Dear Wellness Readers

This month’s magazine is really a great read leading into the long winter. For me, as I am sure

for many others, I’m determined to avoid getting a cold or flu this winter. I just hate being all bunged up and miserable.

A few weeks ago I caught the “change in season” sniffles from my kids… you know, the kind that works its way through the whole family… and that left me thinking about how to enhance my immunity and my body’s natural defenses to fight the good fight. I’ve

also started a running programme, building up to the Knysna Half Marathon in July, so I definitely don’t want to get sick and not be able to train. I’ve decided to approach it in a very wellness way of course… and that is through a healthy balance. It sounds simple I know, but I believe the best way to stay well this winter is to follow these simple steps: eat plenty of fresh fruit and vegetables, drink lots of clean water, sleep, stress less, exercise, and supplement with a good multi and a daily dose of echinacea.

So here’s wishing you (and me) a cold and flu virus free winter.

Recognise individual needsImportantly, it’s key to recognize that each child is different and individual diets may need to differ to accommodate a particular child’s temperament, preferences and energy levels. As a Montessori teacher, pre-school principle and mother of three, Monique has first hand knowledge of the impact food has, not only on the individual child but also on a group of children. “I have seen time and time again how sugar and other fast-working carbohydrates can cause children to become over-active and struggle with concentration.”

Make food from scratchOne of the best tips is to make food from scratch. This way you know exactly what’s going into a meal and you can also guarantee it’s fresh with natural organic ingredients and no harmful additives. Organic produce is the best choice. It has greater nutritional value, few additives and less chemicals, MSG and pesticides than other, often cheaper products. Children that grow up on a natural diet with vegetables, fruit, berries, meat, fish and herbs, learn from an early age to appreciate good food with natural flavours.

Be mindful of glutenSo many food products contain flour, most of which is highly processed and from genetically modified stock. Wheat is most often grown with lots of pesticides. It’s no wonder that research shows an increase in diabetes and obesity in recent years. Flour plays a large role in today’s weight problems as well as other medical issues. Studies show that autistic children and children with ADHD can benefit if gluten is omitted from their diet. Many alternative options are available like organic buckwheat and quinoa flour or even grain free (see Monique’s cinnamon pancake made only with egg).

Be preparedIf you’re making all your food from scratch you may want to prepare meals in advance. A blender and steamer are very useful for food preparation and ice trays are invaluable for freezing small portions. Another useful tool, especially when introducing new flavours, is a closed ball tea strainer to contain fresh herbs. When freezing food, freeze it as soon as it has cooled down; try not leave it for longer than 30 minutes at room temperature. Use ice-cube trays for pureed food, that way you can remove small portions at a time. Another option is to use a non-stick baking sheet: add a tablespoon of puree in several heaps on the baking sheet, cover with an airtight bag and freeze. Write the type of food and the date on each rather than relying on your memory. Defrost over a low heat to keep nutrients intact. Never refreeze food, throw away any leftovers.

Watch out for food allergies, hypersensitivities & intoleranceCommon allergies in babies under a year old come from the protein in eggs, grains and milk. These may present as a rash, itch or upset tummy. It’s a good idea to only introduce one new food at a time, that way you can monitor any reactions or signs of intolerance. For 8 – 11 months Makes 4 – 6 portions

1. Blend all the ingredients, except the fish, husk and butter, in a blender until quite smooth. Coarsely blend the fish separately. Mix with the other blended ingredients, as well as the husk. Wet your hands with cold water and roll the fish into balls, then flatten them slightly to form fishcakes. Chill before frying.

2. Heat a generous amount of butter in a frying pan and fry the fishcakes over a low heat until they are cooked through, about 5-7 minutes per side.

3. Serve with vegetables or Brussel Sprout Puree.

BRUSSEL SPROUT PUREE

GLUTEN-FREE VEGAN

Makes 2 to 4 portions

1. Wash and remove the outer leaves of the Brussel sprouts.

2. Pour water into a saucepan to a depth of 3 – 5cm and bring to the boil.

3. Place the peppercorns and bay leaf in a ball tea strainer and add the strainer to the saucepan along with the Brussel sprouts. Boil for about 10 minutes until tender.

4. Pour off the water, add the butter and blend with a hand-held blender.

MAKE A VARIETY OF DIFFERENT COLOUR CAKES USING THIS SIMPLE RECIPE

We made a pink (strawberry) version, a yellow (mango topped with gooseberries) version, a green (spirulina) version and a purple (blueberry) version all at once. It was a feast both for the eyes and tummy. I often leave off the crust and make the filling as an ice-cream cake. You can set it in a standard cake tin for this.

CHOC-BERRY CHEESECAKE

Makes 1 cake

For the base: 1. Put all the base ingredients into a

food processor and blend until finely chopped.

2. Press into the base of a springform cake tin. Using a fork, puncture holes in the base and put it in the fridge while you make the filling.

For the filling: 1. Blend all the ingredients for the filling

together in a power blender until smooth. Pour the filling over the base. Decorate with berries of your choice.

