Introduction

I have been cooking for years and writing about

food for almost as long. I love easy and satisfying

recipes and as a special thank you for joining my

mailing list I want to give you this free copy of

Grandma's Best Quick Breads.

Quick breads are so easy to make and you can

put them in the oven and go away and do other work

for nearly an hour and then come back and check on

them. They also keep well and freeze well. You can

always have one tucked away in your freezer in case

unexpected company shows up. Then you can at least

offer them tea and a slice of your quick bread.

All of the recipes in this cookbook are ones that

my family and I have been making for years. They're

tried and true and all are easy to make and turn out

exceptionally well every time.

You don't have to fuss with these recipes, just

whip them up, put them in the pan and bake. And

you'll have some great treats.

Cinnamon Loaf

This is one of my all-time favorite recipes. I

love the flavor of cinnamon and this loaf provides that

in spades. It's easy to make and you'll love the taste.

Served warm with a pat of butter it's fabulous. And it's

even good when it's cool as well.

3 tbsp. brown sugar

1 tbsp. cinnamon

2/3 cup shortening or butter

1 1/2 cups granulated sugar

3 large eggs

3/4 tsp. baking soda

1 1/2 tsp. baking powder

1/4 tsp. salt

2 tsp. vanilla extract

3 cups all-purpose flour

1 1/2 cups sour milk (2 tbsp. vinegar in milk)

Method: Preheat oven to 350º F. Grease two bread

pans and set aside. In a small bowl combine brown

sugar and cinnamon. Set aside. In a large bowl cream

shortening and granulated sugar. When well creamed,

add eggs, one at a time and beat well after adding each

egg. Add soda, baking powder, salt and vanilla and

beat well. Alternately add the flour and milk to the

mixture, starting and ending with flour. Spoon one

quarter of the batter into each bread pan. Sprinkle

with half the cinnamon mixture. Add remaining batter

and sprinkle remaining cinnamon mixture over top.

Bake for about 45 to 50 minutes or until a toothpick

inserted in the center comes out clean.

Makes 32 servings.

Lemon Loaf

If you love the flavor of lemon, you'll love this

loaf. It's so lemon-y and moist that you don't even

really need any butter with it. Easy to make and

delicious to eat, you'll want to make this one often.

1 cup granulated sugar

6 tbsp. butter or shortening

2 eggs

1 tsp. baking powder

1/2 tsp. salt

1 tsp. vanilla

1 1/2 cups all-purpose flour

1/2 cup milk

grated rind of one lemon

For drizzle:

juice of one lemon

1/3 cup granulated sugar

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. Juice lemon and set juice aside. Grate

peel from lemon. In a large bowl cream 1 cup sugar

and butter. Add eggs one at a time, beating thoroughly

after each. Add baking powder, salt and vanilla.

Alternately add flour and milk, starting and ending

with flour. Fold in lemon rind. Spoon batter into

bread pan. Bake for about 50 to 60 minutes or until a

toothpick inserted in the center of the loaf comes out

clean. Cool for five minutes. Mix lemon juice and 1/3

cup sugar. Slit small holes in the top of the loaf.

Drizzle the juice mixture over top of the loaf. Um, um

good!

Makes 16 servings.

Banana Bread

I have tried all kinds of recipes for banana

bread and this is the one that I find the best. It's lovely

and moist and always comes out well. And the banana

flavor is wonderful.

2/3 cup granulated sugar

1/3 cup butter or shortening

2 eggs, well beaten

2 tsp. baking powder

1/4 tsp. baking soda

1/4 tsp. salt

1 tsp. vanilla

1 3/4 cups flour

1 1/4 cups mashed banana

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. In a large bowl cream sugar and butter.

Add eggs and beat well. Add baking powder, soda, salt

and vanilla. Mix thoroughly. Alternately add flour and

bananas, starting and ending with flour. Spoon batter

into bread pan. Bake for about 45 to 50 minutes or

until a toothpick inserted in the center of the loaf

comes out clean.

Makes 16 servings.

Variations: Add 3/4 cup chocolate chips to batter

for a banana/chocolate treat.

Apricot Loaf

My dear friend, Lenore, used to make this loaf

every year at Christmas time. I finally got the recipe

from her and I now make it not just at Christmas, but

often. This loaf is quite dense but oh so good!

