There are certain things in life thatput an automatic smile on myface — my family, friends, my

dog, Kea, innocent babies, beautifulsunny days and random acts of kindness— the list goes on. However, when foodenters the picture, there’s one dish andone dish alone that I adore, one that nomatter what I’m craving, I can eat it andbe totally satisfied — that’s beef stew!This delicious creation is serious comfortfood at its best. Imagine the combinationof vegetables and meat mixed with theperfect gravy atop mounds of rice! And if

the stew is madefrom the heart andwith the rightamount of love,then you can prob-ably bet that it’sono to the max.

Now, I usuallyrely on the aid ofmy handy dandy

crock pot to cook up the perfect stew, yetthis week I was graciously treated tosome of the most “Ono, You Know” wor-thy stews our island has to offer. So, whilethe kitchen may be “stewing” this time ofthe year, I bet you the holy command-ments of all things stew are strictly fol-lowed by the talented chefs at the follow-ing establishments.

Rainbow Drive-InIt’s been said that at the end of every

rainbow there lies a pot of gold, yet hereat Rainbow Drive-In it’s the pot of stewthat patrons are after — myself included.

Keep in mind, the beef stew is a specialon the menu and is only offered everyother week on Wednesdays, Saturdays

and Sundays.“We alternate the beef stew with our

curry stew each week,” Rainbow Drive-Invice president Jim Gusukuma explains.

Priced at $6.25, loyal patrons receive aheaping portion of beef stew made withboneless stew cut beef, carrots, onionsand celery, served with two scoops ofrice and a hefty portion of macaronisalad. But what sets this plate of stewapart from the rest is the special blend ofspices that give it that extra kick.

“We’re not giving away our secrets,”Gusukuma says. “But I can say that ourtomato-based stew is initially cooked theday before serving and then cooked andthickened again prior to offering it to ourcustomers — it’s a known fact that thestew tastes better on the second day,” headds with a laugh.

Agreed! It's no wonder locals and visi-tors alike are flocking this famous estab-lishment to get a taste of the rainbow.

Makino Chaya is constantlyupping the ante of whatcustomers can expect to

receive for their dollars’ worth.Earlier this year, the uber-popular buffet restaurantexpanded its repertoire with there-introduction of a pre-set menuthat was included in the all-you-can-eat buffet price.

Well, Makino Chaya’s done it again,because now diners can shabu shabu totheir hearts’ content for the all-inclusiveset dinner price of $29.98 Monday-Thursday and $30.98 Friday-Sunday.(Lunch costs $13.98 Monday-Friday,$16.98 Saturday-Sunday but does notinclude shabu shabu.)

“It’s like Disneyland here — you pay anadmission and then you get to try every-thing,” laughs Jo Makino, president ofoperations.

The Aiea eatery just began offering the hotpot options earlier this summer after watch-

ing the steady rise in shabu shabu’s populari-ty.

“The basic cuisine in Japan was teriya-ki, tempura and stuff like that, but nowthat a lot of people are getting familiarwith Japanese food, they’re starting toventure out in other directions,” Makinoexplains. “Hot pots are getting pretty big,so we want to grow with the trends too.”

Each shabu shabu hot pot is portionedinto halves and filled with both a miso andshoyu broth so diners have a choice ofhow to cook their meal, and all orderscome with vegetables like shiitake mush-rooms, choy sum, Napa cabbage andsuch.

“They can order the seafood shabushabu, where there is going to be KingCrab, Dungeness Crab, Fresh Oysters,Shrimp, Clams,” says Makino.

Or folks can indulge with a platter ofWashugyu beef, a specialty made bycrossing the famous Japanese BlackWagyu (the cattle used to make Kobebeef) and the finest American Black

Angus.“It’s kind of like an American Kobe

beef,” Makino says. And just like Kobecattle, Washugyu cows are raised in thebest of conditions.

“They feed (the cattle) beer to relaxthe muscles, they give it massages. It’svery organic,” Makino says. “The cow

lives a stress-free life, and that makes themeat more tender, more flavorful, andthat’s why we’re going to use that kind ofbeef.”

Unlike other restaurants, where a sin-gle serving of Washugyu can costbetween $40 and $50, Makino Chaya isoffering this super prime beef at all-you-

can-eat portions (during dinner hoursonly), so customers can indulge with a 3- to4-ounce steak stir-fried on the teppanyaki,or opt for thinner slices of the tender beefthat cook perfectly in the bubbling brothsof the shabu shabu hot pot.

“We ordered around 20,000 pounds of theWashugyu, so we’re going to serve that untilit runs out,” Makino explains of the extrava-gant offer. “It’s kind of like, ‘for a limitedtime’ right now, but if it runs out, maybe wecan order more or offer it as a special.”