2. Refrigerate overnight or put in the freezer to set. The coconut oil in the recipe helps the cake set when it’s in the fridge or freezer.

First of all, to make those lovely fluffy white breads, modern grain has been cultivated so that it contains much more gluten than it did in the past. Secondly, our diets have changed significantly in the past few decades. We now eat gluten in most meals, unlike in the past. Wheat flour is used in a vast range of modern, mass-produced ‘ready-made’ meals and sauces, (even your mustard can have it).

When our bodies digest gluten, the lining of the intestine is temporarily damaged. This makes it permeable to gluten proteins (hence ‘leaky gut’), which is the mechanism behind both gluten sensitivity and celiac disease. For most people this inflammation is healed relatively quickly after eating but for some it takes much longer.

Nowadays there are also other aggravating factors at play which can confuse the picture about whether gluten is to blame, including modern additions to the food chain, such as pesticides and GMO foods, which have been linked to ‘leaky gut’. Worldwide there has been a massive increase in the spraying of the herbicide Glyphosate on wheat crops over the last 20 years. To ensure there are no pesticide residues or genetically modified substances, which may affect your gut health, choose organic food.

If you think your symptoms may be caused by gluten, it’s important to get tested for celiac disease. If you think you are simply intolerant to gluten, try going gluten free for a minimum of 4 weeks, and re-introduce gluten to see the difference in how you feel. Beware simply substituting gluten with soy based products, as soy has its own health impact and unless organic, is likely to be genetically modified. Take good care of your general gut health, by eating plenty of organic vegetables, and introduce fermented foods, such as kefir, sauerkraut and probiotic-enriched yogurts. If you have ‘leaky gut’ it’s best to get tailor-made nutritional advice. Avoid damaging your intestinal lining through smoking, alcohol, or unnecessary antibiotics or drugs.

Kill-A-Germ

As international nutritional expert Patrick Holford explains in his book Good Medicine, although it is impossible to avoid our exposure to all carcinogens, we can make dietary and lifestyle changes that substantially decrease that exposure. While things like smoking may ring obvious alarm bells, eating organic food minimises our exposure to carcinogens from herbicides and pesticides. Holford also suggests avoiding processed meats (which contain nitrates), any burned or browned food (which has been oxidised), sugar, alcohol, and fatty foods exposed to soft plastics (including packaged meals).

Once you know what to avoid, you can start adding the good stuff. Increase your intake of brightly coloured fruit and vegetables (particularly those high in antioxidants, like carrots and tomatoes), eat ‘liver-friendly foods’ like onions, garlic, artichokes and cruciferous vegetables (for detoxification), increase your intake of omega-rich anti-inflammatory foods like oily fish, sprinkle turmeric on your food, and supplement with salvestrols and immune-boosting vitamins such as selenium, zinc, and vitamins A,C, D and E.

In the recently published book How Not to Die, Dr. Michael Greger suggests increasing your intake of phytates, that are found in the seeds of plants and can be ingested in the form of all whole grains, beans, nuts, and seeds. Dr. Greger is as passionate about turmeric as Holford, going one step further to prescribe a specific component of the spice called curcumin. He also suggests daily intake of freshly ground flaxseeds, ensuring adequate fibre consumption, and favouring green vegetables wherever possible.

While a comprehensive overview of the nutritional advice for preventing and supporting recovery from cancer is too broad to be covered here, these ideas may help to steer you in the right direction on your journey to wellbeing.

Another aspect of cancer prevention and recovery often highlighted as important in the holistic approach is a focus on emotional wellbeing. Perhaps one of the most well known proponents for this is author and metaphysical teacher Louise Hay. Wanting to explore the alternatives to surgery and drugs, Hay developed an intensive programme of affirmations, visualisation and psychotherapy to complement her

nutritional therapy regime. While her miraculous healing is not necessarily a call to abandon the allopathic route altogether, her practices are certainly enormously helpful in helping to ease the extreme emotional stress that can accompany a serious diagnosis.

Cancer.org suggests getting as much emotional support as possible, both from loved ones and professionals. They also cite ‘spiritual support through prayer, meditation, or other practices that help you feel more at peace’, as well as finding ways to express your feelings (e.g. through writing, music or art), engaging in gentle exercise where possible, and creating a home environment conducive to healing on all levels.

Whether or not preventing cancer is your aim, applying this advice in your life could certainly be helpful in achieving the state of emotional equilibrium so important in maintaining your most valuable asset – your health and wellbeing.

In 2007 I was misdiagnosed three times with a lip lesion that was thought originally to be a fever blister. It eventually emerged that Squamous Cell Carcinoma was the real culprit, and because of the uniquely aggressive nature of my case, I was wheeled into emergency surgery within 48 hours of diagnosis.

My first surgery was to remove the malignant sore at the source, causing me to lose one third of my lip. Three months later, what was again misdiagnosed as a lymph node in trauma became the indicator signalling that the cancer had spread into my lymphatic system.

