Our small team of cheesemakers work in a modern dairy in the farm’s former grain store with every part of the cheese-making process from pasteurisation to packaging completed here at the dairy. Types of cheese – Our full range of cheeses are detailed over the next few pages.

Cheese sizes – All our cheeses are available either in 1kg packs of pre-packed wedges (typical pack quantity 6-7 pieces) or as quarter, half or whole cheeses ready for cutting on the deli-counter. Unless otherwise stated, the whole cheese is around 3.8kg.

Delivery – We can arrange delivery either with our van that goes out every week to selected areas in London and the South East or by over-night courier.

Tasters – We are happy to provide pre-cut tasters of any of our cheeses for your customers to try.

Sheep Milk CheesesSEVEN SISTERS - Sheep milk cheese with seaweed coating

Variety: Conventional

Shelf Life: 8 weeks

Named after the Seven Sisters chalk cliffs in East Sussex, our most-recently developed cheese is a semi-soft, matured sheep milk cheese coated in a layer of Hebridean seaweed. Seven Sisters has a light nuttiness to it and the seaweed coat makes it very difficult to resist.

DUDDLESWELL - Sheep milk cheese

Varieties: Organic; Conventional; Organic Oak Smoked; Conventional Oak Smoked; Conventional Black Truffle & Porcini (only available in pre-packed wedges)

A full-fat, hard cheese made from pasteurised sheep milk with a well-rounded, rich flavour. The cheese is matured for five months and has a smooth creamy texture and delicious nutty flavour. The smoked variety has a deliciously-light smokiness.

LITTLE SUSSEX - Organic soft sheep milk cheese

Variety: Organic

Size: 80g button

Shelf Life: 5 weeks

Little Sussex is a small cheese of about 80g, with a bloomy white coat. Based on our fresh, Plain Sussex Slipcote, it is matured for 10 days before packing. Little Sussex has a

delicious, mild and delicate flavour and fluffy texture when young, but becomes stronger and more flavoursome as it ages.

SUSSEX SLIPCOTE - Organic soft sheep milk cheese

Varieties: Plain; Garlic & Herb; Peppercorn; Dill

Sizes:500g logs in packs of two (except for Dill variety)100g buttons in cases of six (single variety or mixed)

Shelf Life: 5 weeks

Sussex Slipcote is made with 100% sheep milk. Slipcote has a light, fresh and creamy texture with a clean, slightly sharp lemony taste. Three flavoured versions are made by adding the complementary flavours of Garlic & Herb, Peppercorn or Dill.

HALLOUMI - Sheep milk or mixed-milk “squeaky cheese”

Varieties: Organic 100% sheep milk; Organic mixed cow and sheep milk

Shelf Life: 10 weeks

A salty, brined cheese, originally from the Mediterranean which is traditionally made from sheep milk. We make two varieties – one with 100% sheep milk and one with cow and sheep milk mixed. Before cooking it is a squeaky cheese but once dry fried or grilled it takes on a different texture and taste with a texture reminiscent of a grilled marshmallow and a taste similar to that of bacon.

MEDITA - A Mediterranean-style sheep milk cheese

Shelf Life: 8-10 weeks (conventional-organic)

Better known as ‘feta’, Medita has its origins in the Mediterranean. We make the cheese in the traditional way with sheep milk and then mature it in brine. It is a semi-soft, crumbly cheese with a distinct, sharp, fresh flavour.

RICOTTA - Sheep milk or mixed-milk soft cheese

Varieties:Organic 100% sheep milkOrganic mixed cow and sheep milk

Shelf Life: 4 weeks

Ricotta (literally meaning "re-cooked") is made by reheating the whey after the initial cheese making process, producing a delicious fine curd. Ricotta is a fresh cheese (as opposed to ripened or aged), grainy and creamy white in appearance, slightly sweet in taste and contains around 5% fat. We make two varieties of ricotta - one from 100% sheep milk and one from mixed cow and sheep milk It is a versatile cheese to cook with and lends itself well to both savoury and sweet dishes. Please do not confuse our ricotta with supermarket varieties which are often very watery!

Goat Milk Cheese

SISTER SARAH - Goat milk cheese

Variety: Conventional

Shelf Life: 8 weeks

A mild, semi-soft cheese made in our dairy with goat milk. The cheese is very white as goats digest all the carotene in the grass. The milk is cooled immediately after milking and this results in a mild cheese, with a delicious flavour and without any “goatiness”, which is often associated with goat cheese. In fact, most people will not realise that it is a goat milk cheese. Available with or without a coating of annatto (a south American berry), which gives a cheerful bright orange rind.

BRIGHTON BLUE – A blue-veined cow milk cheese

Varieties: Organic; Conventional

Our popular Brighton Blue has a slightly open, semi-soft texture, a mellow blue flavour and slightly salty finish. The distinctive blue green veins deepen and the taste becomes stronger as it matures.

SAINT GILES – Semi-soft cow milk cheese

Varieties: Organic; Conventional

Shelf Life: 8 weeks

This cheese is an English equivalent to the continental-style Saint Paulin or Port Salut style of cheese found in France. Saint Giles, made with cow milk is a semi-soft, creamy cheese. It has a rich, buttery texture, a creamy mild flavour and an attractive edible orange rind.

SUSSEX MARBLE – Semi-soft cow milk cheese

Variety: Conventional

Shelf Life: 8 weeks

A continental-style, semi-soft, creamy cheese derived from Saint Giles and infused with garlic and herbs. Fantastic if melted on steak or chicken or use as a ready-made garlic butter without the hard work.

ASHDOWN FORESTERS – un-pressed cow milk cheese

Varieties: Organic & Organic Oak Smoked

Sizes:1kg packs of 6-7 wedgesWhole 2kg cheese/truckle/wheel

Shelf Life: 8 Weeks.

Ashdown Foresters is an un-pressed cheese, quite firm, slightly open texture, has an attractive shape with its basket weave pattern on its surface. Medium in strength, it is a rounded cheese, with a sharp, buttery character and slight saltiness, but with savoury and lemon back notes. Ashdown Forester takes eight hours to make and three months to mature in our cheese store, in carefully controlled conditions.

For the smoked version, after a period of maturation, the whole cheeses are gently smoked at the dairy, over oak shavings. Care is required in order to create smoke without heat, otherwise the cheeses could begin to melt! Smoking takes around 12 to 36 hours, depending on the weather and prevailing wind. We prefer a light smoke rather than a heavy smoke.

TREMAINS ORGANIC – Hard cheddar-style cow milk cheese

Varieties: Organic

Sizes:1kg packs of 6-7 wedgesQuarter truckle/wheel Half truckle/wheel

Shelf Life: 10 Weeks.

Tremains Organic is made using organic milk. The cheese is matured for up to five months, it is golden yellow in colour, medium in strength and has a firm, but crumbly texture.

BROTHER MICHAEL – Semi-soft, rind-washed cow milk cheese

Varieties: Organic

Shelf Life: 10 weeks

St Michaels is created by washing a six-week matured Saint Giles cheese in brine and special cheese cultures several times a week for four weeks. This process creates the lovely orange - pink colour on the sticky cheese surface and the distinctive sticky pungent aroma. The texture is soft and creamy but the flavour is not as strong as the aroma would imply.
