Holiday gifts that keep on givingBy Melinda Myers

Make this holiday season onefilled with creating memo-ries and gifts that keep giv-

ing throughout the year.Terrariums have made a comeback

and make wonderful do-it-yourselfprojects and gifts for beginning andexperienced gardeners. They enablegardeners to continue to grow nomatter the weather outdoors and canbe updated and used as decorationsthroughout the year with some sim-ple updating for holidays and otherspecial occasions. Just add a fewceramic items like a Christmas treeornament, ceramic bunny or otheradornment or two that represent theseason. Don’t know where to start? No problem. You can create your ownfrom an old glass jar or vase or pur-chase an elegant terrarium with cop-per bottom guaranteed to create theperfect stage for your tabletop gar-den. Or purchase a terrarium kit thatincludes the plants, container and allyou need.

For the artist, young or old, andavid birder, consider a green bird-house. These biodegradable bird-houses are made from 100% recycledpaper and designed to last throughone nesting season. You will have fundecorating it with stickers, markersor paint, making this a gift you andthe birds will enjoy. Plus, once theseason is over, there’s no need forcleaning. It can simply be added tothe compost pile.

Not feeling artistic? No worries.

During the holidayseason, everyonebecomes some

kind of foodie. FromThanksgiving throughNew Year's, there is sim-ply so much food toenjoy. However, your listof names may contain agenuine year-round gourmet - theAll-Season Foodie. This kind offoodie probably already owns, uses, and loves quality gourmet nonstickcookware, so consider a specialtypot or pan to round out a collec-tion.

East Meets BestThe wok is one of the oldest type

of pans in the world, and one of themost efficient. First, the bowl-likeshape helps distribute heat evenly. Then, like a satellite dish, the

rounded side helpsfocus all that heattoward the center ofthe pan, so ingredi-ents sear and cookmore efficiently andflavors build morerapidly. In Asia, ofcourse, wok cooking

is enough of a special skill andtechnique to be considered an art.

The Total Tea LoverNext to water, tea is the world's

most popular beverage. In theUnited States it runs second to cof-fee, but tea consumption has beenon the rise here for several yearsrunning, and that trend is expectedto continue. Odds are thereforegood that your gift listincludes more than afew tea drinkers - andprobably a Total TeaLover or two. Steepedor iced, Earl Grey orherbal, tea is ideal forthem, and so is thetea-related present.

The Easy-Going EntertainerThe Easy-Going Entertainer

always appreciates an extra servingbowl or platter, especially one withversatility and personality to spare.Consider going beyond basic whiteor metallics with a solid, sturdypiece that sets a tabletop, buffet orsideboard in style.

The Convenience CookIn just a few generations, the

microwave evolved from new-fan-gled "science oven" to an appliancefound in over 90 percent of U.S.households.i With time, space andenergy at a premium in modernlife, microwaves come in handy foreverything from heating water and

melting butter to makingpopcorn and even com-plete meals. The frequent-microwaver on your listmight be considered aConvenience Cook - some-one who wants to savekitchen time and effort yetstill loves food and flavor.

Luckily, kitchenware hascaught up to this ever-growingneed for convenience, with numer-ous new tools, utensils and cook-ware made especially formicrowave use. Getting Steamed

Another ingenious kitchen toolfor the Convenience Cooker onyour list is the Circulon SiliconeSteamer Insert. This clever, heat-safe silicone steamer stands uprightfor hands-free cooking prep and fitsa standard size pan.The ConvenienceCooker can easilymove the filledsteamer insert fromcounter to sink to potand back again, mak-ing it perfect forhealthy veggies, draining larger pastashapes, and more. It'seven handy as a tem-porary fruit bowl, and collapses forconvenient, space-saving storage.

The Solution SeekerClosely related to the cook seek-

ing convenience is the one in con-stant search of solutions. The

Solution Seeker on your list may beeasy to spot - look for crosswordand Sudoku puzzles on their smart-phone and similar clues. The solu-tion-seeking home cook cravessomething more than just anothergadget to add to the utensil drawer, however.

The Dessert DelivererOn the subject of baking, check

your list for a special type of per-sonality profile: the DessertDeliverer. They may love bakingfrom scratch or mix, simply have aroster of favorite bakeries whosegoodies they love to select andshare. Whatever the occasion -weekday or holiday, casual or spe-cial - they inevitably bring a deli-cious baked treat.