My final treatment to ensure the annihilation of any rogue malignant cells was radium treatment for three months, which stole my taste buds for six months and my beard for good.

The emotional and psychological impact was far-reaching. I was suddenly exposed to my fear of death and, more surprisingly, my fear of wholehearted living.

I was blessed with the most incredible team of four doctors who, with great care and compassion, walked me through my cancer journey towards remission, where I am today. All of them offered the same advice when I asked how I could ensure that cancer never again has the chance to enter my body – “Be overly pedantic about what you feed your body and your mind.”

Ayurveda (the science of life) has a whole system of intelligent guidance to inform a healthy lifestyle. Its practice involves non-invasive and natural methods of correcting imbalances and healing the body. According to Medical Doctor and Ayurvedic specialist Rajen Coppan, one of the fundamentals is to live life in balance. A life lived out of balance and outside the laws of nature creates disparity in the body-mind and after time, when unattended, this imbalance becomes disease.

Finding balance means incorporating all aspects of existence from the spiritual and the mind, to the senses and the body. What we allow to filter into our minds has a definite impact on our state of being and our bodies. Without a spiritual practice we can suffer from a lack of purpose. In terms of the body, we can greatly benefit from practising preventative measures and being proactive about our health. Emotions are also key; we can decide to choose how we feel and the way we react to life’s circumstance.

Learning about the 3 gunas (primal qualities) is a way to remain mindful and focused on wellness.

According to Ayurveda, nature has 3 primal qualities that determine spiritual growth. These are known as gunas and are called sattva, rajas and tamas. In every desire, every activity, interaction, food and thought it’s interesting to note which qualities are most prevalent.

SATTVASattva represents intelligence and virtue and brings about balance and stability. It is light and has an inward and upward motion awakening the soul. Sattva provides happiness and contentment of a lasting nature. It is the principle of clarity, wideness and peace, the force of love that unites all things together with purity and harmony.

It’s associations are with the colour white; with daytime; and with heaven or peace.

Activities like prayer, altruism, selfless acts of kindness, self-care, compassion, cooking with intention, wisdom and contemplation are Sattvic.

RAJASRajas causes imbalance. It has motivation and looks for an end that offers power. It has an outward and self-seeking action

that creates fragmented energy and disintegration. Even though it appears to offer stimulation and pleasure initially, it’s not lasting fulfilment and leads to suffering. It is the negative side of passion that causes conflict.

Rajas is associated with the colour red; with action and passion; with sunrise or sunset; and with storms.

Things like horror movies, pornography, too much television, obsession, unhealthy co-dependency, bad language, gossip, negativity, preservatives, junk food and imitation perfumes and smells are rajasic. Replace these with a steady flow of good thoughts, meditation, wholesome food and nature.

TAMASTamas is heavy, dull and stagnant. Its action is inertia, obstruction and/or delusion. Represented by a downward motion it closely holds onto ignorance and insensitivity. Lack of awareness and unconsciousness or loss of awareness is typified by Tamas.

Tamas is associated with black, darkness and delusion; with nighttime; with negativity; with gravity and inertia.

Feelings like boredom, negativity, and apathy, activities that are self-defeating, dishonest, deceptive, unhealthy eating habits, lack of exercise and laziness are all tamasic.

To transform tamasic energy it’s helpful to imagine the element of fire. It requires movement and change and a way to release deep-seated patterns. Bringing in a new sense of the self, reframing old ideas, and breaking with the past is helpful. Outwardly this might require changing jobs, changing relationships or moving house.

MEDICAL MUSHROOMS

From anti-tumour to antioxidant, the healing qualities attributed to medicinal mushrooms are vast. Medicinal mushrooms like Reishi, Maitake, and Cordyceps are classed as ‘Host Defense Potentiators,’ which means they have the ability to increase the body’s potential to defend itself against pathogens and infectious diseases. In Japan, the Reishi mushroom in particular is highly revered for its noticeable effect on immunity, health and vitality, and ageing. In early days appointed physicians would go on expeditions high into the mountains to collect specific healing mushrooms for the royals.

Beneficial compounds like hemicellulose, polysaccharides, polysaccharide-peptides, nucleosides, triterpeniods, and other

metabolites are the compounds used to prevent ageing and cancer. They’re known to inhibit and regulate the immune system when it is overactive (chronic inflammatory diseases) or out of balance (stress, allergies, autoimmune diseases). Recent research has pin-pointed a protein-bound polysaccharide that is actively effective against tumors. Other qualities include helping neuron transmission, metabolism, hormonal balance and transporting nutrients and oxygen. Cordyceps Sinensis is classified in traditional Chinese medicine as a tonic that nourishes Yin (structure) and strengthens Yang (function). It is likened to ginseng and has been used to strengthen and rebuild the body after exhaustion or long-term illness.

