Coarse sea salt
Freshly ground black pepper
Cut tomatoes into wedges, and place in a bowl.
Tear a few basil leaves as well as about a teaspoon
of tiny, fresh thyme leaves onto tomatoes. Add
in the mini bocconcini, drizzle with the olive oil
and rice vinegar, and season to taste with salt
and pepper. Toss gently to combine, and serve
in chilled bowls to accentuate just about any hot,
rich, smoky, BBQ dish.

BBQ Ribs 4 whole racks pork back ribs
1 - 2 tbsp. sea salt
3 cups ketchup
1 cup packed brown sugar
5 tbsp. sherry or malt vinegar
2 tbsp. chili powder
1/2 cup molasses
1 whole orange, zest and juice
Preheat oven to 275°F. Place ribs in large
roasting pan (cutting racks in half if necessary),
cover with warm water (the ribs should be
completely submerged), and sprinkle with sea
salt. If desired, add chopped carrots, celery, or
onions. Cover tightly with foil, and simmer in
the oven for 3 1/2 hours. While the ribs cook,
prepare BBQ sauce: measure ketchup, brown
sugar, vinegar, chili powder, and molasses into
a mixing bowl. Add the orange zest and juice.
Whisk well. After 3 1/2 hours, check the ribs.
A sample bone should slide out cleanly with a
firm tug (if not, cook ribs another 30 minutes).
Move cooked ribs to a baking sheet, and brush
both sides generously with the fresh BBQ
sauce. Let them rest for 30 minutes to absorb
the sauce (save extra sauce for another time).
Last, put ribs on pre-heated BBQ, using both
tongs and a spatula to keep them in one piece.
Grill just long enough to get grill marks and
heat the ribs through.

Ladle into small circles in a pre-heated (325°F) lightly oiled skillet or Teflon pan. Sprinkle each pancake with a few fresh blueberries. Pancakes are ready to flip when bubbles start to pop on surface. Serve with your favourite breakfast condiments.

medium-high heat (400°F / 200°C). Cook in
closed barbecue for 5 to 7 minutes per side,
testing doneness with a digital, rapid-read
thermometer inserted sideways into centre of

when thermometer reads 160°F / 71°C.

Boil, microwave, or steam cauliflower until

Fresh Fruit Fiasco with Whipped SabayonFresh berries
Fiasco Gelato Vanilla Bean Ice Cream
4 egg yolks
1 cup of your favourite liqueur – try Grand
Marnier, Drambuie, port, or sherry
1/2 cup sugar
To make the sabayon, set on the stove a heavy pot
with an inch or two of simmering water, making
sure you have a stainless steel bowl that will fit
over top of the water without actually touching it.
Combine egg yolks, sugar, and liqueur in the bowl,
and whisk well. Set the bowl over the steaming
water, and whisk constantly for 4-5 minutes, until
it is the consistency of lightly whipped cream. At
this point, recruit someone to scoop out the ice
cream and sprinkle with the fresh berries. Keep
whisking until the sabayon is thick, foamy, and
tripled in volume. Ensure the whisk keeps the
liquid from sticking to the bottom of the bowl.
Ladle the sabayon directly over the berries and ice
cream. Enjoy as the ice cream just starts to melt.
