Quick Cold Tuna Noodle Salad
Food
Ingredients:
1 nest egg noodles100g or 2/3 tin tinned tuna2 spring onions, sliced1/4 red chilli, finely chopped1 dessert spoon soy sauce1/2 lime, juiced1 teaspoon mayonnaisea splash of sesame oilfinely chopped coriander to garnish (optional)
Preparation:
1.Bring a pan of water to the boil and add the nest of noodles. Immediately turn off heat.2.Add tuna, spring onions and chilli to a large bowl. Mix well.3.Add the soy sauce, lime juice and mayonnaise and mix.4.After 3-4 minutes, drain the noodles and run under cold water for 1 minute.5.Add the noodles to the bowl of tuna and mix well. Garnish with chopped coriander, if using.
