Did you know? Passionfruit, native to Brazil, Paraguay and Argentina, is named aſter its flower which comes from one of the hundred species of the passion flower. Passionfruit is actually a type of berry which is sweet-sour, very aromatic and seedy. It varies from dark purple to golden yellow and may be round or long like a banana. Although it started in tropical climates, passionfruit is now grown in places like California and Florida. Passionfruits also have some great health benefits. They're rich in iron but, while the body does not absorb fruit-based iron well, it also contains vitamin C which is known to enhance iron absorption. A single-fruit serving of passionfruit provides around 2 grams of fiber —a lot for such a small fruit. Passionfruit peel supplements have anti-inflammatory effects. They may benefit people with asthma and arthritis. Passionfruit also contains a lot of antioxidants. In particular, it’s rich in vitamin C, beta carotene, and polyphenols. It’s a good thing passionfruit is so delicious because, when it’s cut in half, the gelatinous interior is not so appealing. Once cut, the pulp and the edible seeds can be scooped out using a spoon. They can be eaten as is or used in a variety of recipes. The fruit is tart, so it’s usually combined with other ingredients. When choosing passionfruit, opt for those that are heavy for their size. When the fruit is heavy, that means it has plenty of moisture inside. The skin of the passionfruit will be wrinkly when it’s ripe. If you get one with smooth skin, make sure it has a lile give to it when you squeeze it. If it does, you can leave it on the counter for three to five days to ripen up. Passionfruit is versatile. It can be made sweet or savory, used as an ingredient in a dessert or a main dish, and made into a juice that can be used in several ways. It can be combined with sweeteners and used in frozen desserts or pies. It can be used with other fruit in salsas and salads. It can be added to sangria or alcoholic drinks for a touch of tartness. No more schlepping roasts back to the butcher shop for slicing! The Wusthof Super Slicer has become our best-selling knife. Scalloped blade slices meat neatly and easily—even when hot.

To prepare your gilded hazelnuts, place some luster dust into a small container. Add the whole hazelnuts and close the lid. Shake to coat, Set aside.Prepare 30 truffle cups. Melt the semisweet chocolate in a microwave or double boiler. Add the Ferrerolato filling, ground hazelnuts and confectioners’ sugar. Mix to combine. Place mixture into a disposable pastry bag. Fill the truffle cups 3/4 full with chocolate mixture. Melt the bittersweet chocolate coating and place in a disposable pastry bag. Fill the truffle cup with the chocolate until you have a smooth level top. Top with gilded nuts. Storage airtight at room temperature.

For the pie Peel and cube sweet potatoes. Place in a medium saucepan and add the orange juice. Add water to just cover. Season with salt and bring to a boil. Cook until tender, about 20 minutes. Drain, mash and cool 10 minutes. Preheat oven to 350°F.

Heat oil in a small frying pan and sauté diced onions until golden, stirring frequently. Add to sweet potatoes. Add mayonnaise, eggs and potato starch. Mix well and season to taste with salt and pepper. Spread mixture in an 8-9” square baking dish. Bake 30 minutes or until top is set.

For the lattice Mix 2 cups potatoes with oil and broth. Add egg and season to taste with salt and pepper.

Place potato mixture into a piping bag fitted with a large star tip. Pipe potato mixture across the top of the pie in a pretty design.

Return pie to the oven for an additional 30 minutes. Brush oil over the lattice and bake 10 minutes longer or until golden. Remove from oven and serve hot.

2 eggs2 heaping T. potato starchFreshly-ground pepper to tasteFor the potato lattice2 c. leftover mashed potatoes or 2 potatoes, peeled and boiled1 T. Pesach oil1/2 c. chicken broth1 eggKosher salt and pepper to tasteMore oil for brushing

Pesach cakes contain very little starch and rely on the right pan for perfect results. A traditional tube pan with little feet allows you to cool the cake upside down so you get beautiful, tall cakes every time.

Lots of vegetables need slicing throughout Pesach. For a faster way to do it, go with a Zyliss Mandoline Slicer. It gives you options for different thicknesses and comes with a safety holder to help avoid mishaps.