1 cup granulated sugar

2 tbsp. butter

1 egg

1 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1 tsp. vanilla

3/4 cup orange juice

2 cups all-purpose flour

1 cup finely chopped dried apricots

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. In a large bowl cream sugar, butter and

egg. Add baking powder, soda, salt and vanilla and

mix thoroughly. Alternately mix in orange juice and

flour, beginning and ending with flour. Stir in

chopped apricots. Spoon batter into bread pan and

bake for about 50 to 60 minutes or until a toothpick

inserted in the middle of the loaf comes out clean.

Makes 16 servings.

Apple Loaf

Anyone who loves apple will enjoy this loaf. It's

easy to make and the flavor is superb. Bake and enjoy!

1 cup granulated sugar

1/2 cup butter or shortening

1 egg, well beaten

1 tsp. soda

1/2 tsp. salt

1/2 tsp. cinnamon

1 tsp. vanilla

2 cups all-purpose flour

1/2 cup sour milk (use 1 tbsp. vinegar to sour milk)

1/4 cup finely chopped dates

1 cup finely chopped apple (be generous)

Method: Preheat oven to 325º F. Grease a bread pan

and set aside. In a large bowl cream sugar and butter.

Add egg and beat well. Add soda, salt, cinnamon and

vanilla. Mix thoroughly. Alternately add flour and

milk, starting and ending with flour. Fold in dates and

apples. Spoon batter into bread pan and bake for

about 50 to 60 minutes or until a toothpick inserted in

the center of the loaf comes out clean.

Makes 16 servings.

Maraschino Cherry Loaf

If you're a cherry lover you'll really enjoy this

loaf. So easy to make and it tastes yummy. Bake and

enjoy!

1/4 cup butter or margarine

1 cup granulated sugar

1 egg, well beaten

1 tsp. almond flavoring

1/3 cup Maraschino cherry juice

2/3 cup milk

2 cups all-purpose flour

2 tsp. baking powder

1/4 tsp. salt

1/2 - 2/3 cup chopped Maraschino cherries

1/2 cup chopped walnuts or pecans (optional)

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. In a medium sized bowl cream butter

and sugar. Add egg and beat well. Add almond

flavoring, juice and milk. In a separate bowl combine

all dry ingredients. Mix well. Make a well in the

center. Pour liquid ingredients into well and mix

gently until dry ingredients are moistened. Add

cherries and nuts. Stir as little as possible. Spoon

batter into bread pan. Bake for 45 to 50 minutes or

until a toothpick inserted in the middle of the loaf

comes out clean.

Makes 16 servings.

Cranberry Orange Loaf

I love the flavor or cranberries and orange

combined so I really enjoy this loaf. The ingredients

are quite different from many loaves but the flavor is

awesome.

1 cup all-purpose flour

1 cup Graham cracker crumbs

1/2 cup packed brown sugar

2 tsp. baking powder

1/2 tsp. salt

1 cup finely chopped cranberries

1 cup raisins

1/2 cup chopped walnuts or pecans (optional)

1 tbsp. grated orange rind

1 egg, beaten

1 cup orange juice

1/3 cup vegetable oil

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. Mix first five ingredients together in a

bowl. Stir in cranberries, raisins, nuts and orange

rind. Add beaten egg, orange juice and oil. Stir until

blended. Spoon batter into bread pan. Bake about 1

hour or until a toothpick inserted in the center of the

loaf comes out clean.

Makes 16 servings.

Carrot and Raisin Bread

If you know anyone who likes carrot cake then

they'll probably love this loaf. It has a similar flavor to

a carrot cake and you might even want to put a bit of

cream cheese frosting on top.

1/2 cup vegetable oil

2 eggs, well beaten

1 cup granulated sugar

1 cup finely grated carrots

1 3/4 cups all-purpose flour

2 tsp. baking powder

1/2 tsp. baking soda

1 tsp. cinnamon

3/4 tsp. nutmeg

1/4 tsp. cloves

1/4 tsp. ginger

1/4 tsp. salt

1/2 cup chopped walnuts or pecans (optional)

Method: Preheat oven to 350º F. Grease bread pan

and set aside. Beat oil, eggs and sugar together until

well blended. Stir in carrots. In another bowl mix all

remaining ingredients. Pour into carrot batter. Stir

only to moisten. Spoon batter into bread pan. Bake for

about 50 to 60 minutes or until a toothpick inserted in

the center comes out clean.

