THIS ISSUE OF FORKKNIFESPOON...is once again packed full of products we think you will love. We have a look at some of the fine artisan cheeses coming out of East Anglia at the moment, all of which went down very well with staff in the Turners office! Our other main feature highlights the rice varieties currently in our warehouse. Whether you are looking for a storeroom staple or something a bit more extravagant, there is something for everyone, and you might even find one you have not tried before.In terms of fresh produce, August is often when local crops are at their most plentiful, so we have included a guide as to what is particularly good or arriving this month.If you are keen to offer your customers dietary alternatives, you might also want to check out our dairy-free milk feature as this is an ever growing market and we have some good options to choose from.

High quality fish sauce that is fermented for at least 18 months to give it a deep reddish brown colour. The taste is bold & smoky with an intense fish flavour and plenty of umami richness.

Goat, Fielding Cottage, Norfolk. A square, soft brie style of goat cheese, made by Sam Steggles at Fielding Cottage. Very rich paste with a gentle creamy taste giving rise to mellow sharpness at the back.

Cow, Fen Farm Dairy, Suffolk. A big, soft, bloomy rinded cheese that is very much in the style of a full flavoured brie from Ile de France, all cabbagey and vegetal.

Cow, Mrs Temples Cheese, Norfolk.Catherine Temple makes this alpine style

cheese at her dairy just south of Wells

next to the Sea. Semi hard, with a malleable melting quality to the paste,

and long, nutty flavours in

keeping with mountain cheeses such as Meule.

Ewe, Willow Dairy, Norfolk.Jane Murray makes this hard sheep milk cheese using raw milk, and the end result is dry, crumbly, and with some sweetness from the milk.

A very summery blue cheese, fresh, open textured with very clean flavours, and some complexity on the back. Rind carries savoury notes that add to the length of flavour.

Famous for arable land, Coleman’s mustard, Constable, Gainsborough, Lord Nelson and Bernie Ecclestone, East Anglia has added it’s fair share to English culture. Maybe now is the time for it to be known for it’s artisan cheese producers as we look at some of the fine offerings that have come out of England’s bread basket.

Relatively new type of rice from southern France. Short-grained and unmilled makes it

quite sticky. Has an intense nutty flavour.

Specially selected grains of Basmati which are matured to perfection over time. Unrivalled

aroma and superior separation qualities.

Literally meaning “fragrant”, Basmati is a long-grained rice with a unique aroma traditionally grown

in the ‘rice bowl’ at the foothills of the Himalayas.

Medium-grained rice from northern Italy. Also used for making risotto, has a firmer texture, longer grains and higher starch content than Arborio.

A high nutritional value with more antioxidants than blueberries, black rice turns dark purple

when cooked and has a mild nutty taste.

Also known as Thai fragrant rice, this is a long-grained variety with a mouth watering floral aroma

and wonderful sticky texture when cooked.

Long-grained white rice of the Oriza sative L family. It has a firm texture without being tough

and has a characteristic nutty flavour.

Cultivated in the Po valley between Milan and Turin, it has a rich buttery flavour with a slightly

sweet finish. Great for sweet and savoury dishes.

A relatively new, high quality, medium-grained rice. A high starch content makes it hard to overcook and gives a beautiful consistency to your risotto.

A 50/50 mixture of our Canadian wild rice and white long grain rice which adds an

interesting contrast to any plate.

Short-grained rice with a round, creamy white appearance and mild flavour. Once cooked it

gives a soft, sticky result perfect for puddings.

A short-grained rice variety that is relatively flavourless, making it ideal for complementing the

flavours of sushi. Once cooked it has a sticky texture.

This important grain should be a staple in any kitchen and with a wonderful array of varieties available, it is an integral part of most styles of cuisine. DELIVERIES

We deliver daily, Monday to Saturday and our vans leave us between 2am and 7am, depending on the journey. All routes are fixed so you can expect your delivery at or about the same time every day. We do not operate a minimum-order policy.

Chris has been with us for four years and is our in-house Sales Analyst.