MOON PHASE BREWING

The practice of creating concentrated herbal formulations in the form of a tincture in accordance with the phases of the moon has been done for centuries. Starting your tincture on a new moon and squeezing it on the full moon is said to yield a 15% stronger tincture. There isn’t any substantive reason as to why this works and it certainly sounds mystical but in practice it has been proven multiple times. Brewers believe the gravitational pull of the moon extracts the medicinal properties of the herbs into the liquid solvent more efficiently, and as the moon grows in strength, so do the herbal brews. Commercially, manufacturers don’t use the moon cycles as it takes too long and it means new tinctures can only start on a new moon.

Many medical professionals claim they see different effects during different phases of the moon. They apparently deliver more babies and see more injuries when the moon is full. A study of British physicians found that visits and emergency calls increased during a full moon and decreased during a new moon. Scientists at University College in London found that epileptic seizures decreased during full moons.

Some researchers have theorized that the moon’s gravity could have an effect on mood and behaviour by affecting the movement of liquids in the brain.

MANUKA

Although we know pure raw honey has amazing healing, immune boosting and anti-bacterial properties, the honey pollinated from Manuka trees is said to contain 4 times the nutrients. Research conducted at the New Zealand University of Waikato found that Manuka honey has a considerably higher level of enzymes than regular honey. These enzymes make up a natural antibacterial hydrogen peroxide. Certain strains from New Zealand are particularly rich in hydrogen peroxide, methylglyoxal and dihydroxyacetone. These properties in Manuka honey are stable and not easily destroyed by heat, light or enzymes in the body.

When buying honey be aware that many products from conventional supermarkets are not much different from high fructose corn syrup. Some of them have added sugar or have the qualities destroyed by high temperature heating. Look for honey that is raw and unheated. INFUSE This requires a double boiler. Put the herbs and oil in a pot over another larger pot of boiling water. Let the oil and herbs simmer for up to an hour. Make sure you don’t get water into your herbal oil infusion. If you prefer, you can infuse the oils using sunlight. This takes much longer (about 4 weeks, depending on sunshine). For this, you need to seal your herb/oil mixture in a mason jar and leave it for up to 4 weeks in a sunny place.

STRAIN When you are satisfied the oil has received all the properties of the herbs, remove from the boiler or the sunshine and strain the herbs from the oil. Do this by putting a few layers of cheesecloth over a large jar or bowl. You can use an elastic band to keep the cheesecloth secure while the oil drains through. Squeeze the last drops of oil from the cloth and keep the herbs aside. Rather than throwing away the herbs, tighten the cloth in one corner, fasten with a rubber band and use this parcel of herbs in your bath.

ADD THE BEESWAX Put the beeswax in a pan on low heat. Add the infused oil and melt them together. Once they’ve combined nicely, slowly pour into a jar or jars. Let it cool then put it in the fridge to see how solid your mixture goes. The more beeswax you use the thicker and harder the mixture will be. If you want it quite soft then use less beeswax.

APPLY TO BODY Scoop some of your salve out the jar and use it to spread over your body. The warmth of your hand will soften the texture and make it easy to spread. Use it as a massage balm as well. Coconut oil just needs a little body warmth and it melts beautifully.

IS THERE A LINK? Spirituality has become a subjective concept but in general, the idea includes a sense of connection to something bigger than you, and typically involves a search for the meaning of life. The study of medicine doesn’t necessarily involve exploration into the topic of spirituality, but the two aren’t mutually exclusive – in fact bringing them together can only do good.

Religious leaders the world over have long claimed that prayer and spiritual practices can help improve overall health and well-being. Research has shown that believing in a caring God can have a positive effect on depression treatment, rehabilitation in traumatic brain injury and in general, is correlated with better mental health. Findings conclude that no matter the religion - Buddhist, Muslim, Jewish, Catholic, Protestant or Other - spirituality is positively correlated with better mental health, specifically lower levels of stress and anxiety. What’s the connection? While there is no irrefutable proof of the role spirituality plays in physical health, the sense of belonging, purpose and social support often offered by a spiritual community play a vital role in maintaining a balanced, all-

round health and recovery when illness falls.Knowing that you have the support of loved ones, getting visits in hospital, cards, flowers and words of comfort are so important to keep a sick loved one in the right frame of mind. Healing happens faster when our ill kin know their loved ones are cheering them on and thinking positively. Holding on to the belief that you have your place and purpose in the world will keep your head in the right place to recover well. Though there doesn’t seem to be any strong research linking the two, you may find spiritual practice (even if you’re not religious) to have a positive influence on your general state of mind; making positive thoughts take preference in your head and keeping a sunny disposition.

Allergen | Milk

An intolerance to milk is possibly the most common food allergy, and it’s frequently found in infants below the age of three years. Those allergic to cow’s milk are likely to react to sheep’s or goat’s milk, too. An allergy to milk is caused by proteins in milk; and milk proteins are found in a large variety of products from cookies and candies, sausages and soups, cold drinks and mineral supplements. Milk proteins are also frequently used as ingredients in cosmetics and carriers for medicines.