Makes 16 servings.

Old-Fashioned Date Loaf

Around our house my Grandma loved dates so

my Mom would make this recipe for her fairly often. It

is simple but oh so good. I still enjoy it to this day.

1 1/4 cups cut up dates

3/4 cup boiling water

1 tsp. baking soda

1 egg, beaten

3/4 cup packed brown sugar

1/2 tsp. salt

1 tsp. vanilla

1 1/2 cups all-purpose flour

1 tsp. baking powder

1/2 cup chopped walnuts or pecans (optional)

1/4 cup melted butter or margarine

Method: Grease a bread pan and set aside. In a small

bowl put dates, boiling water and soda. Stir and cool.

In a separate bowl beat egg, add sugar, salt and

vanilla. Beat to mix. Stir in date mixture. Mix flour

and baking powder together. Pour into date mixture.

Stir just to moisten well. Add nuts and melted butter.

Mix. Spoon batter into bread pan. Let stand for 20

minutes before baking. While waiting, preheat oven to

350º F. Bake for 50 to 60 minutes or until a toothpick

inserted in the center comes out clean.

Makes 16 servings.

Fruit Loaf

This great little loaf has wonderful flavor and

I've never had anyone who didn't like it. Easy to make

and delicious to eat.

2 cups all-purpose flour

3/4 cup granulated sugar

3 1/2 tsp. baking powder

1/2 tsp. salt

1/4 cup diced candied pineapple

1/2 cup raisins

1/2 cup chopped glazed cherries

2 eggs, beaten

1 cup milk

1/4 cup vegetable oil

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. In a large bowl measure out dry

ingredients and mix well. Add pineapple, raisins and

cherries. Mix well. Form a well in center of

ingredients. In a separate bowl combine egg, milk and

oil. Pour into well of dry ingredients. Stir until just

moistened. Spoon into bread pan. Bake for about 50

to 60 minutes or until a toothpick inserted in the

center of the loaf comes out clean.

Makes 16 servings.

Chocolate Caramel Loaf

I love caramel and chocolate combined and so I

really like this loaf. It's really yummy and so easy to

make. You will have people asking for more of this

loaf!

1 cup butter or margarine

1 cup granulated sugar

5 eggs, beaten

1 tsp. vanilla

1/4 cup milk

2 cups all-purpose flour

1 tsp. baking powder

1/2 tsp. salt

1/2 cup chocolate chips

1/2 cup Skor chips

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. Cream butter and sugar until fluffy.

Beat in eggs, one at a time, beating well after each egg.

Stir in vanilla and milk. Combine flour, baking

powder and salt in a separate bowl. Pour into liquid

mixture and stir until moistened. Fold in chocolate

chips and Skor chips. Spoon batter into bread pan.

Bake for 50 to 60 minutes or until a toothpick

inserted in the center of the loaf comes out clean.

Makes 16 servings.

Marmalade Loaf

My grandmother really loved marmalade and

so Mom would make this loaf for her. I love it too and

so does my husband, so I make it for us every now and

then.

2 eggs

3/4 cup granulated sugar

1/4 cup melted butter or margarine

3/4 cup milk

1/2 cup marmalade

2 tbsp. vinegar

2 1/2 cups all-purpose flour

1 tsp. baking powder

1 tsp. baking soda

1 tsp. salt

1/2 rind of a grated lemon

1/2 rind of a grated orange

1 cup glazed mixed fruit (optional)

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. Beat eggs, sugar and butter together.

Stir in milk, marmalade and vinegar. In a separate

bowl combine flour, baking powder, soda and salt.

Mix well. Stir in lemon and orange rind and mixed

fruit. Pour into wet ingredients. Stir only enough to

moisten. Spoon batter into bread pan. Bake for about

50 to 60 minutes or until a toothpick inserted in the

middle of the loaf comes out clean.

Makes 16 servings.

Pumpkin and Orange Loaf

This loaf is especially appreciated around

Thanksgiving time because of its wonderful pumpkin

flavor. However, it's so good you might well want it all

throughout the year.

