The event offered something for everyone – from “foodies” and wine connoisseurs, to the casual cook who appreciates a good help- ful hint or shortcut, to people who simply enjoy learning about the preparation process that produced the samples they tasted. The 13th annual event kicked off on Thursday night with the Kohler Chefs’ Challenge presented by Fox 11’s Amy Hanten. About 250 people gathered at the Stella Artois Main Stage to watch six teams compete. Six Kohler chefs were paired with “assistants” from the area, including two Sheboygan North High School students en- rolled in the school’s Hospitality Foods course. Each team had 20 minutes in which to take a mystery ingredient and create a dish that would impress the judges. In the first session, the mystery ingredient was pork tenderloin. Two teams worked for 20 minutes, and as is typical in these sorts of competitions, barely made the deadline. Each team prepared two plates, one for the judges and one that was auctioned off to the audi- ence. Earlier in the evening, an auc- tion had been held to select an ad- ditional judge from the audience. The winning bid was $1,350, and by the end of the auction, a total of $11,000 was raised to benefit Nourish, a local organization that creates collaboration between local farmers and volunteers to share meals inspired by fresh, local ingredients with struggling fami- lies. (Kohler’s October 15 Fall Harvest benefit also raised $25,000 for United Way’s Food for Tomorrow initiative). The American Club’s banquet chef, Angie Rondinelli, was the overall winner of the challenge. A full schedule of seminars and tastings got under way Friday. In one of the morning sessions, “Pie: A Slice of Heaven,” Richard Palm, Pastry Chef at The Ameri- can Club , shared his expertise and humor with the audience as he of- fered tips and tricks on how to make the perfect pie crust and fill- ing. Palm recommended using un- bleached, unbromated flour, which should be chilled along with the butter. When rolling the dough, Palm advised leaving pea-sized pieces of butter intact. This helps the dough form flakey layers dur- ing baking. The chef also shared a secret tip for the liquid used in making pie crusts: when the recipe calls for ¼ cup of water, replace it with three tablespoons of ice cold water and one tablespoon of Vodka. The alcohol doesn’t pro- mote gluten formation, which helps the crust stay much flakier and more tender. Chef Palm, who recently lost 125 lbs., also shared some health tips he follows, including the use of a lite salt mixture (like Morton’s Lite) that contains a potassium chloride blend. Palm explained that Finland has seen a 75-80% re- duction in heart attacks and strokes since the early 1970s when the country launched a national cam- paign to reduce the intake of sodium chloride, the prime of- fender in table salt. Back in August, 21 girls showed up for practice, and from the start it was clear the team was loaded with talent. Returning from the 2012 team were several letter winners, including two state qual- ifiers - #1 singles Audra Hoff- mann, #2 singles Elly Gutschow, and Leigh Schlecht, Katie Lindow, and Frannie Hillstrom. The team started the season hosting the annual Kohler Invita- tional and came within 1 point of winning the team championship. The Bombers played in the presti- gious University School Invita- tional the next weekend and faced the top division 2 teams in the state, including all four teams that qualified for the 2013 WIAA Team State Championship Tournament. The Bombers cruised through their EWC duals, posting a 7-0 record going into the final matchup against conference rival Mani- All Conference honors announced for boys soccer, girls tennis Kohler soccer players Joe Pel- lowski, Ben Madigan, and Calvin Stefanczyck were named to the All-Central Lakeshore Conference First Team. Connor Sbrocco was named to the Second Team, and John Nebel received Honorable Mention. In girls tennis, First Team honors went to No. 2 doubles Frannie Hillstrom and Jamie Lewis, and No. 3 doubles Emily Guesneau and Amelia Grose. Second Team hon- ors went to No. 1 singles Audra Hoffmann, No. 2 singles Elly Gutschow, No. 4 singles Leigh Schlecht, and No. 1 doubles Katie Lindow and Ally Bryce. After office hours, the Officers that are on-dutycheck for voicemails periodically throughout their shiftas time allows. Most often, Officers are out on patrol.Residents are reminded that for emergencies such ascrimes in progress, suspicious persons, or other inci-dents where time is of the essence, residents should dial911. For routine calls where an Officer needs to re-spond, but not in an emergent fashion, should be re-ported by calling 459-3877 and selecting option 2 tohave an Officer dispatched by the Sheriff’s Department.The on-duty officer voicemail, option 3, should be usedfor calls such as vacation checks or calls that we don’tneed to respond to right away as we may not get themessage for several hours. Who’s Got Talent! was a breakthrough event forthe PAO drawing from talent in the wider com-munity. As one of four guest judges, the breathof talent was wide and level of technical skillsastonishingly high, making my job a mission im-possible. Several Kohler students made the fi-nale: Carlyann Campione for Irish dance, ClaraMontes for violin, Joe Bugbee and CameronUselding for magic. Each Kohler student per-former earned fan favorite votes. From thestreet vending foods, fan favorite glow bracelets,to jumbotron energy, it was a memorable familyfun night. The Welcome breakfast for new families hostedby the Kohler School Friends invited parents toparticipate in our school communities effortsfrom Booster Club, Kohler School Foundation,Kohler School Friends, and PAO.