Symptoms The most common symptoms include eczema and nettle rash or vomiting, diarrhoea, constipation and abdominal pain. Less frequently, reactions may present as hay fever-like symptoms from the nose and eyes and recurrent wheezing.

Symptoms may be present within a few minutes or up to an hour after exposure to milk. These are known as immediate reactions. Any reactions happening after an hour are called delayed reactions; in some cases symptoms show only after days.

Management The best and only fail-proof treatment for a milk allergy is complete avoidance of cow’s milk protein. Infants or little ones who

develop a milk allergy usually grow out of the condition. If you’re looking to substitute milk, you may want to try soy milk, rice milk, or hypoallergenic formulas based on hydrolysed protein or free amino acids.

Allergen | Eggs

Children are often allergic to eggs. More than half of them outgrow their negative reactions to eggs before adulthood and less than one percent of the adult population have egg allergies. Egg protein is also used in cosmetic products like shampoos but also lotions and creams. Egg proteins are found in many food items ranging from cooked eggs and pasta to cakes and cookies.

Symptoms Those very sensitive to eggs may elicit an immediate allergic reaction beginning with an itchy mouth and throat, followed by nettle rash, vomiting and asthma. Occasionally eczema may also occur; reactions usually show pretty quickly after eating eggs.

Management The only established treatment of an egg allergy is to avoid it altogether. Since egg is so widely used as an ingredient in so many products, completely avoiding eggs can be tricky. It’s not all bad though; protein is

found in high amounts in other foods, and there are plenty of other protein options to choose from.

Allergen | Fish

There appears to be no relationship between fish and shellfish allergies so those with a fish allergy do not necessarily have to avoid shellfish; and vice versa. While an allergy to fish protein is most common, it’s also possible to be allergic to fish gelatine made from fish skin and bones. It’s best to consult an allergist before taking fish oil dietary supplements.

Symptoms Fish often shows up in processed foods like pizza toppings, garnishes, sauces and soups. Commonly observed symptoms of fish allergy include skin and gastrointestinal reactions which happen shortly after ingestion. Individuals with allergic reactions to one species of fish tend to be sensitive to other species as well.

Management The best known treatment for a fish allergy is strict avoidance. Because fish is often implicated in cases of food-induced anaphylaxis, fish-allergic individuals are often advised to treat symptoms of a reaction with adrenaline.

Allergen | Crustacean shellfish

Within the shellfish family, crustaceans like shrimp, lobster and crab cause the greatest number of allergic reactions. Many shellfish-sensitive people can eat molluscs like scallops, oysters, clams and mussels without a problem.

Symptoms Symptoms of this allergy can range from mild reactions in the mouth to severe life threatening systemic reactions. Since shellfish retains the potential to be allergenic even after heating, it’s essential to avoid all forms of shellfish if you have an allergy. It’s important to double check any food label; crustacean shellfish may also be present in some processed instant foods like pizza, garnishes, sauces and salad dressings.

Management The best treatment is, of course, to strictly avoid the food. Carefully check ingredient labels of food products and be extra-careful when you eat out. Waiters, and sometimes the kitchen staff, may not always know every dish ingredient on the restaurant’s menu.

Allergen | Tree nuts

Tree nuts comprise a large range of nuts including the Brazil nut, chestnut, hazelnut, pine nut and walnut. Other variations are often also included in this group like almonds, pecan nuts, coconuts, cashews and peanuts. Nuts are known to be one of the most potent allergenic foods in the world, chiefly because so little needs to be ingested to elicit a response and also due to the severity of reactions. Tree nuts are often used as garnishes in salads, ice cream toppings and found in baking mixes, breading, sauces, and desserts and baked goods.

Symptoms Allergy to nuts often involves severe multi-systemic and respiratory symptoms and occasionally fatal reactions. The most frequent symptoms to tree nut allergies are skin reactions. Cross-contamination of manufactured foods, especially confectionary foods, presents a much greater challenge to manage.

Management Because adverse reactions to nuts can be triggered by minimal amounts of the

food (sometimes even by skin contact or inhalation), it’s imperative to strictly avoid the food. Those diagnosed with an allergy to a specific tree nut may be able to tolerate other tree nuts, but it’s usually advised to avoid all nuts.

Allergen | Peanuts

Peanut allergy is the most common cause of fatal food-related reactions. Being close to peanuts and having contact on the skin seem to be safe for most of those with a peanut allergy, but there have been reports of reactions induced by inhalation and even kissing someone who has eaten nuts. Roasted peanuts appear to be more allergenic than boiled and fried peanuts.

Symptoms Allergic reactions to peanuts range from mild swelling and itching in the mouth and throat, to severe life-threatening reactions including shortness of breath and drop in blood pressure. Immediate symptoms like tingling of the lips are a clear warning-sign that contact with peanuts might rapidly develop into a severe reaction.

Management Vigilance and avoidance is best for peanut allergies. Having epinephrine or carrying an epi-pen is essential in case of an adverse reaction. Peanuts are very difficult to avoid and accidental exposures are frequent.

