CONVENTIALMETHOD

1. Inamixingbowl,mixtogetherthemilletflour,glutinousriceflour,yeast,arrowrootflour,salt,bakingpowder,cinnamon,nutmeg,cloves,sugar,orangezest(ifusing)andpsylliumhusk.

2. Inanotherbowl,useabeatertobeattheeggs,milk,applecidervinegarandoilfor3minutesonmediumspeed.

3. Addthedryingredientsand150gwatertothebowlandbeatonhighfor3minutesonmedium-high.4. Stirinthecranberriesorcurrants.5. Transferthemixtureintoalargeglassbowlandcoverwithplasticwrap.Setasidetoprovefor1hour

atroomtemperature,oruntilthemixturehasdoubledinsize.6. Preheattheovento180C(or170Cifyourovengetsreallyhot)andlinetwo6-holeTexasmuffintrays.7. Meanwhile, place 50gGF Plain Flour and 50gwater into a bowl andmix together until smooth.

Transferintoapipingbagwithathinplainnozzle.8. Dividethebatterevenlybetweeneachholeofthemuffintray(toabout¾full).Coverthemuffin

trayslooselywithplasticwrap,makingsurethewrapdoesnottouchthebatter.Setasidetoproveforapproximately30mins,oruntilthedoughhasjustrisentothetopofthemuffinholes.

9. Pipeacrossontoeachbun,thenbakeforabout25mins,oruntilthebunsarebrownedontopandaskewercomesoutcleanwheninsertedintothecentreofabun.

10. Placetheglazeingredientsintoasmallsaucepanandcookonlowuntilthesugarhasdissolved.Brushtheglazeoverthehotbunsandservewarm.

THERMOMIXMETHOD

1. Addthemilletflour,glutinousriceflour,yeast,arrowrootflour,salt,cinnamon,nutmeg,cloves,sugarandpsylliumhusktotheThermomixbowlandmix10sec/speed5.Scrapedownthesidesofthemixingbowlafter.

2. Addtheeggs,milk,applecidervinegar,150gwater,oil,orangepeel (ifusing),andcranberriesorcurrantsandcombine10sec/Reverse/Speed4.

3. Scrapedownsidesofmixingbowlwithspatula,thencombine5sec/Reverse/speed4.4. Transferthemixtureintoalargeglassbowlandcoverwithplasticwrap.Setasidetoprovefor1hour

Tips:

*Despiteitsname,GlutinousRiceFlour(alsoknownas‘StickyRice’andSweetRiceFlour)isGlutenFree.NormalRiceflourisgroundfromlongormediumgrainrice,whilstGlutinousriceflourwhichisgroundfromshortgrainglutinousrice.Glutinousricehasamuchhigherstarchcontentcomparedtootherkindsofrice,thereforemaking it a great thickening agent for sauces or binder. Anddon't let the fact that it's called"sweet"ricethrowyouoffeither.Itsflavourismildandalmostmilky,notatallsugarysweet.

**DriedCranberriesandCurrantsarebothlow-FODMAPin13g(approximately1tablespoon)serves.The150ginthisrecipeisspreadover12serveswhichwouldbeaboutthesameamount.