The middle school ConcertBand will be performing a renais-sance piece called Soldier’s Pro-cession and Sword Dance, the firstmovement from Vivaldi’s famousFour Seasons, and Khatchaturian’s

Sabre Dance.Staying with the theme of Time-

less Classics, the high school Sym-phony Band will open their portionof the concert with Carter’s Over-ture for Winds, followed by Cop-land’s Down a Country Lane andthe first movement from GustavHolst’s First Suite in Eb.

The Jazz Ensemble will con-clude the concert with two classicselections. They will performFreddie Hubbard’s Little Sun-flower and Bob Crosby’s classicpiece Big Noise from Winnetka.

The bands are directed byRichard Tengowski. The concertis free and open to the public.

BAND STUDENTS SELECTED TO HONORS BANDThe Kohler band department is

proud to announce that three oftheir students were selected to per-form at the Middle Level HonorsBand. Clara Montes, oboist, wasselected to perform with the Sev-enth Grade Honors Band and clar-inetist Benjamin Tengowski and

Christy Zheng was selected to per-form with the Ninth Grade HonorsBand. Hosted at St. Norbert Col-lege on Saturday, November 2, stu-dents worked all day with guestcomposers and after only six hoursof rehearsal, both honors bandsperformed an impressive concert.

TENGOWSKI PRESENTS AT STATE MUSIC CONFERENCERichard Tengowski, Kohler

band director, recently presentedtwo presentations at the 2013 StateMusic Conference sponsored bythe Department of Public Instruc-tion, Wisconsin School Music As-sociation and the Wisconsin MusicEducators Association. With thesuccess of the Kohler PerformingArts Organization, Tengowski wasasked to present and share his ex-periences in a session called Build-ing and Supporting Parent SupportGroups.

Tengowski also coordinated anew program for the State MusicConference. The new program was

the Aspiring Music Majors Pro-gram. Tengowski coordinated andpresented to over 100 high schoolstudents who are pursing careers inthe field of music.

The Wisconsin State MusicConference offers professional de-velopment workshops and pro-vides a forum for music educators,performers and music industry tonetwork. “It is a great honor to beselected to present and a wonder-ful opportunity to showcase someof the cultural and teaching initia-tive that we have created here atKohler Public Schools.”