Allergen | Wheat

Wheat allergy is most common in children but most outgrow it at a relatively young age. The grain is found in myriad different foods from cereals, pastas and crackers to some hot dogs, sauces and ice-cream. It is also found in non-food items like Play-Doh, and some cosmetic and bath products.

Symptoms Those allergic to wheat-related crops, including barley, oats and rye, can often tolerate rice, though not in every case. Symptoms of this allergy range from mild local reactions on the skin, in the gut and throat to, very occasionally, life-threatening reactions.

Management While there’s no simple substitution for wheat as an ingredient, baked goods such as breads, muffins and cakes can be made using a combination of non-wheat flours made from rice, nuts, corn, sorghum, soy, tapioca or potato starch. There are many options for wheat-free foods including those made from other grains such as corn, rice, quinoa, oats, rye and barley.

Allergen | Soybean

A member of the legume family, soy is a common ingredient in infant formulas and many other processed foods. Soy is used in many non-food products including body lotions and creams, soaps, pet food, adhesives and lubricants. Soy is a common food allergen in young children, though most children will outgrow this allergy by age ten.

Symptoms Soy may induce all allergic symptoms ranging from itching and swelling of the mouth and throat, nausea, cramps and diarrhoea, hay fever and asthma or hives. Sometimes the symptoms can be life-threatening including shortness of breath and drop of blood pressure.

Management As with other food allergies, the best way to manage a soy allergy is to avoid food and products that contain it. Those allergic to soy are no more likely to be allergic to tree nuts or peanuts than they would be to another food. Chickpeas make a good soybean substitute in most recipes.

An important defense component of your immune system is found in the lymphatic system. It’s a network of tissues and organs that help rid the body of toxins, waste and other unwanted materials. Its primary function is to transport lymph, a fluid containing infection-fighting white blood cells, throughout the body. Lymph nodes are situated at the throat, armpits, chest, abdomen and groin, and are close to arteries. The lymph picks up bacteria from the tissues and trap them in the lymph node. White blood cells called lymphocytes can then attack and kill the bacteria. This is why your lymph nodes tend to swell if you have an infection. Viruses and cancer cells are also trapped by lymph nodes – often communicating early signs of an infection. In the lymph nodes is a translucent liquid that circulates cells to different body parts to fight disease and infections. When the lymphatic system is blocked, it can create a build up of cellulite and water retention. Here are some practices to stimulate the lymphatic system.

SWEAT IT OUT Jumping on the trampoline or skipping are excellent activities to stimulate the system

and get the body sweating. Saunas are also beneficial. Both these practices allow increased circulation that help release toxins, regenerate tissues and improve lymphatic flow.

PRACTISE YIN YOGA Deeply restorative postures during the practice of Yin Yoga, can help release areas where the lymph is congested. Generally poses are held for 3 minutes and up to 10 minutes. Gently pressure on the body during this time stimulates lymphatic action. Often poses twist the body or reverse the flow of gravity which allows movement in areas that don’t move in normal daily activity. Poses can be used to target the areas where there are a concentration of lymph nodes.

REVERSE GRAVITY Allow lower body circulation by reversing the flow of gravity in the legs. This is easy when you use a wall to rest your legs against. Lie on the floor and push your butt up against the wall with your legs resting straight up. Stay there for at least 5 minutes to boost lymphatic circulation.

REDUCE SITTING TIME Long periods of time without moving your legs and hips is detrimental to your circulation and your organs. Sitting means lymphatic fluid is stagnant. Lymph doesn’t pump on its own, so you have to move to get it circulating. Using a sitting ball encourages you to move - you frequently have to shift your weight from leg to leg to remain balanced. Another option is to have a standing station next to your chair. Find a way of elevating your desk and spend some of the time working while standing. Be aware of the amount of time you spend sitting and stand or walk at every opportunity. Stand up for phone calls and do walking meetings if you can.

RUN HOT & COLD Running hot then cold water in your shower stimulates the lymphatic system by constricting and expanding the blood vessels. It also activates the immune system. If you find cold water a bit of a challenge start with a bucket of cold water next to your shower. Step out the shower and into the cold water a few times. You can build up to immersing your whole body and soon you will look forward to the invigorating effect it has.

BRUSH YOUR BODY Being fairly close to the skin, the lymph system doesn’t need deep pressure to be affected. You can do it by simply brushing your skin with a fairly stiff dry brush. Do it daily before you shower and cover your whole body. Remember to brush towards the heart. If you are covering the lower part of your body, brush upwards. If brushing the upper part, brush downward.

DO DEEP BREATHING Breathing through the diaphragm builds pressure and expansion that helps pump lymphatic fluid. You can increase the effect and encourage toxin drainage by simultaneously moving the arms. Open your arms out to the side to a T shape. Breathe in through your nose and lift your arms up above your head. Hold your breath at the top with your lungs filled with air. The prolonged lung expansion squeezes the thoracic duct and creates more flow. Start to slowly breath out through the mouth, and at the same time move your arms down with control. You might feel lightheaded from an abundance of oxygen. Do it a few times to begin with and build up to doing it more frequently. Include this as a daily practice.