Help the Dessert Deliverer carrythose tastybakedgoods totheir ulti-mate desti-nation witha stylishCake BossCake

Carrier. The vintage-styled carriersfeature fun, bakeshop-era designsagainst a cream-colored back-ground, and the lids sport a sturdy, collapsible red handle. Each carrierholds a standard, 9-inch rounddouble-layer cake or any dessert ofsimilar size and shape, and theclever side latches firmly lock thelid closed - and keep tempted fin-

gers away!So take a moment to

do a little personality-digging with the nameson your holiday gift list, and you can easilydetect their kitchencharacters. From thereto the perfect giftbecomes as simple asmatching gift and per-sonality.

The STREAM & LAKE MAP OFNEW YORK resembles another map--known to Pennsylvania anglers as the“Lost Stream Map.”

It was completed in 1965 after a 30 year effort by Howard Higbee, a former Penn State Professor.

Professor Higbee painstakinglyplotted by hand, the location of45,000 miles of streams onto themap. It sold extremely well - untilthe printer declared bankruptcy andhauled Higbee’s work to the landfill.

But reprints were impossiblebecause the maps were printed innon-photographic blue. Higbee was even offered $400 for one of his lastmaps. And state agencies wereforced to keep their copies underlock and key.

Then, at the age of 91, HowardHigbee’s dream came true.Computers made it possible toreprint the map.

Then the STREAM & LAKE MAPOF NEW YORK was created.

Christmas just wouldn’t be thesame without Santa Claus. Santa willforever be ingrained in the holidayseason, serving as an endearing sym-bol of the season regardless of yourreligious affiliation.

Parents typically go to great lengthsto ensure their children enjoy theholiday season. By keeping themagic of Santa alive, parents can adda special touch to the holiday seasonfor their youngsters. Children maybecome more skeptical of Santaaround the time they turn 10, butthere are plenty of ways to encouragethis spirit to live on year after year.

• Read an uplifting story. The holi-days are ripe with stories that tug atthe heartstrings. Parents can taketheir children to the library and renta Christmas tale or take home a bookof holiday stories, reading a differentone before bed each night.

Encourage children to write theirown positive stories of what the holi-days mean to them and read themaloud to family and friends. Thebook “101 Ways to Keep the Spirit ofSanta Alive: For "Kids" From 1 to 92”by John Hagerman is a great way toget everyone in the house enthusias-tic about Santa.

• Keep the magic flowing. Childrenwho believe in Santa for an extra yearor two often come from families thatkeep the magic of Santa alive. Inaddition to the standard traditions ofleaving cookies and milk out for thejolly old man, come up with newways to evoke the essence of Santa.Spray peppermint air fresheneraround the tree and other placesSanta is sure to visit. Use a large bootto make a footprint in a plush rug.Find a way to trigger noise on theroof to give kids the impression thatMr. Claus himself has arrived. Extrameasures to keep Santa alive canhelp everyone enjoy the holiday thatmuch more.

• Take advantage of opportunitiesto spend time with Santa. Parents

and children alike have many oppor-tunities to spend time with Santaduring the holiday season, includingphoto opportunities at the mall andpersonalized videos sent directly toyoungsters’ email accounts. Elf dollsand breakfast with Santa at a nearbyrestaurant are other opportunities tospread the magic. Make the most ofthese opportunities over the courseof the holiday season.

• Spread some Christmas cheer.Santa’s job is to bring presents to theworld's children. Channel the notionthat giving is better than receivingand spend time giving back to othersas a family. Schedule a day when youcan distribute gifts at a senior centeror arrange to bring gifts to a fosterchild. Bake cookies and deliver cello-phane-wrapped dishes to all of yourneighbors. These activities put theemphasis on giving.

Keeping the tradition of SantaClaus alive can help adults and chil-dren alike enjoy a more festive holi-day season.

26G GIFT GUIDE SULLIVAN COUNTY DEMOCRAT NOVEMBER, 2015

Fresh Turkeys• Allow 1 pound of turkey per person.• Buy your turkey only 1 to 2 days

before you plan to cook it.• Keep it stored in the refrigerator until

you're ready to cook it. Place it on a trayor in a pan to catch any juices that mayleak.

• Do not buy fresh pre-stuffed turkeys. If not handled properly, any harmfulbacteria that may be in the stuffing canmultiply very quickly.

Frozen Turkeys• Allow 1 pound of turkey per person.• Keep frozen until you're ready to

thaw it.• Turkeys can be kept frozen in the

freezer indefinitely; however, cook with-in 1 year for best quality.