1/3 cup butter or margarine

1 1/3 cups granulated sugar

2 eggs

1 cup canned pumpkin

1/3 cup water

1 medium size orange, ground

2 cups all-purpose flour

1 tsp. baking soda

1 tsp. baking powder

1/2 tsp. salt

1/2 tsp. cinnamon

1/2 tsp. cloves

1/2 cup chopped nuts (optional)

1/2 cup raisins (optional)

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. In a large bowl cream butter and sugar.

Add eggs and beat well. Add pumpkin and water. Stir.

Cut and remove seeds from orange. Put in blender or

grinder and grind complete orange including peel. Stir

into batter. Combine dry ingredients in a separate

bowl. Mix thoroughly. Fold in nuts and raisins. Pour

over liquid ingredients and mix until just moistened.

Spoon batter into bread pan. Bake for about 50 to 60

minutes or until a toothpick inserted in the center of

the loaf comes out clean.

Makes 16 servings.

Pineapple Coconut Loaf

If you like the flavor combination of pineapple

and coconut you'll really enjoy this loaf. It's so easy to

make and the taste is superb.

2 eggs

1/2 cup melted butter or margarine

1 cup granulated sugar

1 cup crushed pineapple with juice

1 tsp. vanilla

2 1/2 cups all-purpose flour

3 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1/2 cup coconut

1/2 cup chopped pecans (optional)

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. Beat eggs lightly. Add butter and sugar.

Beat until smooth. Stir in pineapple and vanilla. In a

separate bowl combine flour, baking powder, soda

and salt. Mix well. Fold in coconut and nuts. Pour into

pineapple mixture. Stir only to moisten. Spoon batter

into bread pan. Bake for about 50 to 60 minutes or

until a toothpick inserted in the center of the loaf

comes out clean.

Makes 16 servings.

Peachy Zucchini Loaf

This loaf has a lovely delicate flavor and is

always a hit. It's easy to make and you will enjoy the

results!

2 eggs

1/2 cup vegetable oil

1 cup granulated sugar

1 cup shredded zucchini, unpeeled

3/4 cup finely diced canned peaches

1 tsp. vanilla

2 cups all-purpose flour

1 tsp. baking soda

1 tsp. baking powder

1/2 tsp. salt

3/4 tsp. cinnamon

1/4 tsp. nutmeg

1/2 cup chopped pecans (optional)

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. Beat eggs, oil and sugar. Stir in

zucchini, peaches and vanilla. In a separate bowl mix

remaining ingredients thoroughly. Pour over liquid

mixture. Stir just to moisten. Spoon batter into bread

pan. Bake for about 50 to 60 minutes or until a

toothpick inserted in the center comes out clean.

Makes 16 servings.

Pumpkin Cream Cheese Loaf

S0 moist and tender you'll love it. The flavor is

also superb. Easy to make and it always disappears in

a hurry.

4 oz. package cream cheese

1/4 cup butter or margarine

1 1/4 cups granulated sugar

2 eggs

1 cup canned pumpkin

1 3/4 cups all-purpose flour

1 tsp. baking soda

1 tsp. baking powder

1/2 tsp. salt

1/2 tsp. cinnamon

1/4 tsp. cloves

1/2 cup raisins (optional)

1/2 cup chopped pecans (optional)

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. Soften cream cheese. Mix cream cheese,

butter and sugar. Cream well. Beat in eggs, one at a

time, beating well. Stir in pumpkin. In a separate bowl

combine all dry ingredients. Mix thoroughly. Pour

over liquid ingredients and stir just to moisten. Spoon

batter into bread pan. Bake for 50 to 60 minutes or

until a toothpick inserted in the center of the loaf

comes out clean.

Makes 16 servings.

Banana 'N Strawberry Loaf

This loaf has such wonderful flavor and it's

easy to make. Just stir it up and bake it and you'll

have a winner every time.

2 eggs

1/4 cup vegetable oil

1 cup granulated sugar

1/2 cup mashed strawberries

1/2 cup mashed banana

1 3/4 cups all-purpose flour

1/2 cup rolled oats

2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1/2 cup sliced strawberries

Method: Preheat oven to 350º F. Grease a bread

pan and set aside. In a large bowl beat eggs until

frothy. Stir in oil, sugar, mashed strawberries and

banana. In a separate bowl combine dry ingredients.

