Enzymes, the largest class of proteins, are biocatalysts. Over 2000 different kinds are

known, each catalysing a different kind of chemical reaction. Enzymes differ in two ways

from other polymers. From a structural point of view, they have very complex and specific

three-dimensional conformations. From a functional viewpoint, they are dynamic

macromolecules with enormous catalytic power.

Bakery is currently one of the most interesting markets for enzyme suppliers. Since enzymes are seen as ‘natural’ and can be treated as

‘processing aids’ (may change in Europe), there is considerable and growing interest in this product category. On the other hand, persistent

questions on genetic modification, particularly in Europe, have been a major stumbling block for many high-performance enzymes.

Over the years, China has become an extremely important market for enzymes. For example, China is the largest beer producer globally, and

while the use of enzymes in beer is regarded as ‘controversial’ in the West, it is widely used in the Chinese beer industry. China is also the

world’s largest apple juice concentrate producer.

Protein hydrolysis and modification, a major emerging market opportunity for enzyme producers will be included in this in-depth new study

Animal feed, a key market for enzyme use, will be included in the scope of this new study.