• See "Thawing Your Turkey" for thaw-ing instructions.

Frozen Pre-Stuffed TurkeysUSDA recommends only buying

frozen pre-stuffed turkeys that displaythe USDA or State mark of inspection onthe packaging. These turkeys are safebecause they have been processedunder controlled conditions.

Image of seal of inspection for poultryDO NOT THAW before cooking. Cookfrom the frozen state. Follow packagedirections for proper handling andcooking.

Allow 1¼ pounds of turkey per person.

Thawing Your TurkeyThere are three ways to thaw your

turkey safely — in the refrigerator, incold water, or in the microwave oven.

In the Refrigerator (40 °F or below)Allow approximately 24 hours for

every 4 to 5 pounds4 to 12 pounds – 1 to 3 days12 to 16 pounds – 3 to 4 days16 to 20 pounds – 4 to 5 days20 to 24 pounds – 5 to 6 daysKeep the turkey in its original wrap-

per. Place it on a tray or in a pan to catchany juices that may leak. A thawedturkey can remain in the refrigerator for1 to 2 days. If necessary, a turkey thathas been properly thawed in the refrig-erator may be refrozen.

In Cold WaterAllow approximately 30 minutes per

pound4 to 12 pounds – 2 to 6 hours12 to 16 pounds – 6 to 8 hours16 to 20 pounds – 8 to 10 hours20 to 24 pounds – 10 to 12 hoursWrap your turkey securely, making

sure the water is not able to leakthrough the wrapping. Submerge yourwrapped turkey in cold tap water.

Change the water every 30 minutes.Cook the turkey immediately after it isthawed. Do not refreeze.

In the Microwave Oven• Check your owner's manual for the

size turkey that will fit in yourmicrowave oven, the minutes perpound and power level to use for thaw-ing.

• Remove all outside wrapping.• Place on a microwave-safe dish to

catch any juices that may leak.• Cook your turkey immediately. Do

not refreeze or refrigerate your turkeyafter thawing in the microwave oven.

REMINDER: Remove the giblets fromthe turkey cavities after thawing. Cookseparately.

Roasting Your Turkey• Set your oven temperature no lower

than 325 °F.• Place your turkey or turkey breast on

a rack in a shallow roasting pan.• For optimum safety, stuffing a turkey

is not recommended. For more evencooking, it is recommended you cookyour stuffing outside the bird in a casse-role. Use a food thermometer to checkthe internal temperature of the stuffing. The stuffing must reach a safe mini-mum internal temperature of 165 °F.

• If you choose to stuff your turkey, theingredients can be prepared ahead oftime; however, keep wet and dry ingre-dients separate. Chill all of the wetingredients (butter/margarine, cookedcelery and onions, broth, etc.). Mix wetand dry ingredients just before fillingthe turkey cavities. Fill the cavitiesloosely. Cook the turkey immediately.Use a food thermometer to make surethe center of the stuffing reaches a safeminimum internal temperature of 165°F.

• A whole turkey is safe when cookedto a minimum internal temperature of165 °F as measured with a food ther-mometer. Check the internal tempera-ture in the innermost part of the thighand wing and the thickest part of thebreast. For reasons of personal prefer-ence, consumers may choose to cookturkey to higher temperatures.

• If your turkey has a "pop-up" tem-perature indicator, it is recommended

that you also check the internal temper-ature of the turkey in the innermost partof the thigh and wing and the thickestpart of the breast with a food ther-mometer. The minimum internal tem-perature should reach 165 °F for safety.

• For quality, let the turkey stand for 20minutes before carving to allow juices toset. The turkey will carve more easily.

• Remove all stuffing from the turkeycavities.

Timetables for Turkey Roasting(325 °F oven temperature)Use the timetables below to deter-

mine how long to cook your turkey. These times are approximate. Alwaysuse a food thermometer to check theinternal temperature of your turkey andstuffing.