Mix thoroughly. Add to liquid ingredients. Stir just to

moisten. Spoon batter into bread pan. Sprinkle top of

loaf with sliced strawberries. Bake for about 50 to 60

minutes or until a toothpick inserted in the center of

the loaf comes out clean.

Makes 16 servings.

Lemon Poppy Seed Loaf

This is such an easy loaf to make and the flavor

is superb. It's one of those loaves that never last long.

2 cups all-purpose flour

2 tbsp. poppy seeds

2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1/3 cup butter or margarine

3/4 cup granulated sugar

2 large eggs

3/4 cup sour cream

1/2 cup lemon juice

1 tbsp. grated lemon rind

1 1/2 tsp. vanilla extract

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. Place first five ingredients in a bowl and

mix thoroughly. Make a well in the center of the dry

ingredients. In a separate bowl cream butter and

sugar. Add eggs, 1 at a time and beat well after each

addition. Add remaining four ingredients to the egg

mixture and stir thoroughly. Pour into well of dry

ingredients and stir until just moistened. Spoon batter

into bread pan. Bake for about 50 to 60 minutes or

until a toothpick inserted in the center of the loaf

comes out clean.

Makes 16 servings.

Gingerbread Loaf

I love gingerbread and this loaf is really moist and

flavorful. It's got a wonderful tangy taste, mainly from

the molasses but the spices also contribute to the full-

bodied flavor.

2 1/2 cups all-purpose flour

2 tsp. ginger

2 tsp. cinnamon

1/2 tsp. cloves

1 1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

2 large eggs

3/4 cup fancy molasses

3/4 cup sour milk (add 1 tsp. vinegar to the milk)

1/2 cup packed brown sugar

1/4 cup cooking oil

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. In a large bowl combine dry

ingredients. Mix thoroughly. Make a well in the

center. In a separate bowl beat eggs well. Add

remaining ingredients and beat thoroughly. Pour into

well in center of dry mixture and stir just to moisten.

Spoon batter bread pan. Bake for about 50 to 60

minutes or until a toothpick inserted in the center of

the loaf comes out clean.

Makes 16 servings.

Chocolate Chip Loaf

My daughter, Stacy, is a chocolate lover so she loves

this loaf. It's light and moist and easy to make and

around our house it always disappears in a hurry.

1/4 cup butter or margarine

1/3 cup cocoa, lumps removed

3/4 cup granulated sugar

1 large egg, well beaten

1 cup milk

1 tsp. vanilla extract

2 cups all-purpose flour

2 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

1 cup semi-sweet chocolate chips

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. Combine butter and cocoa in a small

pot. Heat and stir on medium until melted and

smooth. Remove from heat. Add sugar. Stir well. Add

egg and mix thoroughly. Add milk and vanilla. Stir

well. In a separate bowl mix dry ingredients

thoroughly. Make a well in the center. Pour liquid

ingredients into well. Mix just to moisten. Fold in

chocolate chips. Spoon batter into bread pan. Bake for

about 50 to 60 minutes or until a toothpick inserted in

the center of the loaf comes out clean.

Makes 16 servings.

Herb Beer Bread

This is an excellent bread to make for a savory

treat. It's rich and moist and um, um good.

2 cups all-purpose flour

3/4 cup whole wheat flour

1/2 cup grated Parmesan cheese

1/4 cup wheat germ

4 tsp. baking powder

1 tbsp. granulated sugar

1 tsp. basil

1 tsp. oregano

1/2 tsp. thyme

1/2 tsp. salt

12 oz. can beer (at room temperature)

3 tbsp. melted butter

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. In a large bowl mix all dry ingredients

thoroughly. Form a well in the center. In a separate

bowl mix beer and butter. Pour into well in dry

ingredients and mix just to moisten. Spoon batter into

bread pan. Bake for about 50 to 55 minutes or until a

toothpick inserted in the center of the loaf comes out

clean.

Makes 16 servings.

Bacon 'N Beer Bread

Here's another loaf that uses beer and it's

equally as good as the previous recipe. This bread has

the added flavor or bacon and it is truly delicious.

