A BAYONNE RESIDENT FOR A CENTURYLast week, I had the pleasure of attending a 100th birthdayparty for Bayonne resident Rose Korbelak Obremski, who is inamazing shape for someone who has lived for a century.Rose Korbelak was born to Stephen and Tatiana Korbelak onMechanic Street in Bayonne on December 9, 1918. Her parentshad moved from the Carpathian Mountains in southern Polandto Brooklyn, and then to Bayonne. The other children in thefamily were Annie, Margie, Jay, Nicky, Michael (Dorsey),Mary, Lizzy, and Theresa. Mr. Korbelak worked as a laborerin the oil industry and as a cooper for a barrel company. TheKorbelaks, who were Carpatho-Rusyns, were founding mem-bers of Sts. Peter and Paul Orthodox Church in 1922.Rose was educated at Lincoln School, Philip G. VroomSchool, and Bayonne High School. She remembers taking vi-olin lessons while at Vroom School.She married John Obremski on November 18, 1943. To-gether, they had two children, Marion and John. During WorldWar II, Rose and husband John met Babe Ruth in Upstate NewYork when John was home from the Army, recuperating fromhaving been wounded. When Babe learned that Rose and Johnhad no transportation to get back to this area, he drove them

back himself. On another occasion, when Johnwas hospitalized in Pennsylvania, Rose metcowboy entertainer Roy Rogers and his horse,Trigger.During the war, Rose worked at WesternElectric on the soldering line. Her boss calledher “the sparkplug.” She also worked at twostores on Broadway, Sylvette’s and The LidoShop. With her husband, Rose owned theViking Tavern on Broadway between 40th and41st Streets. The family lived above the bar. Her daughter stillremembers when the delivery trucks came with big blocks ofice for the business. They also owned the Hideaway Tavern at30th Street and Avenue E, across from the old City Hall. In ad-dition to working for a living, Rose was also a volunteer at Bay-onne Hospital for twenty-five years.Rose has said, “I’ve lived in Bayonne for 100 years and I haveno regrets. Bayonne is a wonderful city.” Rose is one of thepeople who has made Bayonne great. Next year, we will becelebrating the 150th anniversary of the City of Bayonne. It isastounding that she has been with us for two-thirds of that his-tory. Happy 100th birthday to Rose Korbelak Obremski!

of horse races and bottles of fine whiskey.And both come into play as Bravo’s “Top Chef” heads to the Bluegrass

State for its 16th season, which gets underway Thursday Dec. 6, as 15

chefs from across the country compete for the title amid the unique culi-nary scenes of Louisville, Lexington and Lake Cumberland before headingto Macao, China, for the final showdown.

Along the way, judges Tom Colicchio, Graham Elliot, Nilou Motamedand Gail Simmons and host Padma Lakshmi got to take in the 2018 Ken-tucky Derby at Churchill Downs, watch the contestants cook for Laila Aliat the Muhammad Ali Center, oversee a buzzer beater showdown at RuppArena with University of Kentucky basketball coach Jon Calipari and visitthe Maker’s Mark bourbon distillery.“Kentucky was fun, actually,” Colicchio, the head judge, reports. “I had-

n’t spent much time there, so it was good to see that part of the country.You know, we were there for the Derby, which was a lot of fun. It wassomething I always wanted to do and never had an opportunity to get to,so that was a lot of fun. ... Some of the local foods and stuff really cameinto play nicely. Obviously, bourbon does and so it was a good couple ofweeks I spent there.”In fact, one of the highlights of the May-June lming for Colicchio was

overseeing a competition at the Maker’s Mark distillery in the tiny townof Loretto.“It’s really an amazing operation ...,” Colicchio says. “They’re producing

a lot of bourbon but really high-quality bourbon ... it’s quite an operation.And we did shoot there. We had just a great day there. It was, from whatI recall, a beautiful sunny day and we were kind of in between the distill-ery and a few rickhouses and the setting was really great. That was fun.”And, of course, there was the Kentucky cuisine, of which the contestants

were tasked with coming up with their own interpretations. One was avery popular dish knownas burgoo, which is a spicy stew made from game meat.“For the most part, we were using local ingredients,” Colicchio explains.

“We used some local beef that was really good. There’s things like localsoy sauce that’s being produced that’s really, really good. So we did usesome local products as well.“But I think what happens with the chefs is that they know they’re going

to Kentucky, they start studying, they started doing some homework, andthen I think they also leaned heavily on a contestant that was from Ken-tucky just to sort of understand the culture a little better.”