On top of that, Makino Chaya still offersits renowned all-you-can-eat seafood buffet,

a true smorgasbord of Snow Crab, KingCrab, Garlic Dungeness Crab, Soft ShellCrab, Lobster, Garlic Shrimp, GreenMussels, Manila Clams and a wide assort-ment of poke.

“Ahi Poke, Tako Poke, Top Shell Poke,Green Mussel Poke, you name it, we got it,”Makino says with a smile. “You can splurgeon all the seafood you want here — it’s thebest quality you can get.”

That guarantee extends to the menu aswell, where hungry guests can order made-to-order plate after plate of Miso Butterfish,Puri Puri Shrimp, Sake Shio Yaki, Iddako

Karage, Pork Katsu, Shrimp Tempura, SoftShell Crab and more.

“We fry the Shrimp Tempura and the SoftShell Crab to order, that way we can controlthe quality so when it comes to your tableit’s nice and crispy,” Makino notes, addingthere also is an array of fresh sushi andsashimi all made-to-order, including Uni,Hamachi, Soft Shell Crab Roll, Ahi, Salmonand, of course, the Fresh Oysters.

“We’re like a Costco of restaurants, whereyou can find any kind of Japanese cuisineyou could ever want,” Makino contends.“We’ve got it all!”

Located on the first level of Ala Moana Center,California Wok welcomes those from all “woks” of lifesearching for fine, tasty and healthy Chinese cuisine.

“People are always looking for low-fat (dining) options,” saysowner Winnie Li, who has managed the eatery for the past five years. “We only usecanola oil, fresh vegetables and we cook with fresh ingredients. When people calland order, the dishes are cooked to order (so everything is fresh).”

With the slogan “You never imagined that healthy Chinese foodcould be this tasty,” California Wok first opened in Hawaii in 2001,with the mission to provide locals with healthy, yet flavorful,Chinese cuisine. This standard still remains, according to Li,who points out that health-conscious customers can even seehow many calories are in each menu item before deciding whatto order.

“We print the calories on the menu,” Li explains. “We also printout whether the dish is spicy or not spicy (signified by a chili pep-per). The happy face symbol stands for light or low-fat dishes.”

Open daily from 10 a.m. to 9:30 p.m., the restaurant offerscustomers a variety of menu items for lunch and dinner.Favorites on the lunch menu include Sweet and SourChicken or Pork ($7.35), Shrimp with Mixed Vegetables($8.29), Shrimp with Asparagus ($8.45), Beef SzechwanStyle ($7.45) or Mongolian Beef ($7.45). Items on lunchmenu are served with steamed rice and salad.

“People who like white meat can order Chicken withBroccoli ($7.35) — sliced white meat chickenwith fresh broccoli in a light, delicioussauce — or Chicken with Mushroomsand Pea Pods ($7.35),” Li says. “OurCrispy or Tender Orange FlavorChicken ($7.35) and General Tzo’sChicken ($7.99) are popular, too. The GeneralTzo’s Chicken is a little spicy and the sauce is tasty.”

Other popular menu items are Chicken with Mixed Vegetables ($7.45 half,$10.49 full) — white meat chicken mixed with mushrooms, pea pods, fresh broc-coli and carrots in a tasty brown sauce — and Chicken Chow Mein ($7.95), pan-fried soft noodles served with bean sprouts and fresh scallions. While the eateryprovides its customers with a large selection of Chinese cuisine, Li says thatCalifornia Wok does not have a “signature” dish, because of the wide-rangingpalates of its clientele.

“It really depends on the people,” she says. “Some people like chicken,shrimp or beef, while others are vegetarians. If they’re vegetarian, we offer

them dishes with tofu or only vegetables. If they only like chicken orchicken breast, we’ll suggest our Lemon Chicken ($7.45 half, $10.49 full)or our Hot, Spicy Orange Flavor Chicken ($7.45 half, $10.49 full), whichis fried. If they want soft chicken, we’ll offer Chicken with Broccoli($7.45 half, $10.49 full) or Chicken with Asparagus ($8.59 half, $11.55full).”

California Wok also offers party pans (available in medium and largesizes), featuring some of its most popular entrees such as Beef andBroccoli and Shrimp with Mixed Vegetables.

The majority of California Wok’s customers are workers from storesin Ala Moana Center — who receive a 10 percent discount — as

well as office or hospital workers, according to Li. While diningin is a common option for the mall employees, CaliforniaWok’s takeout and delivery service are frequently utilized.

“We deliver from Ala Moana to anywhere within four miles,”Li says. “Delivery is free with a minimum order of $15.”

