Gazpacho Soup
What is Gazpacho Soup?
Gazpacho is a cold soup originating from Spain.
Traditionally, this is a refreshing summer dish
because it requires no cooking. It has many
health benefits because it’s packed with
vitamins, minerals and phytochemicals.
Gazpacho is a solid source of antioxidants. The
carotenoids in addition to copper and
manganese all have antioxidant functions.
This soup is great for making with children
because it requires no heat source, it’s packed
with fresh and easy to find ingredients, tastes
great and is simple to make. In no time at all
you and your children have had lots of fun
making a great refreshing meal.

Ingredients (6 servings)
6 cups (1.5 L) assorted ripe tomatoes, chopped
1 cup (250 mL) green pepper, chopped
1 cup (250 mL) red pepper, chopped
1 cup (250 mL) English cucumber, chopped
1/4 cup (50 mL) red onion, chopped
1 tbsp (15 mL) olive oil
2 tsp (10 mL) garlic
2 tsp (10 mL) red wine vinegar
1 tsp (5 mL) fresh ground pepper
1/2 tsp (2 mL) salt
1/4 cup (50 mL) fresh parsley, chopped
2 tbsp (30 mL) fresh basil, chopped

Preparation
Properly wash all the vegetables and peel
garlic, onions. Reserve a small amount of finely
diced vegetables and put aside to use later as
garnish. Roughly chop the vegetables, then
purée together with the mixed herbs, vinegar,
olive oil and chilled water until liquid
consistency is attained. Depending on size of
blender you may have to blend in batches and
mix final product together in a large bowl.
After that, season with salt and pepper
according to your taste and blend again if
needed. Garnish with finely chopped veggies
and serve.
