Sara Sez: BubblyThe technique for making sparkling wine was developed 300 years ago by a Benedictine Monk, Dom Perignon. The still (non-sparkling) wine undergoes a secondary fermentation in the bottle, a by-product of which is CO2 gas. This is what gives the wine the tiny bubbles we love.

Only sparkling wines from the Champagne region of France can bear the name Champagne, although many other wine regions of the world produce excellent sparkling wines. We recommend Grower Champagne, or “farmer fizz”, which is hand-crafted and estate-bottle by a “him,” not an “it.” Bubbly from Spain, known as Cava, can also offer good quality for a reasonable price.

In winter and early spring, most of the farms in the United States lie dormant. Still, stores are able to stock their produce shelves with fresh fruits and vegetables, largely due to Mexican farmers. At Pilgrim’s Market, we strive to offer as much local produce as we can, when in season. However, with the demand for organic produce annually expanding, some of our off-season organic produce comes from Mexico. For a food to be sold as certified organic in the US, regardless of its origin, it must meet all the requirements of the U.S. Department of Agriculture’s (USDA) National Organic Program: no toxic synthetic pesticides, artificial fertilizers, sewage sludge, GMOs or irradiation used in growing or production. Mexico’s certified organic acreage has been growing at a rate of 32% per year, and each farm must be certified by a USDA-accredited agency. On-site audits and regular border inspections, including extensive testing, assure clean products for the U.S. and healthier foods and work environments for each Mexican organic farmer. So, if you want to eat fresh, ripe tomatoes, peppers, cucumbers, squash, melons and grapes during the colder months, and mangoes, bananas and avocados anytime, know that the USDA Certified Organic label on Mexican produce means it’s just as delicious and good for you as the organic farm down the road.

Dr. Toby’s Tips forShoveling Snow(Based on years of living in theWestern NY snow belt.)

Work with a healthcare professional to screen for cardiovascular disease and risk fac-tors.

Dress in layers and stay hydrated. Keep a water bottle easily accessible.

Stretch before and after - this is essential, especially for the hamstrings, low back and shoulders.

Clear off your car first.

Move snow the shortest distance possible.

Use your leg muscles as much as you can, pushing snow when possible.

When lifting, keep your back straight and hold the shovel close to your body with one hand close to the shovel blade, which provides better leverage. Try not to twist when throwing snow.

Rest frequently - take intentional breaths to allow your muscles and heart rate to recover.

Clear snow more frequently if you know your area is expecting to get dumped on.

Proteolytic enzymes, like bromelain and Wobenzyme, taken on an empty stomach, can be used prior to and after shoveling to reduce inflammation and soreness.

Oral magnesium is helpful to keep muscles from tightening.

Soaking in an Epsom salt bath post shov-eling (2-3 cups salt to a tub of water) loosens muscles and reduces spasms.

Finally, be sure to toast to your accomplishment with a steaming cup of organic hot dark chocolate cocoa (heart healthy and high in antioxidants).