In the upcoming fall months, California Wok plans toexpand its menu further with the addition of Shrimp

Egg Foo Young Noodle Soup ($9.95).“We’re going to make a noodle soup

(called) Shrimp Egg Foo Young becausethis is a noodle soup,” Li says. “You can

choose what type of noodle you want —egg noodle, chow fun noodle or vermicelli noodle. We plan to

add this dish (to our menu) in September or October.”

for a Japanese take on Tawainese cui-sine with a modern and sophisticatedtwist, enter Jin Din Rou and be ready

This magnificently chic and stylish restaurant islocated on the corner of King and Kaheka streetsand welcomes patrons with one thing in common —an intense desire to sink their teeth into Xiao LongBao aka Shanghai soup dumplings.

“We sell close to 1,000 Xiao Long Bao a day inaddition to excellent noodle dishes and otherTaiwanese-style favorites,” says restaurant managerBob Suzukawa.

And albeit delicious, do keep in mind that XiaoLong Bao is accompanied with three-step instruc-tions and a caution label. Why, you may ask? Well, ifyou’re not careful, you’ll be squirting hot soup atyour tablemate across from you, or on yourself forthat matter, with each and every bite — it is calledsoup dumplings for a reason.

Don’t be intimidated; the instructions are easy tofollow. First simply dip the soup dumpling from thebamboo steamer basket into the recommendedblack vinegar, then carefully place it on your soupspoon before piercing it with your chopsticks. Soupwill spill from the dumpling into your spoon, allow-ing you to enjoy a burst of flavors as you slurp upthe soup along with the dumpling itself.

“We present you with 10 varieties of Xiao LongBao (starting at $5.90) to choose from, such asSteamed Dumpling with Seafood Broth and SteamedDumpling with Spicy Chili Flavor, the original PorkXiao Long Bao and Oolong Xiao Long Bao,”Suzukawa says.

“Chen Wen Cheng is our master dim sum cheffrom Taiwan and he makes the Xiao Long Bao wrapsby hand, along with the savory broth and fillingslike pork, chicken and shrimp — everything isfresh,” Suzukawa explains.

It’s evident that Xiao Long Bao is the mainstayhere and takes center stage when it comes to satis-fying your appetite. However, there are many otherexquisite dishes prepared by skilled chefs, like

Hiromasa Yamanaka, that are palate-worthy as well.According to Suzukawa, the most requested noo-

dle dish is the Tan Tan Noodle ($9.99), featuring apiping hot bowl of flour noodles in a thick sesame-based broth, for which the sesame seeds aregrounded fresh every day.

“That (Tan Tan Noodle), along with our Sweetand Sour Pork and Ban Ban Ji (boiled chicken withsesame sauce) appetizer, are among our top sellershere,” he says.

Now, if you prefer a bit of a kick to your meal, optfor the Mapo Tofu ($9.50), showcasing an enticingblend of bean curd Szechuan-style with savorymorsels of ground pork.

“This Mapo Tofu is little different than what’s

served at your typical Chinese restaurant,”Suzukawa admits. “It’s spicier and the gravy is thickand not very sweet, but it has tons of flavor.

“I also recommend the Mu Shu Pork ($9.50 small,$18 large). It consists of stir-fried pork with egg andJew’s ear, along with a dash of shoyu.”

“For the rest of this month and into

September, we’re promoting a Chef’s AppetizerPlate ($25) that varies daily depending on thechef’s choice. For example, it could be some-thing like steamed chicken, char siu, steamedshrimp, jellyfish and squid,” he adds. “Alongwith that we’re also featuring Jin Din Rou FriedChicken Legs ($18), served with shoyu andlemon sauce, and Big Crispy Fried Noodle($13.50) with pork and bean sprouts.”

So, while Jin Din Rou’s expansive menu may beoverwhelming for the indecisive diner, the trickhere is to order a few delectable entrees for thetable to share while taking on piles of baskets ofXiao Long Bao. There’s no MSG here, just moundsof remarkable food that you won’t soon forget.

When Lobster King first openedabout a year ago, it attractedcustomers in droves. Perhaps

many of them wanted to see if the KingStreet eatery could really live up to itslofty proclamation that it was the “king”of lobster. Now, a year later, the crowdshave not died down — the ultimate testi-mony that Lobster King is making goodon its bold claim. Drive by Lobster Kingon any day of the week at any time, andyou’re likely to see a full dining room witha line forming out the door.The other testimony, of course, would

be to try Lobster King’s food, whichincludes lobster entrees prepared withvarious sauces. Lobster dishes includeLive Lobster with Ginger and Green Onion($14.95 per pound) and Live Lobster withBlack Bean Sauce ($14.95 per pound),which owner June Stewart says is one ofthe most popular items. The HouseSpecial is Live Lobster with Garlic ButterSauce ($14.95 per pound). “Everything is fresh,” explains Stewart.

