Appetizer Recipe Miyok (seaweed) Cold Soup

Ingredients two bunches of miyok,

one cucumber,

some leek,

1 tsp. crushed sesame,

one little pepper,

three tbsp. soy sauce,

1-1/2 tbsp. vinegar,

1 tsp. sesame oil,

4 cups of soup stock (beef or tangle)

Cooking Directions

Wash miyok, pour hot water on it until the miyok is colored fresh, and soak it again inwater.

Cut it into tiny pieces and wring them dry.

Cut cucumbers into two parts lengthwise, and then cut them aslant.

Mix the miyok with other ingredients and soak it in water for a while.

After the cucumbers become soft, mix them with soup stock, and cool the mixture

Main course: Ingredients

Kalbitchim (Steamed Beef Ribs)

1.2kg beef ribs,

1/4 pear,

1/4 apple

8 chestnut,

8 Chinese dates,

12 ginko nuts,

2 tablespoons of sugar,

2 tablespoons of cooking wine,

1/3 cup soy sauce,

2 tablespoons of starch syrup,

3 tablespoons of chopped green onion,

3 tablespoons of minced garlic,

1 tablespoon of sesame salt, pepper ,

sesame oil,

1 cup water

Kalbitchim Cooking Directions

1. Prepare IngredientsPut the ribs into cold water to get rid of the blood. Blench the ribs and strain. Make pear puree. Chop the apple very finely. Peel the chestnut and ginko nut.

2. Marinate the Ribs in Pear PureePut the rib in pressurized rice cooker with pear puree, sugar and cooking wine. Leave it for a while.

3. Make the SauceTo make the sauce, put the starch syrup, ground green onion, minced garlic, sesame salt, pepper, sesame oil and water in soy sauce.

4. Put in the SaucePour the sauce over the ribs. put the apple and close the lead. Steam it for about 20 minutes. When it is almost cooked, add the chestnut, Chinese dates and ginko nut. Cook further without the lid in low heat. Wrap the serving amount in foil. Warm before serving.

Desert Recipe

Sik Hye (Rice beverage) Ingredients

2 cup malt powder1 cup glutinous rice1-1/3 cupful sugarA small amount of pine seeds

Cooking Directions Soak malt powder in 15 cup of water for a while. Soak washed glutinous rice in water for an hour, then drain it.

Steam until it becomes soft, spraying water on the rice once. Mix hot glutinous rice with 5 table spoonfuls of sugar and the malt

juice, then keep the mixture for 3 - 4 hours at 50-60 degree C. When a few grains of rice came up to the surface, separate the

glutinous rice from the malt juice and wash it. Mix the juice with the remaining sugar and boil, then cool it.

Serve a proper quantity of cooled juice with a spoonful of glutinous rice and a few pine seeds.