The postseason started with sub-sectionals and the Bombers quali-fied all seven flights for sectionals.The Bombers made history byearning their first Girls SectionalRunner-up title in school history,and qualified three flights for theWIAA State Tournament – singlesplayers Audra Hoffmann and EllyGutschow, and the doubles duo ofKatie Lindow and Allie Bryce. Atthe State Tournament EllyGutschow lost her first roundmatch to Amy Sacia of Eau ClaireRegis 3-6 4-6, and Lindow/Brycelost their first round match to Abby

Fox/JoJo Munns of Madison Edge-wood 2-6 2-6. Audra Hoffmann,making her third straight trip to theState Tournament, earned a medaland a spot on the podium after fin-ishing in sixth place. She defeated

The Bomber JV team had an im-pressive season as well. The JV’swon the Sheboygan North Invita-tional, earning medals at all sevenflights. They ran over the competi-tion in EWC play and finished theseason with a strong showing inthe JV Quad. Playing impressivetennis throughout the 2013 season,and filling in for Varsity matchesthis season were Lauren Horth,Catherine Sutherland, Megan Con-klin, and Ryah Gutschow. Round-ing out the JV squad wereElizabeth Steckel, Lily Hart,Donna Kari, Evelyn Heun, GraceMadigan, Chloi DuCharme, andMaddie Weiland.

The Kohler Soccer Club cele-brated the sport of soccer in thevillage with its second annual “Fri-day Night Lights” event at theBoys High School varsity matchagainst Heritage Christian on Oc-tober 4th. The Blue Bombers beatthe Patriots 5-0. Joe Pellowski andJohn Nebel scored two goals eachand Ben Madigan scored one.Calvin Stefanczyck had theshutout in goal. Along with thevictory, all of the youth soccerteams and players from the KohlerSoccer Club were represented andhad a chance to be part of theevent. The U6 players had thechance to go out with the varsityteam in a “world cup” style en-trance to start the match.

Three U8 teams scrimmagedprior to the start of the game toclassic soccer anthems like ole,ole, ole. Two U10 teams scrim-maged against each other in an ex-citing boys vs girls half time game.The girls U12 team rallied thecrowd by tossing out free soccercinch bags and small soccer ballseach time Kohler scored a goal.One U12 boys team took turns as

the official ball boys for the Varsitygame. The U14 girls helped every-thing run smoothly as volunteerassistant coaches for all the youthevents on the field. Kristin More-house of the Kohler Soccer Clubsaid, “This is an exciting night foryouth soccer, so we tried to get asmany youth players involved aspossible. Teams that didn't have aspecial role at our Fall boys nightgame will have a role to play at thegirls night game in Spring.”

Brad Beach, the mascot from theMilwaukee Wave was present tocheer on the teams and the KohlerDrum Line provided great enter-tainment.

The sport of soccer has a longtradition in the village, the immi-grants who came to work at theKohler Company played the gameas far back as 1918. The traditioncontinues as anyone can tell byseeing the large number of youthplayers on the fields around thevillage on Saturday mornings inthe fall and spring. Their passionfor the game continues into highschool and has translated into suc-cess for the boys varsity team, whohave won the conference twice inthe past five years, and made a

state final appearance as recent as2009.

School Coach Scott Feltner said,"This event not only celebrates thesport of soccer but underlines the

importance of theKohler Soccer Club todevelop players whowant to play in HighSchool. We are thesmallest school in ourconference but we havealways punched aboveour weight in soccer.That’s because all ofthe parents and volun-teers do a really goodjob of teaching the kidshow to play the game.As the high schoolcoach I am really grate-ful for all of the sup-port.”