“We ship in lobster about two times aweek ... and we have 30 tanks.” Plus,Stewart adds, Lobster King is always com-ing up with something new thanks in largepart to Jay Chen, Lobster King’s seafoodbuyer and chef. “He comes up with a lotof the recipes … he always comes up withdifferent things,” she says.

But Lobster King is so much more thanjust lobster. Chef ErnestoYeban quickly cooked up Kenny’s mostpopular Local Boy Stew ($12.49), whichwas absolutely delicious. When venturing out of the office for lunch, hun-gry nine-to-fivers often run into a variety ofhurdles that can make dining out during the

work week a bit unappetizing.But finding an affordable midday meal needn’t be an

added item on that already all-too-long list of things todo; simply head to Hukilau for a taste of small-townHawaii conveniently located in the heart of the big city.“I think we have been well-received in the local down-

town community,” says Jason Takemura, executive chefand general manager of the restaurant, which is locatedin the lower lobby of the Executive Centre Hotel.“Since day one, lunch has been busy every day.”One item the lunchtime crowds can’t get enough of is

the Ahi Poke Salad ($13). Made with inamona ahi pokeand served on a bed of mixed Nalo greens, this healthydish also includes local vine-ripened tomatoes, cucum-bers, Maui onions, crispy hasu chips, avocado and ahouse ponzu vinaigrette.“This is a great way to eat a light but hearty lunch

without feeling sluggish when you go back to work,”Takemura says. “(It) is our most popular salad that isserved as an entrée.”Another popular main course is the Maunakea Kobe

When three local boys – one fromKapaa, one for Ewa Beach, and thelast from Hilo – opened the first

Hukilau restaurant more than a decade agoin San Francisco, it was to create a place where they could meetup for tasty local-kine food, relax with some island jams and talkstory with other Hawaii transplants now living on the Mainland.“They wanted to create a place where ‘locals’ could go,” says

Jason Takemura, executive chef and general manager of theHonolulu eatery, which opened in the downtown ExecutiveCentre Hotel in May 2007.“(The restaurant) became a place of gathering all of the peo-

ple from Hawaii (together), hence a play on the name Hukilau.” In addition to the San Francisco and Hawaii locations, there

is a Hukilau restaurant in San Jose, Calif., as well.“The Mainland restaurants do very well with the local crowd,”

Takemura says. “There are so many people from Hawaii who liveon the West Coast — now they have a place where they can stillfeel attached to their local roots.”And with a menu serving upscale plate lunch favorites like

Miso Butterfish ($19), Asian Chicken Salad ($11), Portobello“Katsu” Mushroom Sandwich ($12), Homestyle Fried PorkChops ($12; $10 during Happy Hour), Kim Chee Shrimp FriedRice ($9; $7 during Happy Hour), Huki-min Saimin ($11) andOxtail Soup with rice ($12), you can’t help but feel the aloha.“They have been a success since day one,” says Takemura,

who is always impressed with the weekly specials sous chefNick Garces thinks up.“He does an excellent job coming up with new and creative

specials,” proclaims Takemura, noting the Roasted Garlic-Crusted Prime Rib special, which is served only on Wednesdays.“A lot of times he incorporates some type of risotto dish,”

Takemura says. “If he doesn’t run a risotto special, we willalways have people complain of ask to special-order the dish.We always accommodate them and make it.”Hukilau also provides catering services, as well as live enter-

The meal comes with yourchoice of french fries or Caesar salad, but garlic fries,sweet potato fries, onion rings or truffle fries can besubstituted for a $1 more.

“This is one of our most popular items,” Takemurasays. “Who doesn’t love a thick, juicy burger with all thefixings already built in … and bleu cheese?!”

Those who crave something even more substantialcan’t go wrong with the Bento of the Day ($16), whichincludes medley of salad, appetizer, entrée and dessertoptions that are never the same day-to-day.

“The bento changes daily and always has fresh fish,”Takemura says. For example, on a recent visit to Hukilau,the bento box contained Nalo Mixed Greens Salad, KaluaPig & Rock Shrimp Spring Roll, Grilled Opah with LemonCaper Butter Sauce, white rice and Asian vegetables, anda Cinnamon White Chocolate Bread Pudding with VanillaCrème Anglaise. Return the next day, and the meal’s con-tents will have completely changed.

“This keeps it ‘fresh’ for customers who frequent therestaurant often and doesn’t allow them to feel like theyare always eating the same thing,” Takemura notes,adding that including a salad, appetizer, entrée anddessert all at once also cuts down on the dining time forthe busy guest on the go.

“Most people don’t have time to enjoy a four-course

lunch on a limited lunch hour,” he explains. “This gives(diners) small but generous portions so that they canenjoy variety during their meal.”