Unstuffed4 to 8 pounds (breast) – 1½ to 3¼

hours8 to 12 pounds – 2¾ to 3 hours12 to 14 pounds – 3 to 3¾ hours14 to 18 pounds – 3¾ to 4¼ hours18 to 20 pounds – 4¼ to 4½ hours20 to 24 pounds – 4½ to 5 hours

Stuffed4 to 6 pounds (breast) – Not usually

applicable6 to 8 pounds (breast) – 2½ to 3½

hours8 to 12 pounds – 3 to 3½ hours12 to 14 pounds – 3½ to 4 hours14 to 18 pounds – 4 to 4¼ hours18 to 20 pounds – 4¼ to 4¾ hours20 to 24 pounds – 4¾ to 5¼ hours

It is safe to cook a turkey from thefrozen state. The cooking time will takeat least 50 percent longer than recom-mended for a fully thawed turkey.Remember to remove the giblet pack-ages during the cooking time. Removecarefully with tongs or a fork.

Optional Cooking Hints• Tuck wing tips under the shoulders

of the bird for more even cooking. Thisis referred to as "akimbo."

• Add ½ cup of water to the bottom ofthe pan.

• If your roasting pan does not have alid, you may place a tent of heavy-dutyaluminum foil over the turkey for the

first 1 to 1 ½ hours. This allows for max-imum heat circulation, keeps the turkeymoist, and reduces oven splatter. Toprevent overbrowning, foil may also beplaced over the turkey after it reachesthe desired color.

• If using an oven-proof food ther-mometer, place it in the turkey at thestart of the cooking cycle. It will allowyou to check the internal temperature ofthe turkey while it is cooking. For turkeybreasts, place thermometer in the thick-est part. For whole turkeys, place in thethickest part of the inner thigh. Oncethe thigh has reached 165 °F, check thewing and the thickest part of the breastto ensure the turkey has reached a safeminimum internal temperature of 165°F throughout the product.

• If using an oven cooking bag, followthe manufacturer's guidelines on thepackage.

REMEMBER! Always wash hands, utensils, the sink, and anything else thatcomes in contact with raw turkey and itsjuices with soap and water.

For information on other methods forcooking a turkey, call the USDA Meatand Poultry Hotline: 1-888-MPHotline(1-888-674-6854); www. fsis.usda.gov.

Storing Your Leftovers• Discard any turkey, stuffing, and

gravy left out at room temperaturelonger than 2 hours; 1 hour in tempera-tures above 90 °F.

• Divide leftovers into smaller por-tions. Refrigerate or freeze in coveredshallow containers for quicker cooling.

• Use refrigerated turkey, stuffing, andgravy within 3 to 4 days.

• If freezing leftovers, use within 2 to 6months for best quality.

Reheating Your TurkeyCooked turkey may be eaten cold or

reheated.

In the Oven• Set the oven temperature no lower

than 325 °F.• Reheat turkey to an internal temper-

ature of 165 °F. Use a food thermometerto check the internal temperature.

• To keep the turkey moist, add a littlebroth or water and cover.

In the Microwave Oven• Cover your food and rotate it for

even heating. Allow standing time.• Check the internal temperature of

your food with a food thermometer tomake sure it reaches 165 °F.

• Consult your microwave ovenowner's manual for recommendedtimes and power levels.

Chanukah, Christmas and NewYear’s Eve are right around thecorner. That means neighbor-

hoods, buildings and stores will soonbe awash in holiday splendor. Socialschedules will be full, and men andwomen everywhere will shuffle tocomplete their holiday shopping.

Grab bags are a staple of this sea-son of giving, and the following are afew dos and don’ts to ensure partici-pation in gift exchanges is fun andfriendly for all involved.

DO set a gift amount limit. Holidaygrab bags are more about having funand exchanging a little somethingwith friends and family membersthan walking away with amazingprizes. Establish a spending limit soeveryone receives a gift of roughlythe same value and no one feelsslighted or left out.

DON’T exceed the spending limit.Overspending defeats the purpose ofthe gift exchange.

DO make it a game. Tossing gifts ina bag only to have others reach in

and grab one is certainly effective. But the concept can be even morefun if you make a game out of it.DON’T let anyone see the gift youbring. The idea is to keep things assecretive as possible so as not tosway the selection of presents.

DO ensure your gift is unisex. Food, gift cards, music, or home staplesmake great grab bag gifts.

DON’T forget to consider ages aswell. Gift exchanges may includeboth children and adults, so includegifts that appeal to all ages whennecessary.

DO expect some grab bag gifts tobe gag gifts. Keep your sense ofhumor and you’re likely to enjoy grabbags a lot more.

DON’T regift items to use as grabbag picks.

DO make sure everyone is awarethat there will be a grab bag giftexchange.

Gift exchanges in the form of grabbags, auctions & other games makefor fun holiday festivities.
