• Lembaga Sertifikasi adalah lembaga yg telah di akreditasi oleh Komite Akreditasi Nasional untuk melakukan sertifikasi HACCP berdasarkan Pedoman BSN 1001-1999
• Auditor Sertifikasi Sistem HACCP adalah seseorang yang telah memiliki kualifikasi untuk melaksanakan asesmen dan audit HACCP.
• Audit Kecukupan adalah pemeriksaan atau penilaian yg rinci atas suatu rencana HACCP untuk memastikan bahwa semua unsur sistem HACCP telah dimuat dalam rencana HACCP.
• Asesmen adalah penilaian lapangan pada badan usaha untuk membuktikan apakah rencana HACCP yang adaa secara teknis maupun ilmiah adalah benar sesuai dengan kondisi di badan usaha yg bersangkutan.

• Auditor Kepala :
• SMK/D1 : kimia, biologi, farmasi, pangan atau
pertanian. Pengalaman 5 tahun dibidang
keamaman pangan.
• D2/D3, pendidikan sda, pengalaman 3 tahun.
• S1/S2/S3, pendidikan sda, pengalaman 1 tahun.
• Lulus Pelatihan Auditor HACCP, dgn Audit Track
: 3x adequacy audit, 5x asesmen, 5x memimpin
tim asesmen dibawah supervisi Auditor Kepala
• Auditor :
• Kriteria umum sama dgn diatas, keculai audit
track : 2x Adequacy audit, 5x asesmen
• Calon Auditor :
• Tidak diwajibkan mempunyai pengalaman
asesmen.
