1 Tbsp olive oil 4 garlic cloves, minced ¼ tsp crushed red pepper flakes 1 lb fresh spinach leaves, rinsed and drained well 1 Tbsp rice vinegar 2 Tbsp toasted sesame seeds ¼ tsp kosher salt ¼ tsp ground pepper 1. In a large skillet, heat the oil over medium heat. Add the garlic and red pepper flakes, and sauté for 30 seconds, until fragrant. 2. Add the spinach and use tongs to stir-fry for about 2 minutes, until the spinach just begins to wilt. 3. Add the rice vinegar. Cook for 1 minute. Sprinkle the spinach with the sesame seeds, salt, and ground pepper. Serve immediately.