6 slices bacon, diced

2 1/2 cups all-purpose flour

2 tbsp. granulated sugar

1 tbsp. baking powder

1/2 tsp. chili powder

1/2 tsp. salt

12 oz. can dark beer (at room temperature)

1/4 cup finely diced green onion

1/4 cup grated medium cheddar cheese

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. Cook bacon in a frying pan on medium

heat until crisp. Drain, reserving 2 tbsp. drippings in a

small bowl. Set aside. In a large bowl thoroughly mix

all dry ingredients except bacon. Make a well in

center. In a separate bowl mix bacon, drippings, beer

and onion. Pour into well of dry ingredients, stirring

just to moisten. Spoon into bread pan. Sprinkle with

grated cheese. Bake for about 40 to 45 minutes or

until a toothpick inserted in the center of the loaf

comes out clean.

Parmesan Zucchini Loaf

This is an excellent savory bread that is always

sure to please. It's easy to make and the taste is

wonderful.

2 cups all-purpose flour

1/2 cup grated Parmesan cheese

1 tbsp. granulated sugar

1 tbsp. baking powder

1/2 tsp. baking soda

1/2 tsp. ground sage

1/2 tsp. salt

1/4 tsp. garlic powder

2 large eggs

1 1/2 cups grated, unpeeled zucchini

3/4 cup sour milk (add 1 tsp. vinegar to the milk)

1/4 cup vegetable oil

1/2 tsp. Worcestershire sauce

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. In a large bowl combine dry ingredients

and mix thoroughly. Make a well in the center. In a

separate bowl combine remaining ingredients. Pour

into well in center of dry ingredients. Mix just to

moisten. Spoon batter into bread pan. Bake for about

45 to 50 minutes or until a toothpick inserted in the

center of the loaf comes out clean.

Makes 16 servings.

Pizza Bread

For pizza lovers everywhere, this loaf is truly

awesome. It really does taste like pizza and it just

disappears. You can double this recipe to make two

loaves, and as popular as this loaf is, you'll probably

need two!

2 cups all-purpose flour

1 tbsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1/2 tsp. basil

1/2 tsp. oregano

1/2 tsp. garlic powder

1 large egg

1 cup milk

1/4 cup vegetable oil

2 tbsp. granulated sugar

2 Roma tomatoes, quartered, seeded and diced

2/3 cup grated medium Cheddar cheese

1/4 cup sliced green onion

2 1/2 oz. deli pepperoni, diced

1/2 cup grated Mozzarella cheese

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. In a large bowl combine dry

ingredients. Mix thoroughly. Form a well in the

center. In a separate bowl mix egg, milk, oil and sugar.

Pour into well in dry ingredients and stir until just

moistened. Fold in tomato, onion, pepperoni and

cheese. Spoon into bread pan. Bake for about 45 to 50

minutes or until a toothpick inserted in the center of

the loaf comes out clean. Makes 16 servings.

Shrimp 'N Garlic Loaf

Another savory loaf that is exceptionally good.

This loaf is tender and moist and is great for any

occasion.

2 cups all-purpose flour

1 1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1/4 tsp. garlic powder

1/4 tsp. pepper

2 large eggs

1 cup cooked, diced shrimp

1 cup grated Havarti cheese

3/4 cup buttermilk

1/4 cup butter or margarine, melted

1 1/2 tsp. seafood cocktail sauce

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. In a large bowl combine dry

ingredients. Mix thoroughly. Form a well in the

center. In a separate bowl combine remaining

ingredients. Pour into well of dry ingredients and mix

just to moisten. Spoon batter into bread pan. Bake for

about 45 to 50 minutes or until a toothpick inserted in

the center of the loaf comes out clean.

Makes 16 servings.

Salmon Loaf

This delicately flavored loaf is wonderful to

serve with seafood dishes or is just delicious to have

on its own. It's easy to make and always gets rave

reviews.

2 cups all-purpose flour

1 1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. dry dill

1/4 tsp. salt

2 large eggs

3/4 cup milk

1/2 cup cooked, flaked salmon

1/2 cup chopped green onion

1/4 cup vegetable oil

1 tbsp. liquid honey

1/2 tsp. grated lemon rind

Method: Preheat oven to 350º F. Grease a bread pan

and set aside. In a large bowl combine dry

ingredients. Mix thoroughly. Form a well in center of

dry ingredients. In a separate bowl combine

remaining ingredients. Mix thoroughly. Pour into well

of dry ingredients and stir just to moisten. Spoon

batter into bread pan. Bake for about 45 to 50 minutes

or until a toothpick inserted in the center of the loaf

comes out clean.

Makes 16 servings.
