8:45 a.m. ― Erosion of Meal Rituals Shelley Balanko, Ph.D. Got the munchies? Need energy to get through the next meeting? Have a snack. Eat with others or by yourself in your car, at your desk, in a meeting, on the street. Eating anything, at anytime, anywhere. It matters not in American food culture. What’s for dinner? YOU decide. It wasn’t always this way in the USA. We once were a culture grounded in three square meals a day. We’ll look at our meal-centric past while exploring the present with an eye on the future. Our proclivities for snacking, immediate consumption and brunch will be explored, and we’ll discuss the cultural underpinnings of these meal-ritual evolutions. 9:45 a.m. ― The New Convenience Tamara Barnett In a society where consumers describe feeling overscheduled, under rested, and time-squeezed, the mandate for convenience has never seemed more important. And yet, the notion of convenience has evolved beyond seeking quick-and-easy solutions to encompassing aspirations for empowerment, partnership and personalization. This presentation will give food-business professionals a fresh perspective on the ‘New Convenience’ and its emergence from a culturewide reassessment of what it means to achieve value from food experiences. We’ll also describe how the new consumer definition of convenience has created new expectations for retailers, manufacturers and food service and revealed opportunities to engage with consumers around their changing approaches to meal prep, plating and procurement.

11:00 a.m. ― Video Engagement: How Consumers Navigate Modern Food Culture Melissa Abbott Our ethnographers go deep into consumer culture, bringing to life the consumer motivations surrounding the evolution of food and beverage rituals. In our interactive video session, you will experience how consumers navigate modern convenience and procurement in contemporary food culture. The valuable insights gained will continue as we break for tabletop discussions on the most salient topics impacting the food and beverage industry today, gleaned from the consumer videos.

1:15 p.m. ― Procuring and Playing Christina Bowden What does how you shop say about who you are? We often talk about how consumers are personalizing their food as a means of meeting their own needs and expressing their values. However, as the food landscape diversifies, the process by which food is procured and the journey upon which consumers embark offers a means for consumers to embody their values. In the future, forms of procurement that allow consumers to engage in identity-play will dominate, balancing the desire to play deeply in an experience with the need to solve the complex task of food provision. We explore how retailers and restaurants today are speaking to these needs and what the future holds, particularly given the evolving role of technology in food procurement.

2:45 p.m. ― Accelerators of Changing Behaviors Davey McHenry From the erosion of meal rituals and rise in snacking to new ways of shopping, cooking and eating, by now we know that food culture today is evolving and dynamic. But who, or what, is driving this change? Is it the ever-pointed-to Millennial cohort or other socioeconomic changes? Or perhaps it is the widespread consumer demand for a customized and personalized experience. Or maybe it’s a confluence of all of these. In this presentation, we will explore the drivers behind the today’s food culture phenomena and highlight what it takes to successfully tap into these drivers to accelerate growth in your own organization.

CANCELLATION POLICY If, for any reason, you are unable to attend this A.C.T. event, you may transfer your registration to another person by notifying us in writing ([email protected]) no later than three days prior to the event you are registered for. Your request must include your name and email as well as the full contact information for the person attending in your place. A confirmation email of the substitution will be sent to your replacement. If you need to cancel your registration, please contact Blaine by phone (425.452.0818, ext. 124) or email ([email protected]). To receive a full refund of your registration fee (minus a $100 cancellation fee) you must notify Blaine no later than one month before the date of the event you are registered to attend. If you cancel no later than two weeks prior to the date of the event you have registered to attend, you will receive a refund of your registration fee minus a $250 cancellation fee. There will be no full refunds for any cancellations made less than two weeks before the start of an event. Attendees who fail to show up for the event they are registered to attend, and who have not notified Blaine prior to the start of the event, will forfeit the full registration fee.

If your event is cancelled, A.C.T. will refund your full registration fee. Any fees incurred by cancellations of related commitments, including but not limited to travel and hotel reservations, will not be paid by A.C.T. or its organizing partner, and are your sole responsibility.