The word ‘ultra’ is slapped on everything from laundry detergent and protein shakes to beer and is a handy buzzword for many things. Yet put it in front of the word marathon and you really get its true meaning. Over 50 km of marathon running sounds completely mad, or is it all in the thrill?

The thrill of the challenge, the thrill of the victory, the thrill of achieving your highest possible goal, the thrill of getting the body to do what it shouldn’t possibly be able to do? Yes, yes and yes – or perhaps someone dared you, or you’ve opted to support a good cause. The reasons may be different, but what typifies the challenge is the endurance factor.

Detrimental health effects around inactivity receive plenty of media scrutiny, but what about the effects of immense physical activity? What are the risks? And what about the benefits of running more kilometres in a day than many of us walk in a month? There

is undeniable evidence that running helps weight loss, improves bone density and has a lifting, calming effect on the mind. Running improves the way we feel about ourselves and grows self-confidence. Research from Stanford University of California found that ultra-runners had a low incidence of high blood pressure and less than 1% had been diagnosed with heart disease.

Interestingly, breathing problems like allergies and asthma are common in runners – largely from time spent outdoors near pollen flowers and trees. Runners also tend to get hurt - injuries are part and parcel of running but injuries are most common in younger, inexperienced trail runners. did you know?The longest certified ultramarathon in the world is The Ultimate Ultra, an astounding 2 092 km held in New York. There is the annual Trans America Footrace, run in 64 consecutive daily stages from Los Angeles to New York. Runners cover around 4 800 km at about 72 km a day. Closer to home, don’t forget our famous Grand Ultra – the largest ultra-marathon race in the world, The Comrades Marathon. Twenty thousand runners enter every year for a gruelling 87 km with only 85% of runners finishing.

Fuelling up for a race that can take 12 hours in temperatures over 35° C is a challenge, especially as runners are limited in what they can carry. It’s commonly accepted that the jarring act of running reduces an athlete’s ability to absorb nutrients. Ultra-runners can burn between 400 and 600 calories an hour and topping up calories through the run is key - eating before the race and often through the race helps keep energy levels up. Athletes have just two or three hours of glycogen stored in their muscles and liver.

Traditionally it’s believed that carbohydrates, as a source of energy, should be eaten before any race. They’re stored as glycogen in the muscles and liver and glycogen is the body’s most readily available form of energy. But it’s not the only source, during an ultra-marathon the body burns both glycogen and fat. Carbo loading two or three days before a race to fill the muscles with glycogen is recommended. Steer clear of high-fat foods and protein which fill you up faster than carbs. Rice, oats bread, pasta, baked potatoes and yoghurt are all good options. Fruit is high in carbs but also high in fibre which can cause stomach trouble midrace. Water and fluid are as important as food and runners need a strategy on how to carry and consume the right amount of water.

Running has profound benefits and effects on the body and mind. The benefits are vast, but the risks of ultra-marathon running must be considered, and addressed with proper training, nutrition, and rest. Ultra-marathons allow individuals to do something remarkable that is usually beyond one’s expectation. The question now is; are you up for the thrill?

3 ENDURANCE TIPS According to Jennifer Lager from the Centre for Athletic Performance Enhancement, a vital part of any endurance race is training the mind.

1. VISUALISE - Key to mental training is being able to picture yourself doing an ultra-marathon. This technique is called visualisation and the better image you have of completing the marathon, the better chance you have believing you can finish the race.

2. HAVE CUE WORDS - In moments where you need to ‘dig deep’ to keep going, another technique is ‘cue words’. Words that represent everything you need to draw on, at that moment.

3. STAY IN THE MOMENT Staying in the moment is critical, being present in the current kilometre, in the current step and not allowing the mind to worry about what still needs to be accomplished.

Even if you had a couple of weeks to explore you probably wouldn’t get to see everything on offer in the area. Oh, and there’s also WiFi. Be warned though, once settled at Lakeside you may not go anywhere else.

Both staff and management are measurably considerate and respectful, I imagine they’ve had ample experience with guests savouring the opportunity to shake off city angst. If you want interaction, they’re highly forthcoming with suggestions and completely willing to deliver a bicycle to your room in the early hours of the morning

or pull the canoes out at sunset, but if they sense you want privacy and peace, they’re beautifully discreet.

HARVESTING ROOTS

Different plants peak during certain times of their growing season, so autumn is traditionally the right time for harvesting roots. Because roots often grow deep into the ground to access water and nutrients further down in the soil, harvesting them can be a little tricky. You’ll need to dig deeply to carefully loosen the soil so you’re best able to pry out your root. With gentle persistence you can turn up even the most stubborn root. Once your roots are free, you’re ready for the drying stage.

