has beautiful, old tiled floors that we don’t want to hide. But they make sound bounce in the room.”

The result? A diminished experience for both guests and staff. Robin continues: “The restaurant got too loud. Our guests struggled to hear conversations, not to mention that the work environment for our employees was deficient. We realised we had to do something.”

Robin set about experimenting. He didn’t want to use carpets or too much cloth. However, he did introduce drapes and acoustic panels. Next, he and his team explored more flex-ible solutions, notably different table-setting products. The result? Robin confirms: “We finally noticed an improvement.”

NAPKINS ABSORB SOUND TOO

Robin found the solution in napkins: “When it comes to the napkin, there are several ways of working. We have tried various options, and now we use disposable napkins during lunch, and linen napkins for the dinner serving.”

He continues: “When we want to work with sound absorp-tion, we use somewhat thicker napkin materials. We also noticed that the napkin folding could make a difference. When we fold our napkins to make them stand upright from the table, the ambient sound in our room gets more ab-sorbed, compared to a flat table setting. Finally, we work with layering. We use a linen table cloth and then put a paper cloth on top of it.”

In surveys, noise in restaurants often comes up as the top complaint for diners. So, providing a healthy acoustic environment translates into a significant commercial advantage. We spoke to Robin Zimmerfors, restaurant manager, about how he, and his team, have given their business an acoustic make-over.

The process of working with napkins has led to further discoveries. For instance, Robin and his staff noticed the temperature and humidity has an effect. When it’s hot and humid, the napkins behave a bit differently, which affects their acoustic performance. As a result, when the weather demands it, the team always folds the napkins just before they place them on tables. That helps to ensure they stay up for longer.

DIFFERENT ROOMS, DIFFERENT SOUND SIGNATURES

Robin points out that different rooms work in different ways: “It really can vary from one room to another. In our cellar, for example, where we have a private dining room, we have to work differently than in our main dining room.”

So what material works best when it comes to acoustics? Robin is happy to share what he’s learnt. “As a general guide-line, the materials and items used for sound absorption have to be porous enough to allow air and sound to flow naturally. At the same time, there has to be enough density to create a blockage. By being aware of this, we are much better at finding the best solution for different rooms and situations.”