Food & Wine, continued from page 1Goose Vodka Brand Master. Rodo-nis told the story of how beverageentrepreneur Sidney Frank wantedto create a high-end vodka to targetAmericans. So Frank established adistillery in France where high-grade winter wheat is grown onfarms around the fertile Picardy re-gion north of Paris, and a bottlingplant in Cognac, an area synony-mous with high-end French spirits.(Residents of Cognac doubted thesuccess of a vodka being producedthere). Frank also discovered pris-tine spring water in the Cognac re-gion. The water gets blended withthe vodka product after the distilla-tion process. Before the spirits are bottled, theinside of each glass bottle is rinsedwith Grey Goose Vodka so thatnothing ever touches the inside ofthe bottle but the vodka. The flavored vodkas are infusedwith fruit flavors that come fromreal fruit grown in France (exceptfor oranges, which come fromFlorida). The whole fruits are deliv-ered to a parfumerie in Grasse (aFrench commune devoted to per-fume and flavor manufacturing),where the flavors and aromas areextracted and shipped back to GreyGoose in Cognac as essential oils,which are then blended with theclassic formula giving the flavoredvodkas their delicate fresh fruitaroma and taste. (Smelling the fla-vored vodkas were as enjoyable astasting them). On Friday evening, Jason Gor-man, Executive Chef for theChicago Art Institute prepared athree-course meal for his Art andAppetite: An artistic approach tomid-west cuisine presentation. The premier event for Fridayevening, “Taste of the Vine” at theDesign Center highlighted exquisitewines, delectable hors d’oeuvresand live music.

“America’s Test KitchenBrunch” kicked off Saturday at 9:00a.m., followed by about 40 seminarsand tastings scattered throughoutthe Kohler hospitality properties. Perhaps one of the most informa-tive sessions was led by BridgetLancaster of America’s TestKitchen—“the Consumer Reportsfor kitchen gear” as she described it.Attendees sipped on a glass of wineas Lancaster shared industry tips oneverything from salad spinners tokitchen shears to Bundt pans—lookfor a pan with handles, by the way;it will make flipping the pan and re-moving the Bundt cake easier.Some of the tips that Lancastershared during her one-hour presen-tation included: When trying to decide betweenan expensive $120 non-stick skilletand a $35 one, buy the less expen-sive one. The return on investmentjust isn’t there, since the coatingprobably won’t last longer than twoyears. To use a chef’s knife properly,choke up on the handle. Lancasterhad a lot to say about knives. Keepthem out of the dishwasher (thesoap “eats the blade”). Buy knivesindividually—don’t buy “sets” (setsare how manufacturers get rid ofknives that haven’t sold well). Andsharpen your knives often—“A dullknife is the most dangerous thing inyour kitchen.” A knife is sharpwhen it can slice through a piece ofpaper. Another item to keep out of thedishwasher if you want it to last is acutting board. Contrary to popularbelief, hand washing with soap andhot water will kill all of the bacteria.In fact, wooden boards, especiallythose made of teak, are naturallyanti-bacterial. And they’re easier onyour knives than glass or other typ-ical cutting boards. Of course, Lancaster wasn’t the

only one dispensing wit and wis-dom Saturday afternoon. The fanfavorite Fabio Viviani was backagain for a session on pasta making.A colorful character, Fabio didn’tknow a word of English when heemigrated from Florence, Italy tothe U.S. in 2006, but he knowsplenty of words now—even severalthat aren’t in the dictionary. Throughout his session, Fabioplayfully chided the audience. Hewas aghast to learn that less than 10people out of the approximately 300present had made fresh pasta fromscratch in the past year. “Why not?”Fabio demanded to know. “Toomessy? Takes too much time? Don’tknow how?” He then declared thatby the time he was finished every-one would know how to make pastafrom scratch in two minutes andwithout any mess. Indeed, not counting all of hisjokes and asides—“Recipes are forpeople with OCD … if you tooktime to measure every little table-spoon you’d never get done … justgrab a spoonful, that’s closeenough”—it then took Fabio abouttwo minutes to make fettucini fromscratch. “Next year when I come here andask if anyone has made fresh pastafrom scratch in the past year, you allbetter raise your hand!” Fabioroared and the crowd roared back. Saturday drew to a close with anumber of events and special din-ners. The grand tasting at the mainstage provided a chance to sampleand buy a variety of new wines.Leinenkugel’s Oktoberfest –Rockin’ Brews followed, offeringbeer lovers a chance to sample a va-riety of brews and partake of pub-style food, followed byentertainment by Road Trip. Next year’s event is already onthe calendar for October 23-26,2014.