DRYING ROOTS

Give your roots a firm but gentle clean right after harvesting. Residual dirt on the surface of the root can become trapped in the wrinkles that form as the herb dries. To prevent the dirt transferring to your herbal recipes, clean it well. Use a soft brush and running water to carefully scrub the roots clean. Some herbs may have a thick clump of fleshy roots –break theses clumps into smaller pieces and they’ll be easier to work with. Once your roots are clean, pat them dry.

Lay your clean roots on a cutting board and use a clean, sharp knife to slice them thinly. Thinner slices dry more quickly and are less likely to grow mould. You can run the roots through a coffee grinder to powder them, or grate them instead.

USING ROOTS

There are so many useful applications for roots and the toughest part is simply deciding which roots you wish to grow and harvest. A few roots that really stand out for keeping healthy during colder months include comfrey, ginger and liquorice.

• Comfrey is used for many conditions like internal ulcers, chronic coughs, gout, burns and sores. It can be taken as a tea or a compress.

• Ginger is best for cold and flu season. A little ginger in hot water, taken every day in the cold months, can keep you warm and help fight off nasty seasonal sicknesses.

• Liquorice is soothing for sore throats and lungs, and makes a harmonizing ingredient in respiratory formulas.

WINTER WONDER

Who says flowers can only flourish in spring? Orchids offer floral abundance throughout the colder season. As queen of the winter indoor plants, Cymbidium orchids are relatively easy to grow and, under the right conditions, will generously reward you with bountiful flowers in winter. Here’s how to get the best from your cymbidium.

LOCATIONKeep your cymbidium away from direct sun and wind. It will flourish in a well-lit, ventilated and warm room. If the orchid gets too little light, it won’t flower well. In winter, place your cymbidium orchid indoors or on an enclosed spot with morning and late afternoon sunlight, keep it away from draughts.

TEMPERATURE Cymbidiums can withstand temperatures as low as minus 2 degrees but if your garden gets heavy frost it’s a good idea to protect your plant. Cymbidium orchids are ideal outdoor patio plants, but subtropical areas may be too warm for them. Low night temperatures in winter offer the best growing conditions for cymbidiums. Mist the leaves of your cymbidium when the temperature exceeds 28 degrees Celsius.

Humidity is important to cymbidiums, too. Cymbidiums start to feel uncomfortable when it gets below 40% humidity. The best solution is to place your orchid on a tray of pebbles under a layer of water. This way, your plant will find its own personal micro-climate.

FEEDING It’s best not to overfeed cymbidiums but good food is still very important. You can feed your cymbidium orchid with a balanced orchid fertiliser or a slow release fertiliser in spring and a liquid fertiliser during the growing season. Cymbidiums bloom during winter and each plant can have up to fifteen or more flowers. The right amount of fertiliser is also important for bulb growth and good flowering the following year.

WATERING Cymbidiums are evergreens and should be watered all year round, but avoid watering your plant if the soil in your pot is damp. If they’re allowed to dry out too much, flowering the following year may be poor. A rule of thumb: water your orchid two to three times a week in summer and once a week in winter. In spring and autumn, watering once or twice a week should suffice. It is best to water your plant in the morning.

SAFETY TIP If your cymbidium lives outdoors, keep it off the ground away from slugs and snails – this is an orchid’s worst enemy. A small quantity of snail bait around the plants every two weeks in flowering season may help control pests.

HOW TO RE-POT A CYMBIDIUM

Before you start, you’ll need a sharp sterilised knife, a pair of scissors and a flat surface to work on. Keep a spray bottle of diluted methylated spirits nearby to give your tools a clean every now and then.

• Carefully remove the plant from its old container

• Remove the old potting soil by firmly shaking it off or place it under a tap and wash it

• Remove any dead leaves, old stems and any weeds.

• Prepare your potting mix• Add gravel at the base of your

new pot to improve drainage and add weight to the pot

• Fill your new pot with orchid potting mix, working it between the roots until the bottom third of the bulbs are covered

• Water thoroughly afterwards to get the mix settled and the roots growing

• After that, water and feed as usual

HOW TO SHAPE YOUR MESSAGE

Whether selling in business, educating students, persuading colleagues, inspiring an audience or giving a keynote speech, these are some of the principles I use for my presentations and coaching others.

1. Position your presentation. Put yourself on the right platform. Take the time to explain why your message is important, why anyone should listen to you and why it’s important to them.

2. Speak to one. No matter how many people you talk to, talk as if talking to one person. Look at the article above. I wrote it for you.

3. Package your concept or idea, not the topic. Topics are repetitive. People have heard the topic. Package a concept that people can relate to and they will be more interested. Anyone can present on the topic of love, but when John Gray wrote Men Are From Mars, Women Are From Venus, we got the idea and we wanted to know more.

4. Deepen the value. Illustrate your idea with facts and story. Show, don’t tell, why your idea is a good one.

5. Create Value with a takeaway. Always give something people can use immediately - an idea, a formula. Something that is immediately useful. Focus on serving them, not yourself. They will be inspired by your message, not by your ego.
